🥣 Sevaiyan Kheer Recipe with prideofcowsindia 

📝 Ingredients:
	•	1 liter Pride of Cows full cream milk
	•	½ cup roasted vermicelli (sevaiyan)
	•	2 tbsp ghee
	•	⅓ cup sugar (adjust to taste)
	•	¼ tsp cardamom powder (elaichi) optional 
	•	2 tbsp chopped dry fruits (cashews, almonds, pistachios)
	•	1 tbsp raisins (optional)
	•	Few saffron strands (optional, soaked in 1 tbsp warm milk) optional 

👩‍🍳 Instructions:

Step 1: Heat ghee in a pan
	•	Add ghee to a heavy-bottomed kadhai or pan.
	•	Once hot, add dry fruits and raisins.
	•	Roast till golden and aromatic. Remove and keep aside.

Step 2: Roast the vermicelli
	•	In the same ghee, add roasted vermicelli.
	•	Roast for 1–2 minutes on low heat till slightly golden and fragrant.

Step 3: Add Pride of Cows milk
	•	Pour in the hot milk.
	•	Stir well and let it come to a gentle boil.

Step 4: Cook the vermicelli
	•	Let it simmer for 7–10 minutes on medium flame.
	•	Stir occasionally so it doesn’t stick to the bottom.
	•	Cook till sevaiyan turns soft and the milk thickens slightly.

Step 5: Add sugar & cardamom
	•	Add sugar and cardamom powder.
	•	Mix well and cook for another 3–4 minutes.
	•	(Optional: Add saffron milk at this stage.)

Step 6: Add roasted dry fruits
	•	Add half of the roasted dry fruits into the kheer.
	•	Save some for garnishing.

Step 7: Serve hot or chilled
	•	Garnish with remaining nuts and saffron strands.
	•	Serve warm for comfort or chilled for a festive treat.

It’s not just a house — it’s a symbol of every little step, every struggle, every sacrifice. And I know I couldn’t have done this without the unwavering support of my family. 

Even after marriage, buying a home wasn’t really on our minds. I still remember the first time we saw the plan for this flat — we came back home and laughed, saying, “Yeh humse nahi hoga… our budget doesn’t allow this.” But sometimes, the right things find their way to you.

Somehow, this home chose us.
One day, we took the leap — signed the registration papers — and then waited.
Waited for four years filled with endless conversations and dreams, just imagining what it would feel like when this place would finally be ours. And today, that moment is here — we’ve received the keys to our home. 🏡🔑🧿

Somvar Special Sweet Potato Halwa🌿

🥄 Ingredients:
	•	2–3 medium sweet potatoes (boiled and mashed)
	•	2 tablespoons desi ghee (clarified butter)
	•	2 tablespoons grated jaggery or sugar (as per your vrat preference)

🌿 Ingredients:

For the Dal:
	•	Toor dal (arhar dal) – 1 cup
	•	Water – 2.5 to 3 cups (for pressure cooking)
	•	Turmeric – ¼ tsp
	•	Oil – ½ tsp

Vegetables (choose 3–4 of these):
	•	Drumsticks – 1 (cut into pieces)
	•	Carrot – 1 (chopped)
	•	Bottle gourd – ½ cup (chopped) optional if it available at home your can add 
	•	Brinjal – 2 (chopped)
	•	Okra – 4–5 (sliced and sautéed)
	•	Tomato – 2( chopped)

Tamarind Mixture:
	•	Tamarind – lemon-sized ball (soaked in warm water)
	•	Water – ½ cup
	•	(OR use 1 tbsp tamarind paste)

Spices & Seasoning:
	•	Sambhar powder – 2 tbsp
	•	Salt – to taste
	•	Jaggery – 1 tsp (optional, for balance)
	•	Curry leaves – 8–10
	•	Coriander leaves – chopped, for garnish optional 

Tempering (Tadka):
	•	Oil – 1.5 tbsp
	•	Mustard seeds – 1 tsp
	•	Cumin seeds – ½ tsp
	•	Dry red chillies – 2
	•	Hing – a pinch
	•	Fenugreek seeds – ¼ tsp
	•	Curry leaves – a few

🍲 Steps to Make Sambhar:

1. Cook the Dal:
	•	Rinse toor dal well.
	•	Add turmeric and 2.5–3 cups water.
	•	Pressure cook for 3–4 whistles or until soft.
	•	Mash the dal once it cools down slightly.

