Meze er småretter som er skapt for å deles. MEZEBOKA er min best of samling av de aller beste mezerettene jeg har smakt, lagd og prøvd gjennom 20 år tett på matkulturene i Tyrkia og Midtøsten.

I've known the Turunc family for years, and on top of being the most wonderful and hospitable of people, they make some of the most incredible ingredients for your cooking. I source my nar ekşisi (pomegranate molasses), salçalar (tomato & red pepper pastes) and lots more from them. And don't take it just from me – their customers include some of the city's top restaurants, including Michelin starred Neolokal.

Sahil Restoran is a unique, old school meyhane that’s well worth a visit. If you’re not familiar, meyhanes are old drinking establishments (it literally means “wine house”), but these days the accompanying meze and seafood are as important as the drinks.

Sahil is probably more for the advanced meyhane-goer, serving some of the most unique dishes you’ll find in town. On my last visit, we had things like wild mushroom salad, ox tongue pastrami and intestine stew (!).

Obviously, there are more easy-on-the-palate options too (their onion dolma is famous, and I loved their baked version of green beans in olive oil).

balatsahilrestoran will be one of a handful of restaurants I’ll be recommending in my newsletter later this week. These won’t necessarily be the most famous places, but the restaurants I keep coming back to with friends, or when I have visitors.

Over the past 11 months, I've been sharing new recipes weekly in my newsletter Meze (that's 42 recipes for those who've been part of it from day 1).

The first one I shared was this one: Hünkar beğendi. Not only a delicious dish with historical significance – but also one with a fascinating history.

Legend has it Sultan Abdülaziz fell in love with Napoleon's wife Eugenie when visiting them in France. Hoping to see her again, the sultan invites them both to return the visit.

Adding further sauce to the story, Eugenie arrives alone (guess her husband was busy...). Well, save for her royal entourage of course. Including a crew of chefs and cooks.

The chefs of Topkapı Palace keenly observe the visiting chefs, and decide to combine their newly learned bechamel sauce with the favourite local vegetable – aubergines – and the Sultan's favourite lamb stew.

And thus the classic hünkar begendi – or Sultan's delight, if you prefer – was born.

I googled bazlama, and though a lot of websites and blogs tempt you with recipes, virtually none have bothered to do even a minimum of research on this very old and traditional Turkish bread. Instead, they offer up a generic flatbread akin to naan 🤦‍♂️ Seems they just want your click and the ad revenue that comes with it.

So I decided to spend my Saturday adding my version to the mix, along with a little background I hope you might find helpful.

Gaziantep, August 2023. My first(!) visit to this historical town, home to some of the best of Turkish cuisine.

I only had a day, in scorching heat, but thinking back about all that I saw, smelled and tasted, it feels like it was so much more. I got more than a taste of what makes this city so special.

It's all too much for an Insta caption, but I'm writing a series of traveller's letters about the trip in my English language newsletter. The first one's about the markets & ingredients, but also the history and earthquake. You can read it through the link in my profile.

You guys often ask for restaurant recommendations in Istanbul, so here's one. evelikrestaurant recently opened at the rooftop of boutique petrionhotel . I really enjoyed their modern interpretation of dishes and flavours from Hatay and beyond, with a stunning view of the Golden Horn/Halic to boot. Make sure to get there early and start with a cocktail, too. The isot margarita was just to my taste!

We had mantı, uykuluk (sweetbreads), midye (mussels) and insanely delicious potatoes with Turkish chili crisp & strained yoghurt (worth the trek alone) as well as dessert, too, but I was too busy eating to take photos.

July '23 😎🌧️🇳🇴

As I spent a week at the summer house, it made me think about just how much life has changed here. In the lifespan of my now 86 year-old grandmother, centuries of life and customs have been turned upside down.

While the men were at sea from early morning until late evening, and sometimes for months at a time, women raised children and looked after the home. There wasn’t much money, but they didn’t really need it anyway. Most kept a cow for milk, hens for eggs and a pig for Christmas. They ate self-caught fish six times a week and grew potatoes and carrots.

Today, the island and its neighbours have made a name in gourmet seafood and salmon farming. While other small places struggle with depopulation and ageing, these places along the coast are thriving in the age of globalisation.

Very much enjoyed a few classics at Georgian restaurant cafegalaktion last night. Rustic, home made and very tasty, in wonderful surroundings complete with a book shelf of Georgian books.

I didn’t know it then, but moving to London’s Clerkenwell area in 2006 would completely reshape what I eat. Long before I heard of ottolenghi , a restaurant in my new neighbourhood would open my eyes to a new world of flavours.

restaurantmoro , combining Arab and Spanish influences, opened in 1997 in premises that were previously a disused supermarket in a shabby part of London. Before long, regulars included nigellalawson , nigelslater and just about anyone who was something in London’s food scene.

The dish I want to introduce to you today, came out of the many visits to Moro and moritotapas , the smaller next-door tapas bar that opened in 2010.

I first learned about halawet el-jibn while visiting a Syrian sweet shop in the more run-down part of Istanbul's old tow. It quickly became one of my favourite desserts.

A tender, mild flavoured dough of semolina and cheese wrapped around a milky filling of ashta (milk pudding with cheese curds) or kaymak (clotted cream). All drenched in a fragrant rose scented syrup and topped with a sprinkle of chopped pistachios. Bliss!

Not quite summer in Istanbul, but a wonderful day nevertheless.

Tarabya is a neighbourhood in Istanbul’s far north, close to the Black Sea (that’s where it meets the Bosporus in the background). A grand neighbourhood in its heyday, what it’s lost in grandiosity is made up for by fresh air and a beautiful view. 

After the refreshing walk, a short drive to Yeniköy for a lovely dinner with my first taste of Turkish natural wine!

Hünkar beğendi, meaning “the sultan liked it”, is one of the best dishes to come out of the Ottoman palace kitchens, and my mother's favourite among all my recipes. It's also got a pretty interesting story to tell, involving a hunting trip and the wife of Napoleon III!

Badrizhan nigzvit is one of the most famous and delectable dishes of Georgian cuisine. And for good reason!

Versions vary from simple walnut paste fillings to more elaborate versions flavoured with herbs, spices and pomegranate. It's worth putting in that tiny bit of extra effort – both for flavour and visually.
