Self saucing chocolate pudding🤎🤎

Yeeeppp - hot, rich, gooey chocolate desserts are the best… serve warm with ice cream, always🤝🏻

#RECIPE
Ingredients
— 3/4 cup milk chocolate
— 1/4 cup coconut oil
— 1 cup almond flour
— 1/2 tsp baking powder
— 1/3 cup plain flour
— 2 tbsp cocoa powder
— 1/3 cup maple syrup
— 1/3 cup milk
— 1 egg
— 1 tsp coffee, dissolved in water

Top:
— 2 tbsp cocoa powder
— 2 tbsp coconut sugar
— Hot water

Method
1. Pre heat oven to 180°C + thoroughly grease a baking dish (approx. 24 x 15cm)
2. Melt chocolate & coconut oil together until  smooth. Set aside.
3. In a bowl, combine all remaining ingredients. Stir through melted choc to form a batter. In a seperate small bowl combine the topping ingredients: cocoa powder & sugar.
4. Pour batter into your dish, sprinkle over cocoa + sugar, covering the entire top. 
5. Carefully pour the hot water over the back of a spoon all over the top of the pudding.
6.  Bake for approx. 15-20 mins (or longer if you prefer it less gooey) - the sides should be set but centre can remain slightly jiggly. 
7. Remove from the oven carefully, and serve whilst warm with ice cream🤎

Lemon & Poppyseed Muffins 🍋

These have been my go-to lately — soft, moist, a little sweet, and packed with protein thanks to yoproau 👏
Literally perfect for meal-prep; I love heating one up, adding a dollop of yoghurt, and a drizzle of maple syrup. Obsessed.

#RECIPE

Ingredients
 — 1 1/3 cup self raising flour
 — 1 1/3 almond flour
 — 1/2 tsp baking powder
 — 1/3 cup coconut oil, melted
 — 1/2 cup maple syrup
 — 160g vanilla YoPRO
— 1 egg
 — 2/3 cup milk
 — 1 tsp vanilla essence
 — 1 lemon zest
 — 1 lemon juice
 — 2 tbsp poppy seeds

Method
1. Preheat oven to 180°C and line a muffin tray with cases.
2. In a large bowl, mix together self-raising flour, almond flour, and baking powder.
3. In a separate bowl, melt coconut oil & maple syrup together. Add to dry ingredients.
4. Mix in yoghurt, egg, milk, vanilla, lemon zest, lemon juice and poppy seeds until smooth.
5. Divide batter evenly into each muffin case.
6. Bake for 18–22 mins, or until golden and a skewer comes out clean.
7. Cool slightly, then enjoy as is - or microwave and serve with yoghurt + maple drizzle (my fave combo).

Whilst warm, I drizzled over a maple syrup + lemon juice glaze. This helps keep them moist :)

Cacio e pepe nuts recipe 🥜 

These have been popping up on my feed soooo  it’s the perfect addition to my coated nuts series… genuinely been loving these!🤩

Also shamelessly admitting that all I’ve been listening to is Sabrina carpenters new album sooo, yup…. enjoy!!

Ingredients
— 2 cups mixed nuts 
— 1 tbsp melted butter
— 1/2 cup grated parmeggiano reggiano 
— 1 tbsp black pepper (add less if you don’t want it too peppery)

Method 
1. Preheat oven to 180°C
2. Combine all ingredients into a bowl & mixed thoroughly until nuts are coated.
3. Transfer to a lined tray and spread out
4. Bake for approx 15-20mins or until nuts are golden and cheese has melted slightly.
5. Remove from the oven and allow to cool completely to harden.

Enjoy!!

Tiramisù cheesecake✨

Your sign to combine two of your favourite desserts into one bc seriously this was everythingggg!!

