Comment “LASAGNA” if you’d love to try this hearty carnivore lasagna recipe 🍝 it’s fantastic batch cooked and enjoyed throughout the week!

CARNIVORE LASAGNA
Pasta Layer (Homemade “noodles”)
·       2 cups cottage cheese (whole milk, organic preferred)
·       4 eggs
·       (Optional) ½ cup shredded Parmesan cheese
·       (Optional) Italian seasoning & black pepper
Instructions:
1.    Preheat oven to 370°F (190°C).
2.    Mix together cottage cheese, eggs, Parmesan, and seasonings.
o   For smooth pasta: blend in a food processor or with a hand blender.
o   For a chunkier texture: just stir by hand.
3.    Spread mixture thinly onto a parchment-lined baking sheet.
4.    Bake for 40 minutes until set.
5.    Let cool, then cut into sheets sized to fit your lasagna dish.

Meat Sauce
·       1 lb ground beef
·       ¾ lb ground Italian sausage
·       Dried chopped onion (to taste)
·       Garlic powder (to taste)
·       1 tbsp tomato paste (optional)
·       1 tbsp hot sauce (optional)
·       ½ cup beef broth (or meat broth of choice)
Instructions:
1.    In a skillet, brown the beef and sausage.
2.    Add onion, garlic powder, tomato paste, hot sauce, and broth.
3.    Simmer on medium heat for 20 minutes.

Cheese Filling
·       Ricotta cheese (amount as needed for layering)
·       (Optional) Italian seasoning & black pepper

Assembly:
1.    Preheat oven to 375°F (190°C).
2.    In a lasagna dish, layer in this order (repeat until full):
o   Meat sauce
o   Cottage cheese “pasta” sheet
o   Shredded cheese
o   Ricotta layer
3.    Finish with a generous topping of shredded cheese.
4.    Bake for 30 minutes at 375°F.
o   For a golden top: broil on high for 5–10 minutes.

Optional Finishing Touch
·       Marinara sauce (drizzled at the bottom of the plate or on top before serving).
o   Left out in this version to make it more healing and carnivore-friendly.

Why I do NOT fear the sun ☀️⬇️

Changing my diet and seeing the positive impacts on my health has inspired me to question everything. I was raised to believe that red meat and butter was bad for you and sunlight had to be avoided at all costs. And if it couldn’t be avoided, I had to slather on sunscreen. 

Well how strange, because ever since I started embracing saturated animal fats and eating more red meat, my psoriasis and eczema have disappeared and my amenorrhea reversed. I’ve come off all medications. A standard American diet did not achieve this nor did a vegan diet. 

I grew up eating seed oils, fast food, sugar, and processed snacks and burned extremely easily even when wearing sunscreen. I now do not wear any sunscreen/spf anymore, don’t burn in the sun, and can actually produce a tan for the first time in my life. 

So how is this possible? 

I highly recommend digging deeper and learning from people like drpaulmason and drcateshanahan who challenge mainstream nutrition, educate on the dangers of seed oils, and embrace the sunlight. 

I’ve learned from them and from my own experience that diet absolutely affects your skin’s reaction to sunlight. 

Eating seed oils and polyunsaturated fats make your skin much more susceptible to UVA/UVB damage. They easily oxidize under heat, generate free radicals, and contribute to inflammation. 

Ever since swapping out all seed oils for animal fats, my skin is much more tolerant to the sun without the need for sunscreen. 

Keep in mind that we are all at different points of our health journeys! Be mindful of how much time you are spending in the sun and be sensitive to how much your skin can handle. 

Start with 10 minutes in morning sunlight and prioritize eating clean by cutting out the seed oils and processed foods. The open to learning more and do check out the experts I listed above.

DECADENT YOGURT CAKE RECIPE:

Ingredients
1.     1 cup thick yogurt (e.g., Siggi’s Skyr or Greek yogurt)
2.     3 whole eggs (room temperature)
3.     ⅓ cup melted animal fat (raw butter, tallow, or lard)
4.     1 cup milk powder (any type, not limited to non-fat)
5.     3 tablespoons collagen powder (up to 5 tbsp if you prefer drier cake)
 
Optional Add-Ons:
6.     ⅔ cup allulose or ½ cup raw honey (for sweetness)
7.     1 tsp vanilla extract (or real vanilla bean)
8.     2 tsp baking powder (aluminum-free)
9.     Pinch of high-quality salt
Directions
Preheat oven to 350°F (175°C).
In a mixing bowl, whisk together:
o   1 cup yogurt
o   3 eggs
o   ⅓ cup melted butter (or animal fat)
o   1 tsp vanilla extract (optional)
Add in dry ingredients:
o   1 cup milk powder
o   3–5 tbsp collagen powder
o   Sweetener (if using)
o   Pinch of salt
o   2 tsp baking powder
Mix until smooth and thick.
Line an 8x4 inch loaf pan with parchment paper. Pour in batter.
Bake for 50 minutes at 350°F.
Let cool, then slice and serve.
 
Strict Carnivore Version
Only use: yogurt, eggs, collagen, and milk powder (no sweetener, vanilla, or baking powder).
 
You can bake as a small mug cake for a simple, sugar-free carnivore treat.

CREAMY CHEESECAKE & CRUST RECIPE:

Ingredients:
1. Knox gelatine powder, 3 tsp
2. Raw or pasturised whipping cream 1 cup. 
3. 16 oz cream cheese block form
4. Optional: vanilla extract, lemon juice, allulose.

Crust courtesy of carniterri : 
1. 1 and 1/3 cup nonfat dry milk powder 
2. 2 sticks of butter

Directions:
Bloom gelatin powder in 2 tbsp of water. 

