INGREDIENTS (serves 2–3) • 2 cups yutakaeats sushi rice • 2 cups shiitake mushroom dashi (dried shiitake + water) • 1 pack shimeji mushrooms • 1 tbsp Yutaka mirin • 1 tbsp Yutaka sake • 1.5 tbsp tamari soy sauce • 1/3 cup frozen edamame • Sesame seeds (to finish) Method: Rinse the rice well, then cook it with the dashi, mushrooms, edamame, and seasonings. Bring to a boil, cover with a lid, and simmer gently. Let it rest off the heat before serving.