If you’re looking for a show-stopper this is it. Perfect to prep the day before and tastes delishhh xx

#RECIPE
Base:
—250g chocolate biscuits 
—100g coconut oil, melted 
—2 tsp ground coffee

Filling:
—450g cream cheese
—150g mascarpone 
—1 tbsp honey
—1 tbsp vanilla paste
—100ml Coffee liqueur 
—1 espresso shot (you can add more if you like it strong!)
—325g heavy cream

Savoiardi layer:
—10 savoiardi biscotti 
—approx. 150mL coffee (approx. 3 coffee pods)
—3 tsp sugar 

Topping:
—100g mascarpone 
—110ml thickened cream
—2 tbsp coffee liquor 

Prep the Base:
1. Melt coconut oil & ground coffee together. Then, place chocolate biscuits and melted coconut oil into a food processor and blitz until crushed.
2. Press mixture firmly into the base of a lined 23cm (9 inch) springform pan.
3. Chill in the fridge while preping the filling.

Prep the Filling:
1. Beat cream cheese, mascarpone, honey, and vanilla paste until smooth and creamy.
2. Add coffee liqueur and espresso shot, and continue to beat until well combined
3. Add the heavy cream & whip on high speed until until soft peaks form (approx. 1-2 mins)

Prep the Savoiardi Layer:
1. Brew the coffee pods to make approximately 150ml of coffee.
2. Dissolve 3 teaspoons of sugar in the hot coffee and let it cool slightly.

Assembly:
1. Pour half the filling over the chilled base, spreading evenly with a spatula.
2. Quickly dip each savoiardi biscotti into the coffee, ensuring they are moist but not soggy.
3. Arrange soaked savoiardi biscotti evenly over first layer
4. Pour rest of the filling over the biscuit layer & Smooth the top. refrigerate for at least 4 hours, or preferably overnight, to set

Prep the Topping:
1. whisk together the mascarpone, thickened cream, and coffee liqueur until smooth and thickened.
2. Spread or pipe it onto the chilled cheesecake

For an extra touch,  dust with cocoa powder…Slice and serve chilled.

Pistachio - cinnamon pull-apart toast

for all my pistachio lovers… or anyone really! 💁🏼‍♀️ a new fav way to level up cinnamon scrolls & it’s low key perfect for brekky☕️

#recipe:
the dough is a recipe from my ebook ‘For the Louvre of Food’ (link in bio) & it seriously neverrrr fails me. 

pistachio filling:
— 1/2 cup softened coconut oil (or butter)
— melted Pistachio cream, measure with your heart !! (I used pistachiopapiofficial )
— dusting of cinnamon

method-
1. prep your dough as per instructions & Line a 1L loaf tin.
2. Roll out your dough into a large rectangle & spread coconut oil all over the surface. Pour pistachio cream over the top, spreading to all edges of the dough. Sprinkle over a layer of cinnamon.
3. Use a pizza cutter & cut dough into a grid, forming evenly cut squares (should end up with approx 20 squares (roughly 5cm x 5cm))
4. Line up the cut squares against each other in the tin, ensuring they are neatly packed together.
5. Loosely cover tin with cling wrap & set aside to rise for approx 20 mins. Pre-heat oven to 170°C during this time.
6. Once risen, remove plastic & place in the oven for approx 30-35 mins or until risen & golden. Remove from oven.
7. Allow to slightly cool before gently removing from the tin. Enjoy warm with extra pistachio spread 💚

Ingredients
-  1/3 cup coconut oil, melted
- 1/2 cup white chocolate 
-  1/2 cup maple syrup
-  2 eggs
-  1 tsp vanilla essence
-  1 cup almond flour
-  1 cup plain flour
-  1/2 cup blueberries, melted
-  1tsp matcha powder

Method
1. Preheat oven to 170°C + Grease and line a 20x20 cm baking tin.
2. Melt coconut oil and white chocolate together until smooth.
3. In a bowl, whisk together maple syrup, eggs, and vanilla.
4. In another bowl, combine almond flour and plain flour. Add the wet mixture, then stir in the melted white chocolate mixture until just combined.
5. Divide the batter evenly into two bowls:
 * Stir matcha powder into one.
 * Stir melted blueberries into the other.
6. Spoon alternating dollops of each batter into the tin & Bake for 20–25 minutes, or until edges are lightly golden
7. Cool completely before frosting.

glaze:
Mix icing sugar with a little juice from extra melted blueberries for a pink glaze 🫐

#RECIPE
Brownie
-  1/3 cup coconut oil
-  1 cup choc chips
-  1 cup almond flour
-  2/3 cup plain flour
-  2 tosp cocoa powder
-  2 eggs
-  1/2 cup maple syrup
-  1 tsp vanilla essence
-  2 tsp ground coffee, dissolved in 2 tbsp water

