Garlic Parmesan Roasted Chicken
This takes some steps but I promise it’s easy and so worth it!

Ingredients
Whole chicken
2 tbsp fresh parsley, minced
2 tbsp fresh rosemary, minced
2 tbsp fresh thyme, minced 
1 tbsp kosher salt
1/2 tsp ground black pepper
1 tsp baking powder
1 tbsp olive oil

Garlic Parmesan Butter Sauce
1/2 cup salted butter
1 cup parmesan (freshly grated)
4 garlic cloves, minced
Lemon zest from 1/2 a lemon
1 tsp ground black pepper

Coconut Lime Brothy Rice 
Boiling Tofu in salted water improves flavour by allowing some salt to enter the tofu through osmosis, creating a firmer bouncier texture, and helps to draw out excess moisture, making the tofu better at absorbing marinade quickly. 

Ingredients
-1 pack of firm tofu
- 2 tsp of salt 
- 4 cups water
- 1 tbsp + 1 tsp soy sauce (or coconut aminos)
- 1 tsp garlic powder
- 2 tbsp corn starch or potato starch
- 2-3 garlic cloves minced (depends how big they are)
- 1 tsp grated fresh ginger
- 2 tbsp green curry paste (or you could use yellow or red)
- 1 tbsp fish sauce
- 1 tsp brown sugar
- 1 15 ounce can of coconut milk
- 4 cups of bone broth (I used chicken bone broth or you could use veggie stock)
- 2 tbsp fresh lime juice
- -1 tsp chili crunch (optional but recommended, omit if you don’t like spice)
- Optional garnishes: fried shallots (I do the store bought ones), fresh coriander, spring onion, lime wedge
- On the side: cooked rice, vegetable (I did eggplant, broccoli also works really well)

Southwest Chicken Salad
Try this high volume, high protein, high fibre, easy lunch!

Ingredients
-chopped romaine lettuce
-1 orange or red or yellow bell pepper, chopped
-1/4 red onion, chopped
-1/2 can of black beans, drained
-4-5 tbsp cooked corn
-big handful of cherry tomatoes, halved
-1 small cucumber, chopped
-1 chicken breast, cooked
-1/2 avocado, sliced
-2 tbspl of pumpkin seeds
-handful of feta (to your liking)
-optional: fresh coriander

Dressing:
-1 cup full fat greek yogurt 
-2 tbsp fresh coriander
-1/2 tsp cumin
-1 garlic clove
-1 tbsp lime juice
-1 tsp smoked paprika
-salt & pepper to taste
-water if needed to desired consistency

1. Prep red onion by chopping then soaking them in ice water. This takes out the sharp taste and smelly-breath later
2. Cook your chicken breast (or you could use store-bought rotisserie chicken here) let it cool then chop. 
3. Chop the rest of the veggies 
4. Blend all of the dressing ingredients.

Middle Eastern Inspired Shaved Tofu Skewers
Ingredients (this makes 4 smaller skewers- video shows double portion)
-1 16 oz block of extra firm tofu (the firmer the better so the tofu doesn’t break easily)
-1/4 red onion chopped into square pieces (I put 4 per skewer for flavour and to hold the tofu in place)
Marinade:
-3 tbsp of olive oil
-2 tbsp tomato paste
-1 tbsp corn starch or potato starch
-1 tsp onion powder
-1 tsp garlic powder
-1 tsp smoked paprika
-1/4 tsp cinnamon powder
-1/4 tsp salt
-1/8 tsp black pepper
-optional: pinch of chilli powder
*I made another portion of this sauce on the side on the stove in a sauce pan to add to the skewers after they were cooked