Whip 1 cup of heavy cream into stiff peaks. 

In a seperate bowl, mix allulose and cream cheese till smooth and add a tbsp of lemon juice. 

Slowly fold in whipped cream and lightly mix till combined. 

For the crust, melt butter on low heat in a pan. Mix in milk power. 

Continuing on low heat, allowing crust to brown. May take at least 20 mins. 

Transfer to a parchment paper lined spring cake pan. Evenly spread the crust and place in the freezer to harden. 

Once frozen, spread in the filling and refrigerate for at least 6 hours.

The best protein bars are actually the ones that don’t have a label screaming “PROTEIN BAR” 😅

- Chomps in the snack aisle
- Archer beef sticks in the snack aisle 
- Greenridge natural beef sticks in the packaged meat fridge
- Teton beef sausages in the meat fridge

The BEST protein bars of all? RAW CHEESE!! Easy to travel with and so delicious: 

- raw gruyere and raw parmigiana reggiano are both at Costco! My two faves
- kerrygold dubliner is also a great option but not raw

How to not be addicted to foods that were designed to addict you ⬇️ 

1. Eat real foods. This means eating foods with one ingredient. I recommend centering your diet around animal foods as they satiate you the most. I also recommend you eat 3 meals a day when getting off these addicting foods. There is no room to be hungry because that’s when the cravings creep in! 

2. If you’re already carnivore or animal-based, this is where I recommend eating more animal fats. You will never truly feel how good and free you can feel until you intentionally increase the fats. 

3. Yes, there are better fats than others. I recommend cold butter, raw suet, and raw lamb fat as these fats are high steric acid and easy to digest and absorb. Try your best to avoid rendered, melted, cooked animal fats. And absolutely no seed oils, olive oil, avocado oil or coconut oil. 

4. Don’t be afraid of asking questions. I see too many people struggling with their health and weight yet unwilling to change their ways. 

I also see so many people who are struggling with sugar and carb addiction. It is a real thing and I’ve been in that trap. You won’t be completely free from food and sugar addiction until you stop having the sugar/ processed foods completely. Moderation with these foods do not work for most people and if you find yourself over eating them regularly, chances are you are not a moderator. Abstaining = freedom. I’m 6.5 years into carnivore and I have zero desire to want to eat sugar and processed foods.

💛Creamy Steak Sauce:
            Ingredients:
-       3 tbsp Bone Broth
-       8oz Cream Cheese
-       4oz Butter
-       Salt and Pepper to taste
 
Directions:
-       Melt your butter in a pan until start to slightly brown
-       Add in the cream cheese and when melted, use an immersion blender to thoroughly mix
-       If you prefer a more liquid texture, add a few tbsp of bone broth to thin the sauce

            Ingredients:
-       2 raw egg yolk
-       2 tbsp of mustard

            Ingredients:
-       Steak Fond in the pan from a freshly cooked steak

-       Italian Seasoning, Salt, Pepper, Onion/Garlic Powder to taste
 
Directions:
-       Cook your choice of steak, leaving the fond in the pan
-       Use roughly 1 cup of bone broth or just enough to deglaze the pan
-       Stir in 1 cup of heavy cream and allow to simmer and thicken
-       Mix in seasonings to taste and 3 to 10 tbsp of balsamic vinegar, to taste

those who aren’t new here already know that I poop once a week but if this is your first time hearing it, ever since I shared this update I’ve had so many long-term carnivores reach out to me saying that they also poop once a week after being on this diet for this long. This does not concern me or any of these long-term carnivores because we experience zero bloat and zero indigestion. If there is no bloat and signs of sub-optimal digestion, then pooping once a week means we simply have less and less waste to excrete, and that our bodies are truly absorbing all the animal foods we are eating.

Discovered carnivore royal jelly! Have you heard of it? 

I discovered this royal jelly food thanks to my dad, who beat pancreatic cancer and stays cancer free with a low carb ketogenic diet. He now eats predominantly animal foods with some fruits to stay cancer free

This breakfast is anti-bloat and gives me so much energy while in China 😋🤌

..and when I say, I never fart while pooping once a week, I mean it. I know how weird and insane it sounds especially being a six year long ex- vegan myself. I absolutely believed that pooping every single day was a sign of optimal health. Yet I was constantly wondering why my belly was always bloated and in pain when I was eating nothing but fiber, fruits, and vegetables.. 🥲

Now, after going high fat carnivore, I can eat literally as much food as I want without ever having to worry about bloating and energy crashes throughout the day. Yes, I may poop much less, but that does not concern me because I just know that I have less waste to excrete. Why? because I’m not eating useless fiber and vegetables. 

I also can’t think of a better sign of health than my cystic acne, psoriasis, rosacea, and eczema going away for good. My menstrual cycles every month are painless and regular. I sleep like a baby and I wake up with endless energy. If these results are not signs of health, then I don’t know what is. I know I am eating the right foods for my body because I am the best version of myself.

The best health/beauty hack in the world is saturated animal fats ⬇️

Raw Butter and Grass-Fed Ghee:

-rich in the healthiest fatty acids (omega 3) that hydrate the skin from inside out 
-hydration from within produces luminous and supple skin! 
-both fats are loaded with vitamins a,d,e,k which boosts skin cell regeneration and skin elasticity. 
-anti-inflammatory properties in both help heal eczema, rosacea, and redness. 
-apply topically on dry and inflamed areas on the skin as well as eat it! 

Pork rinds:
-an excellent zero carb crunchy snack to aid in eating more of the skin loving fats above.

It’s true. Carbs in Italy are much better than America..I wonder why??🤔 

my husband told me that he experienced zero bloat and knee pain when eating all the carbs in Italy. And he had carbs at every single meal.