Caramel
— 1 can (410g) lite condensed milk
— 45g butter
— 2 tbsp maple syrup

Choc topping
— 1 cup chocolate
— 1 tbsp coconut oil

Method
1. Preheat oven to 170°C. Grease + line a 20x20cm tin.
2. Melt coconut oil & choc chips until smooth.
3. In a bowl, mix flours, cocoa powder, eggs, maple syrup, vanilla, and coffee.
4. Stir in melted choc mix until smooth.
5. Pour into tin and par-bake for 10 mins (rotate halfway).
While that’s baking – make the caramel:
1. Add condensed milk, butter & maple syrup to a saucepan.
2. Simmer and whisk for 6–8 mins until thickened.
3. Pour caramel over par-baked brownie, spread evenly, and pop it back in the oven for 8 mins until golden + bubbly.
Choc topping:
1. Melt choc & coconut oil until smooth.
2. Pour over baked slice, spread to the edges & top with a sprinkle of sea salt flakes.
3. Chill in the fridge for at least 2 hrs.

Lemon & Passionfruit cake w/ cream cheese yoghurt frosting 🍋

This moist, dreamy yoghurt cake is packed with protein, comes together in minutes, and is always a hit 😮‍💨

#RECIPE
Ingredients
— 1 ½ cups self-raising flour
— 2 cups almond flour
— ½ tsp baking powder
— ⅓ cup coconut oil, melted
— ½ cup maple syrup
— 1 egg
— 160g YoPROau passionfruit yoghurt
— 1 lemon, juice + zest
— ½ cup passionfruit purée

Frosting
— 200g cream cheese
— 1 heaped tbsp vanilla YoPRO yoghurt
— 3 tbsp maple syrup

Method
Preheat oven to 170°C. Grease and line an 18cm round cake tin.
In a large bowl, whisk together the dry ingredients.
In a separate bowl, mix the wet ingredients, including lemon juice, zest, and passionfruit purée.
Add the wet mixture to the dry ingredients and stir until just combined.
Pour batter into the prepared tin and bake for 25–30 minutes, or until golden and a skewer comes out clean.
Remove from oven and allow to cool completely.
For the frosting: beat cream cheese, yoghurt, and maple syrup on high speed until smooth.
Once the cake has cooled, frost and decorate with extra lemon zest and passionfruit purée.

Homemade ravioli so good, you’ll forget store bought even exists - cacio e Pepe with simple tomato sugo😇🍅

CACIO E PEPE RAVIOLI

#RECIPE
Ingredients:
— 2 cups flour
— 3 eggs
Filling:
— 2 cups grated Parmesan
— 2 tsp ground pepper
— 2/3 cup hot water

Method:
1. ���DOUGH: Add flour to your bench & create a small well in the middle. Break eggs into the well and use a fork to whisk the eggs. Gradually mixing in more and more flour.
2. ���As a thick paste forms, keep mixing in flour until you can begin to knead it with your hands
3. ���Knead dough into a ball until smooth and elastic. (Add more flour if too sticky)
4. ���Wrap in cling wrap and place in the fridge for 20 mins.
5. ���FILLING: mix Parmesan, pepper and hot water together to form a thick & creamy paste.
6. ���ASSEMBLE: Divide the chilled dough into 6 equal segments.
7. ���Using a pasta machine or a rolling pin, roll each segment into thin sheets. (If using a pasta machine, roll it to the thinnest setting.)
8. ���Lay one sheet flat and place small spoonfuls of the filling, spaced evenly apart.
9. ���Lightly brush edges around each filling with water & fold the dough over to cover.
10. ����Press around the filling to seal, ensuring there are no air bubbles.
11. ����Use a knife or pastry cutter to cut the ravioli into your desired shapes.
12. ����Bring pot of water to a boil, add ravioli and cook until they begin to float (4-5 minutes). Pair with your favourite sauce and enjoy!