2. Prepare Tamarind Water:
	•	Soak tamarind in ½ cup warm water for 10–15 mins.
	•	Extract the juice and discard the pulp (or use tamarind paste).

3. Cook the Vegetables:
	•	In a large pan, add chopped veggies, a pinch of salt, and turmeric.
	•	Add some water and cook till they’re soft (not mushy).

4. Mix and Simmer:
	•	Add mashed dal to the cooked veggies.
	•	Add tamarind water and sambhar powder.
	•	Mix and let it simmer for 10–12 minutes.
	•	Adjust salt and add jaggery if using.

5. Tempering (Tadka):
	•	In a small pan, heat oil.
	•	Add mustard seeds, cumin, red chillies, hing, fenugreek, curry leaves.
	•	Let them crackle and turn aromatic.
	•	Pour this tadka over the simmered sambhar.

6. Garnish and Serve:
	•	Sprinkle chopped coriander leaves.
	•	Serve hot with rice, idli, dosa, or vada.

🔪 Preparation Steps:
	1.	Slice Bhindi:
Wash and pat dry bhindi completely.
Then slice them very thin lengthwise (julienne style). The thinner, the crispier.
	2.	Mix Spices & Flour:
In a large bowl, add the sliced bhindi.
Sprinkle besan, rice flour, and all dry spices on it.
Add mustard oil and lemon juice.
	3.	Toss Well:
Mix everything gently with hands. Do not add any water.
The natural moisture of bhindi will help coat the flour and spices.
	4.	Fry or Air Fry:
	•	For deep fry: Heat oil in a kadhai and fry in small batches on medium heat until golden and crispy.
	•	For air fryer: Preheat to 180°C (350°F), spread bhindi in a single layer, spray a little oil, and air fry for 12–15 mins until crispy.
	5.	Serve:
Sprinkle some extra chaat masala before serving for that zing.

👩‍🍳 Ingredients for Stuffing:
	•	4 to 5 thick green chillies – slit and deseeded
	•	½ lemon juice
	•	¼ tsp coriander powder

🫙 In a small bowl, mix salt, lemon juice, coriander powder, and cumin seed powder.
Fill this tangy-spicy mix inside each chilli and keep aside.

	•	1 bowl besan (gram flour)

	•	¼ tsp ajwain (carom seeds)

	•	4 to 5 spoon oil (add more if required)

Mix all ingredients into a thick, fill the stuffing in the mirchi 
Heat the tawa and place all mirchies sprinkle or add 1 spoon oil and roast it with the both sides.

Ingredients:

🔸 Masala Paste:

In a small bowl, mix:
	•	1/4 tsp turmeric
	•	1 tsp Kashmiri red chilli powder
	•	1 tsp coriander powder
	•	1/2 tsp cumin powder
Add a little water to make a thick paste. Set aside.

🔸 Main Ingredients:
	•	2 big boiled potatoes – peeled and lightly mashed (with chunks)
	•	1 big onion – finely chopped (optional as some people like the taste of it)
	•	1 tomato – chopped
	•	4 tbsp oil
	•	1/2 tsp cumin seeds
	•	Whole spices: 2 cloves, 2 green cardamoms, 1 black cardamom, 1/2 inch cinnamon, 1/4 tsp pepper, 1 bay leaf
	•	Salt to taste
	•	1/4 tsp garam masala
	•	1/2 tsp kasuri methi (crushed)
	•	Fresh coriander leaves – chopped
	•	Hot water – as needed for gravy consistency

🔸 Instructions:
	1.	Heat the Oil
In a deep kadai or pan, heat 4 tbsp oil. Once hot, add cumin seeds, bay leaf, cloves, cardamoms (green + black), cinnamon, and pepper. Let them sizzle.
	2.	Sauté Onions
Add chopped onion. Sauté till golden brown.
	3.	Add Tomato & Masala Paste
Add the chopped tomato and cook till it softens. Then add the prepared masala paste. Cook the masala on medium flame until oil separates from the sides.
	4.	Add Potatoes
Add mashed boiled potatoes. Mix well and mash a little more in the pan to get a semi-thick consistency.
	5.	Add Water
Pour hot water as required (about 1 to 1.5 cups) depending on how thin you want the gravy. Let it come to a boil.
	6.	Season & Simmer
Add salt to taste, 1/4 tsp garam masala, and crushed kasuri methi. Simmer for 6–8 minutes on low flame so all the flavors blend in.
	7.	Garnish & Serve
Finish with chopped coriander leaves.
Serve hot with poori

🥣 Step 1: Prepare the Dough
	1.	In a large mixing bowl, add:
	•	2 cups wheat flour
	•	1 cup chopped methi
	•	2 tbsp besan
	•	All the dry spices, salt, and ginger-chilli paste
	2.	Add 1/4 cup curd and 1 tbsp oil.
	3.	Mix everything, then gradually add water to knead into a soft, pliable dough.
	4.	Rest the dough for 10–15 minutes.

