as a big fan of the orange mocha (and oranges in general), i had to make my own version 🍊 

— recipe —

orange oleo saccharum:
• equal weight orange peel & sugar
• mix, let it sit for 3-5 days, mixing once per day

mocha sauce (recipe inspo from ethanrode / morgandrinkscoffee)
• 1/4 cup cocoa powder (this one is from ghirardelli) 
• 2 tbsp sugar
• 1/4 cup water
• pinch of salt
• drop of vanilla (optional)
• constantly stir it on low heat to avoid burn

finished drink:
• ~10g mocha sauce
• ~10-15g orange oleo
• 120mL lactose free milk
• espresso

my workspace has been a spot in my apartment I’ve always spent a lot of time in, so it only made sense to upgrade the home office to a more ergonomic one. I got the Spout Sit-To-Stand Table and the Cosm Chair from hermanmiller, and it’s been a huge improvement. being able to sit comfortably without adjustments and also stand throughout the day really helps my physical health. check them out!

experimented with a couple different syrup methods with this fig vanilla matcha latte (i haven’t had an one at a shop before), fig seems like more of a subtle addition so it doesn’t overpower matcha

if you like a stronger fig flavor, try using dried figs (sliced, with hot water + sugar) or even fig preserves (diluted in hot water to become more syrup textured)

— recipe —

fig syrup:
• 200g figs, sliced
• 200g sugar
• squeeze of lemon juice
• i recommend letting it out for a few hours, then 3-5 days in the fridge, mixing once a day
• optional but you can pour the syrup out and on low heat, simmer with a bit of water for a thicker, more concentrated syrup
• mush down and keep the fig bits/purée

vanilla cream top:
• 30-35mL cream
• 5mL vanilla bean syrup (light sweetness, more vanilla fragrance)
• sprinkle of salt

matcha:
• 3.5g matcha, 35mL water
• ~120mL milk

starting today, i’m challenging myself to create drinks based off the tasting notes on coffee packaging. the first one is lacabracoffee “danche”, where the “stone fruit” and “crisp floral” notes become a mixed stone fruit elderflower americano

– recipe – 
mixed stonefruit syrup:
- (any kind of stone fruit, i used a mix of nectarine, peaches, and apricot) 200g
- 150g sugar
- i keep it out during the day for a few hours, then set it in the fridge for 2 days (for a stronger syrup, i recommend heat simmering method)

elderflower water:
- 5g elderflower
- ~750mL water
- steeped overnight

for the americano, I mixed my elderflower water with regular water since it’s such a strong floral flavor, I didn’t want it to overpower the entire drink

imo we don’t talk about hojicha cold brew enough, it’s lighter but more refreshing, perfect for summer. top it off with a complimenting, sweet black sesame cold foam. if you find this drink lighter overall, top the foam on a hojicha latte instead!

hojicha cold brew:
• 25g hojicha loose leaf
• 450-500mL water
• leave in fridge for 8hrs (or more for stronger flavor)
• this is really good by itself, esp with a little simple syrup to enhance

black sesame foam:
• 1/2 cup sugar
• 1/2 cup water
• bring up to a simmer for a bit to thicken
• take it off the heat, add 1/4 cup (or more) of black sesame powder
• vanilla/salt optional
• ~30mL cream, ~15mL milk, ~15mL black sesame syrup whisked

— recipe —

tangerine cordial
• 200mL tangerine juice
• 0.5g agar-agar
• bring it to a boil, then freeze it completely
• defrost it at room temp through a coffee filter
• take that amount of liquid divided by 60, that’s how much citric acid to add
• then, that amount x10 is how much sugar to add
• if you decrease sugar, also decrease citric acid

hibiscus syrup
• 200mL of water
• 100g sugar
• bring that to a simmer and dissolve the sugar
• ~15-20g of hibiscus

curdling:
• 45g hibiscus syrup
• 10g tangerine juice
• 5g lemon juice
• espresso
• pour that over 60g milk, then let it curdle for 15 min
• strain through coffee filter

finish:
• add 1/4 of total clarified amount for tangerine cordial
• add ice and squeeze lemon peel oil

a new espresso machine by maxim’s de paris has entered (but not in the market yet): la seine x