Method:
*if you’re using wooden skewers, soak them in water for at least 30 minutes so they won’t burn
1. Drain your tofu of all water. I wrap mine in a towel then place a cutting board (for even distribution) and heavier cans of food on top and let it sit for about 10 minutes (ideally do this for 30 minutes to an hour before you want to start this recipe) 
2. Peel the tofu for a potato peeler. Or you could use the side of a cheese grater. It helps to press down and wiggle your peeler a bit. I would do two pieces then turn the tofu to another side while the tofu continues to drain at the bottom (keeping it on top of the towel). Keep any crumbly bits to make something else (you can fry them in the extra marinade if you make it)
3. Mix the marinade ingredients. Add the tofu to the marinade and carefully coat it. Cover and let it sit in the fridge for at least 20 minutes.
4. Assemble the skewers by placing one piece of red onion followed by some shaved tofu (folded over) then another onion (I used 4 pieces total per skewer), tofu, until you get to the top
5. Bake at 180C for 15 minutes, flip over then another 15-20 minutes until golden and crispy
6. Layer some extra sauce on top if you like them saucy and serve immediately

I micro-dose pumpkin seeds daily 🎃Here’s why you should incorporate them into your regular diet (with other foods of course because these won’t cover 100% of your needs- it’s just a powerhouse to get a lot of good stuff in a small dose regularly) 

Why Soak Pumpkin Seeds?

1. Reduces Phytic Acid
Pumpkin seeds naturally contain phytic acid, which can bind to minerals like iron, zinc, and magnesium and reduce their absorption.
Soaking helps break down some phytic acid, improving mineral bioavailability.

2. Improves Digestion
Soaking softens the seed and activates natural enzymes, making them easier to digest—especially helpful for sensitive stomachs.

🥣 How to Soak:
Rinse raw pumpkin seeds.
Soak in warm, filtered water with a pinch of salt.
Let sit for 6–8 hours (or overnight).
Drain and pat dry.
You can eat them soft, or roast at low heat (around 150°C / 300°F) until crispy.
⏱️ Don’t Have Time?
It’s okay to skip soaking if you’re eating a small amount (like 1 tbsp/day).
However, for maximum mineral absorption, especially if you’re targeting anemia or mineral deficiency, soaking  is ideal.

Who Should Be Careful or Avoid Pumpkin Seeds:
-People with Allergies
Though rare, some people have seed or nut allergies and might react to pumpkin seeds.
-Those with Digestive Issues
If you have sensitive digestion, irritable bowel syndrome (IBS), or certain gut conditions, the fiber and fats in pumpkin seeds might cause bloating, gas, or discomfort.
-People on Blood Thinners
Pumpkin seeds contain vitamin K, which can interfere with blood-thinning medications like warfarin. If you’re on these meds, talk to your doctor before adding large amounts.
-Kidney Stone Risk
Pumpkin seeds have moderate levels of oxalates, which in very high intake might contribute to kidney stones in susceptible people.
*If you’re unsure, especially with medical conditions or medications, it’s best to check with your healthcare provider before making pumpkin seeds a regular part of your diet.

Black Pepper Beef 🥦🥩 Soft tender beef with crunchy fresh veggies bursting with flavour- you’re going to love this! 

Ingredients (recipe inspired by simple.home.edit & madewithlau ) 
-600-700g of Beef (hanger steak or Chuck steak or flank steak or skirt steak work or flat iron steak) 
-1 tsp baking soda (not baking powder!) 
-1 yellow bell pepper, thinly sliced
-1 red bell pepper, thinly sliced
-1 small broccoli, chopped into bite sized pieces 
-1/2 red onion, thinly sliced
-2 garlic cloves, minced
-2 tbsp avocado oil, divided 
-1 tsp fresh black pepper (separate from marinade)
-1 tsp toasted sesame oil (separate from marinade) 
-black and white sesame seeds (for topping) 

Beef Marinade:
-1 tbsp light soy sauce (or coconut aminos)
-1 tbsp oyster sauce (you can substitute with Worcestershire sauce mixed with a bit of soy sauce and dash of sugar- but the flavour is still slightly different) 
-1 tbsp Chinese cooking wine (Shaoxing Wine) (not the same flavour as Western wine) 
-1 tsp toasted sesame oil
-1 tsp freshly ground black pepper

Stir Fry Sauce:
-1 tbsp light soy sauce (or coconut aminos)
-tbsp dark soy sauce
-2 tbsp oyster sauce
-1 tsp sugar 
-1 tbsp corn starch