	1.	Divide the dough into small balls.
	2.	Roll each into a thin, round thepla using dry flour to dust.

	1.	Heat a tawa (griddle) on medium heat.
	2.	Place the thepla on it and roast for 30 seconds. Flip.
	3.	Apply a little oil on both sides and cook until golden spots appear.

Lasooni Methi Recipe 
Tired of the same old sabzi? Try this bold and earthy Lasooni Methi – where garlic meets fresh methi for an irresistible twist!

🧄🌿 Ingredients:
	•	Fresh methi (fenugreek) leaves – 2 cups (washed & chopped)
	•	Garlic – 12 to 15 cloves (finely chopped)
	•	Onion – 1 (finely chopped)
	•	Tomato – 1 (finely chopped)
	•	Cumin seeds – 1 tsp
	•	Turmeric – 1/2 tsp
	•	Red chilli powder – 1 tsp
	•	Coriander powder – 1 tsp
	•	Garam masala – 1/4 tsp
	•	Salt – to taste
	•	Lemon juice – 1 tsp (optional)
	•	Oil – 2 tbsp
	•	Ghee – 1 tbsp optional 
 . 2 spoon of roasted peanuts 
.2 spoon of roasted sessame seeds 
2 spoon of roasted besan 

Step 1: Prep the Methi
“Take 2 cups of fresh methi leaves, wash thoroughly, and finely chop. Lightly sauté in 1 tsp oil for 2 minutes to remove bitterness. Set aside.”

Step 2: Temper the Garlic
“In a pan, heat 2 tbsp oil . Add 1 tsp cumin seeds, and then go in with 12-15 finely chopped garlic cloves. Let them turn golden for that deep lasooni flavor.”

Step 3: Add Onions & Tomatoes
“Add 1 chopped onion and sauté till translucent. Then add 1 chopped tomato and cook till soft and mushy.”

Step 4: 
Make paste of seemase seeds + peanuts and half cup water 
Add Spices:
	•	1/2 tsp turmeric
	•	1 tsp red chilli powder
	•	1 tsp coriander powder
	•	Salt to taste
Cook the masala till oil starts separating.”

Step 5: Add Methi & Finish
“Now add sautéed methi, mix well, and cook everything together for 3-5 minutes. Finish with a pinch of garam masala and a squeeze of lemon.”

	•	Sauté until onions are golden brown.
Add 2 chopped tomatoes, 6–7 cashews, and coriander with stems. Cook until soft.
Cool slightly and blend to a smooth paste.
	2.	Marinate the Chicken
In a bowl, mix:
	•	500 gms chicken
	•	2 tsp red chilli powder
	•	¼ tsp turmeric
	•	¼ tsp garam masala
	•	½ tsp coriander powder
	•	½ tsp salt
	•	2 tsp cream
	•	2 tsp mustard oil
Let it rest while you cook the masala.
	3.	Make the Curry (in a pressure cooker)
Heat 4–5 tbsp oil + 3 tbsp butter. Add:
	•	Prepared masala paste
	•	2 tsp red chilli powder
	•	2 tsp Kashmiri red chilli
	•	1 tsp coriander powder
	•	¼ tsp turmeric
	•	¼ tsp cumin powder
	•	½ tsp garam masala
	•	1 tsp crushed Kasuri methi
Sauté until oil separates.
	4.	Add the Marinated Chicken
Mix the chicken in and cook for 2–3 minutes.
Add 1 glass water (or as needed) and 2 tsp salt. Stir well.
	5.	Pressure Cook
Close the lid and cook for 3 whistles on medium heat.
	6.	Final Step
Once pressure releases naturally, open the cooker.
	•	If the curry is too watery, simmer uncovered for a few minutes until it thickens to your liking.
	•	Garnish with coriander or a dash of cream (optional).