some features:
- independent extraction boiler (dual pump), adjustable & precise water temperature
- multi-frequency stable pressure control (adjustable pressure and flow)
- real-time monitoring of liquid weight
- in variable mode (which is what I’m experimenting with), you can adjust pressure variation throughout the time of the espresso pull (all extraction parameters are fully adjustable)
- the machine records every shot and you can even take notes in each page
- auto preheat scheduled startup 

things that could be improved:
- not a fan of where the steam wand is installed, when i’m using the monitor with my right hand it’s in the way and makes it awkward
- the drip tray and water tank is awkward to take out/lock back in place
- the knob to adjust the grind size on the left is not smooth
- wish the handles on each side had more of a “oomf” feedback to them when pulling

— pour over tips I learned —
• after the first pour, swirl your dripper around so all grounds are soaked. some shops even recommend a slight stir with a spoon
• depending on your dripper, making a small divot in the center may help
• when pouring water, don’t hit the paper otherwise the water will shoot straight down

how I made it if you also have a ninjakitchen slushi:
• 4g matcha powder, 40mL oat milk, whisk, 160mL oat milk
• repeat as needed until you reach minimum 16oz line
• simple syrup to taste (i added roughly ~50mL)
• slushie, cold level 1
• mix in xanthan gum as needed

blueberry compote:
• 2 cups blueberries
• 1/4 cup sugar
• squeeze of lemon juice
• on low heat for 20-30 min, stirring occasionally

second to last drink for the summer menu, an osmanthus dirty matcha 🌼 

— recipe —

STEP 1: OSMANTHUS SYRUP
• 1/2 cup sugar, 1/2 cup water on low heat until all the sugar is dissolved
• add in 2 tbsp of osmanthus oolong
• let it steep for ~2:30, then strain and refrigerate overnight 

STEP 2: COFFEE CREAM
• ~25-30mL of cream
• ~15mL osmanthus syrup
• ~ 2g of espresso, with setting the rest aside
• whisk

STEP 3: MATCHA + ASSEMBLY
• 3g of matcha powder, 25mL of water at ~72C
• ~ 120mL milk
• add in osmanthus syrup here for more sweetener
• cream, then half of your espresso (if you really want the entire espresso shot be my guest but you probably won’t taste much matcha)

continuing our summer seasonal drinks with a hojicha coconut cloud 🥥 as popular as the matcha version is, i think the hojicha version is also just as good! 

— recipe — 
• ~50mL heavy cream
• ~15mL simple syrup
• mix, then sift in 3g of hojicha (in this video i used rockysmatcha)
• i handwhisked first to mix the powder through, then an electric one to actually add air and thicken
• pour that over ~120mL coconut water (mine was wholefoods brand)

• top with lemon zest and a dehydrated lemon slice

starting off our summer drink series with a twist on the popular “mont blanc” from melbourne. it’s a vibrant and refreshing iced pourover that i’d recommend if you want to start drinking straight black coffee

— recipe —

cream top:
• ~35mL fresh cream
• ~15mL orange oleo saccharum
 >  made by mixing equal weight orange peel  and sugar, left for a day
• whisk just a bit to incorporate some air
• top with orange zest and nutmeg

[glitch colombia risaralda milan/china dehong yuan yi yuan] iced pourover base (using Kurasu’s recipe)
• 16g coffee beans
• 70g ice in cup
• water ar 91c
> brew time:
0’00: +40g water
0’40: +60g water
1’10: +50g water
finish ~2’10 (kurasu stirs after 1’10 pour)
• if sweetner needed, add simple syrup

salted banana brûlée matcha latte 🍌 i feel like this is the simple version, but you could make a version with mixing cream and creme brulee custard (with eggs/milk/butter, etc.)

banana syrup:
• equal weight of banana peel & sugar
• let it sit out for a while or leave it in the fridge overnight

salted banana cream (~2 portions)
• 50mL heavy cream
• 20-25mL of banana syrup
• pinch of salt
• when whisking, it’ll be light and airy. to get a thicker cream, use some sugar as well

matcha: 
• 3.5g match
• 20mL water total (making a paste here)
• sugar optional to taste, will thicken the matcha more

combine everything together, brulee a banana slice, and enjoy!