Cookies n cream coated nuts

One for the Oreo lovers & one I’ve been having on my snack rotation since I made them -  Perfect to prep and keep in the fridge 🫶🏼

#RECIPE
Ingredients 
— 200g white chocolate, melted (add coconut oil if needed)
— 2 cups mixed nuts
— 1 pack oero biscuits

Method:
1. Melt white choc until smooth (add a touch of coconut oil if needed).
2. Crush/ blitz Oreo biscuits. Ensure to keep some chunks. 
3. Coat nuts in white choc with half of your crushed Oreos, spread on a lined baking tray, and cool at room temp.
4. Once choc has set slightly (they need to still be a bit tacky), transfer to a container, add remaining crushed Oreos, cover, and shake until well coated. Store in the fridge.

#RECIPE 
Ingredients
— 1/3 cup coconut oil
— 1/2 cup white chocolate chips (+ 1 cup to mix into the batter)
— 1 cup self raising flour
— 1 cup almond flour
— 1/2 tsp baking powder
— 1/4 cup coconut sugar
— 2 ripe bananas
— 2 eggs
— 1/2 cup maple syrup 
— 1 tsp vanilla essence
— 2 tsp matcha powder

Method:
1. Preheat oven to 170°C + grease and line a 1L baking tin.
2. Melt coconut oil and 1/2 cup white chocolate together until smooth.
3. In a bowl, mix self-raising flour, almond flour, baking powder, and coconut sugar together.
4. In a separate bowl, mash bananas, then mix in eggs, maple syrup, and vanilla essence. Pour in the melted chocolate mixture and stir to combine. Add the wet ingredients to the dry and fold through the chocolate chips.
5. Transfer half the batter to another bowl and mix in the matcha powder.
6. Alternate spoonfuls of each batter into the tin to create a marbled effect. Sprinkle with chocolate chips.
7. Bake for approximately 1 hour or until a skewer inserted comes out clean. Remove when risen, golden, and cooked through.
8. Frost with melted chocolate and dust with matcha powder. Enjoy warm or allow to cool.

Ingredients
Carrot Cake:
— 1 cup self raising flour
— ¾ cup almond flour
— ½ tsp baking powder
— 1½ tsp cinnamon
— 1½ tsp mixed spice
— ⅓ cup coconut oil, melted
— ½ cup maple syrup
— 2 eggs
— 1 tsp vanilla essence
— ⅓ cup milk of choice
— 1 large carrot, finely grated

Cheesecake Filling:
— 250g light cream cheese
— 100g plain yogurt
— 1 egg
— ⅓ cup maple syrup
— 2 tbsp plain flour
— 1 tsp vanilla essence
— 1 tsp cinnamon
— ¼ cup raisins, chopped
— ½ cup chopped walnuts

Frosting:
— 100g light cream cheese
— 100g Greek yoghurt
— 2 tbsp maple syrup
— 1 tsp vanilla essence

METHOD 
Preheat oven to 160°C. Grease and line an 18cm springform tin.
In a large bowl, mix together all carrot cake ingredients until a smooth batter forms.
Using an electric mixer, whisk cheesecake filling ingredients until creamy and well combined.
Layer the batters in the tin sporadically, alternating cake mixture, then cheesecake filling, and finish with a sprinkle of raisins and chopped walnuts. Swirl slightly if desired.
Bake for 50–60 mins, or until the edges are set but the centre still appears a lil jiggly.  Let cool completely before removing from the tin.
For the frosting, beat all ingredients until smooth and creamy. Spread over the chilled cake before serving.

#RECIPE
Ingredients
-  1/2 cup Coconut oil, melted
-  1 cup Chocolate chips
-  1 cup self raising flour
-  1 cup almond flour
-  1/4 cup cocoa powder
-  1/4 tsp baking powder
-  1/2 cup maple syrup
-  2/3 cup milk
-  1 egg
-  1 tsp ground coffee, dissolved in a tosp of water
-  200g milk chocolate block (reserve some to sprinkle)

Method:
1. Preheat oven to 170°C and line a muffin tin with liners.
2. Melt coconut oil & chocolate chips together until smooth.
3. In one bowl, whisk together all dry ingredients. In another, mix wet ingredients. Combine both to form a smooth batter.
4. Mix in melted chocolate & Fold in roughly chopped chocolate (approx. 150g).
5. Spoon batter evenly into muffin liners, top with extra chocolate chunks.
6. Bake for approx. 20 - 25minutes - be careful not to overbake if you want a fudgy center!
7. Let cool slightly & enjoy warm. 🤎

If you’re on the same side of Tik Tok as me, you’d be familiar with these so of course I had to try them myself... and you should too… they were DIVINEE🤎

#RECIPE
Ingredients
- 1 cup self raising flour
- 1/2 cup almond flour
- 1/4 tsp baking powder
- 1/4 cup coconut oil, melted
- 1/3 cup maple syrup
- 1/4 cup almond milk
- 1 tsp vanilla essence
- 1 egg

Coating
- 2 cups biscoff spread 
- 3 tbsp coconut oil
- Finely crushed biscoff biscuits 

method:
1. pre heat oven to 170°C + grease and line a baking dish (mine was 24x15)
2. Combine dry ingredients in one bowl and wet ingredients in another. Add wet mixture to the dry and combine.
3. Pour into your dish and bake for 15–20 mins until golden. Cool completely.
4. Melt biscoff + coconut oil together.
5. Slice cake in half horizontally.
6. Spread half the melted biscoff on the bottom half, then sandwich the top back on. Chill for 15 mins.
7. Cut into bars.
8. Dip each into remaining biscoff, then coat in crushed biscuits.
9. Set in the fridge or enjoy straight away!

Sticky Banana Bread Pudding 🍌

If you make one thing this week… let it be this.

This is really giving: gooey banana bread, sweet sticky caramel, cosy winter AND a sneaky protein boost… Heaven xx

#RECIPE
Caramel Sauce:
1 cup pitted medjool dates
1/3 cup almond butter
3/4 cup hot water
4 tbsp maple syrup

Banana Cake:
1 cup self-raising flour
1 cup almond flour
1/4 tsp baking powder
2 tsp cinnamon
5 ripe bananas
1/3 cup coconut oil, melted
1/2 cup maple syrup
2 eggs
160g vanilla yoproau yoghurt
2 tsp vanilla extract

Method:
Caramel Sauce: Blend dates, almond butter, hot water & maple syrup until smooth.
Preheat oven to 170°C and grease + line a 20x20cm tin.
In one bowl: mix dry ingredients. In another: mash 2 bananas and stir in remaining wet ingredients. Then, add the wet ingredients to the dry and mix to form your batter.
Slice the remaining 3 bananas lengthways and lay across the base of the tin. Cover with caramel and pour over the batter.
Bake for 30–35 mins. Once done, allow to cool slightly, flip onto a plate, and serve with extra caramel & yoghurt.

Cinnamon crumble loaf😇

This cosy loaf is fluffy, spiced and swirled with the dreamiest cinnamon maple centre… andddd, the loaf tin I used is linked in my bio if you wanna make yours look just as cute 🤎

#RECIPE
Crumble
— 1 tbsp coconut oil
— 1/2 cup almond flour
— 1 tsp cinnamon
— 1 tbsp maple syrup

Cinnamon swirl
— 3 tbsp cinnamon
— 1/3 cup maple syrup
— 1/4 cup coconut sugar

Cake
— 1 1/3 cups self-raising flour
— 1 1/3 cups almond flour
— 1/2 tsp baking powder
— 2 tsp cinnamon
— 1/3 cup coconut oil, melted
— 1/2 cup maple syrup
— 1 egg
— 2/3 cup milk of choice
— 1 tsp vanilla essence

Method
1. Crumble: Rub coconut oil into almond flour with cinnamon and maple syrup using your fingertips until crumbly and well combined.
2. Cinnamon swirl: Mix all ingredients together until smooth.
3. Preheat oven to 170°C. Grease + line a 1L loaf tin (mine’s linked in bio!).
4. Mix dry cake ingredients in one bowl and wet in another. Add the wet mixture to the dry ingredients and mix to form a thick batter.
5. Pour half the batter into your tin. Spread over cinnamon swirl, sprinkle over some crumble, then top with remaining batter.
6. Finish with extra swirl + crumble on top.
7. Bake for approx. 45 mins or until golden + a skewer comes out clean.
8. Allow cake to cool in the tin slightly before removing it and enjoy!
