Truly Pizza - Dana Point, CA 

Somewhat of a pizza oasis has emerged along Route 1 near Dana Point. Amidst this renaissance of Neapolitan pizzeria establishments which also include NEApolitan Pizza , Homeslice (not affiliated with the famed slice shop in Austin, TX), Apizza Dojo - a cast of restauranteurs and pizza industry heavyweights have come together to establish Truly Pizza which has quickly emerged, not only as a stalwart of the region but beyond that to notability as one of the world's best. 

The modern take on Neapolitan pizza features the recently popularized cloud crust, laden with nuanced flavors of sourdough. Perhaps a touch of romano within the cheese, serving to support the mozzarella with the sharp and nutty tangyness that romano offers

The crust is blistery and crisped to the edge with a soft and fluffy interior, imparting subtle flavors alluding to sourdough and even focaccia. When I asked about the hydration level I was told this is a secret

The location is an absolute dream, and the pizza lives up to expectations. This page usually features slice reviews so if I get a full pie you know you're talking about something special ... but I actually dined here and ordered a second pie to-go, this is perhaps the highest possible endorsement that I can offer. Between the two pies there was a marginal inconsistency in what was achieved during the bake, this was noted by the variance in coloring on the underside but pies were equally within range of perfection 

Overall, a highly-recommended experience with on-site parking, along Route 1... Doesn't get much better than that

A dairy farmer, a tomato grower and wheat farmer walk into a bar … One thing leads to another and a conversation is started.

Dairy Farmer: “The cost of doing business is skyrocketing. Everything around me is getting more expensive. I don’t know how I can manage at these prices anymore, but if I don’t sell at these prices, the businesses I sell to will have to raise their prices.”

Wheat Farmer: “I hear you. Just last week, the cost of fuel for my tractors went up again. And don’t get me started on the price of fertilizer. It feels like we’re caught in an endless cycle. We have no choice but to raise our prices too.”

Tomato Farmer: “And let’s not forget about us. The drought has made it incredibly tough to maintain our crops. Water prices have doubled, and labor costs are climbing too. We’re all in the same boat here. If we don’t adjust our prices, we won’t survive.”

Dairy Farmer: “Exactly. It’s a domino effect (😅). If you raise your prices, I have to do the same, and eventually, it all trickles down to the consumer. It’s a tough spot, but what else can we do?”

Tomato Farmer: “We have to keep our farms running. That means we have to ensure we’re not operating at a loss. I just hope the customers understand that we’re not getting rich off these hikes; we’re just trying to stay afloat.”

Nonetheless, if you open a franchise in the food industry where the fans of that franchise are possibly more excited about the opening than the franchise owner themselves, you might have picked the right franchise. If you uphold a standard, where a creed to respect the craft is affixed onto the wall and printed on each box, there’s a possibility that the value you offer will always exceed any price you could possibly charge - and that is the case with each location of Tony Gemignani’s Slice House, where each visit is monumentous occasion for me that inevitably goes down as the highlight of the day for me. This also seems to be the case with the newest location of Tony Gemignani’s Slice House, which has just opened up a new spot in Ventura County

Remember when people would say Los Angeles pizza is a joke? It may not be the first city you’d pick for a pizza journey but the city now boasts a plethora of shops you wouldn’t want to overlook. One shop that rapidly made a name for itself, and took an entirely unique approach in both presentation and customer experience, is Secret Pizza. 

Based on the reservation style ordering process, I expected this to be a speakeasy of some sort - there is a glaring lack of signage … almost as if they would rather it be their reputation that brings people in rather than a pretty sign. I could also imagine the location being zoned for residential. This does lend to the secretive theme
Once you’re in on the secret you’ll find a fenced in floor space available for those choosing to dine on-location. There’s a perfect browning to the crust. A gentle crackle to the exterior with soft crumb where the yeast and glucose of the flour definitely had their way with each other. Perhaps for a long time, maybe they were at it for 2- 3 days, or some sweet spot in-between. There might even be something besides water involved, perhaps a fermented beverage of some kind. Sauce carries those qualities I typically associate with sauces labeled as “vine ripened”. Nothing overpowering, allowing the quality of the pizza to stand on its own without the experience being overpowered by any sweet or herby additions. 

Definitely some methodology to this, and the people there are clearly passionate about pizza, practically unable to contain their enthusiasm with the results they just pulled from the oven - and for good reason. Just seeing the pizza elicits a smile.If I went into this with any expectations, this would’ve exceeded them in a love at first sight kind of way. Without any indication or forewarning that I’d be reviewing this pizza, I walked in and noticed that they were audibly proud of the pizza that just came out of the oven, and that pizza just happened to be mine. Bella Luna Neapolitan Pizza Truck - Neapolitan pizza is made to a strict standard. When this style is done right there is only room for varying degrees of perfection. What puts this one over the top is the quality of ingredients and aromatic basil. While most Neapolitan pizza tends to feature a near-raw sauce accented by fresh mozzarella (whether that be of the fior de latte or buffalo variety) this is the opposite and features a high quality edge-to-edge cheesing of búfala mozzarella, with dollops of crushed San Marzano tomatoes providing a sweetening relief. The only thing I could imagine to make this better would perhaps be if I had gotten to it earlier - aside from that this is likely one of the top 5 Neapolitan pizza options in the city, and it’s being served out of a trailer that is being pulled by a truck … just imagine if this guy had more space to work with … Located about a block from the Hillhurst Ave entrance to Griffith Park. This pizza truck is open daily from 6PM to 11

As I’ve said before, and will say again, Los Angeles may have some of the best options for Neapolitan pizza in all of the USA. This is definitely one of them.

The sign is hard to see on the wall. I’d imagine it would be easy to walk by this and wonder if they are open to the public. Not a hole in a wall but more specifically a hole in a door, sharing the building with a a legal cannabis shop 

But next to this shop I saw the most beautiful act of Angeleno humanity. A parking enforcement officer not bothering a person stopped with their hazards on in a red, next to a fire hydrant and parked right behind them. “This must be good pizza”, I think to myself before approaching the window. Did you know that they collect $10 million a month in Los Angeles via parking tickets? Over $600 million in a 5 year period, and city officials complain that this is not enough to pay the bills for the parking enforcement department. I highlight this before mentioning that parking near this location could pose some difficulties, and perhaps more so during certain hours of the day. 

The slice box is handed out with enthusiasm. The slices have an aromatic feature that is wafting from the box as I walk up the hill to where I parked. It’s 8:30 and the street lights have just turned on. Lights , camera action. 

This slice performed nicely. Fantastic structure. Sauce was there but not showing off, and the cheese added a comforting Mac and cheese characteristic to the New York style slice. Solid option.

Hard Times Pizza - The sauce was slightly spicey and would’ve been nice on spaghetti but the crust structure didn’t hold up and this thing just fell apart and folded up in on itself. Very greasy, a sloppy mess if you were thinking of grabbing a slice for the road you might be in for a mess. This place does offer pasta options, seems to have a decent sauce going and has one of the nicest ‘pizza by the slice’ neon signs in the city

Double Zero Plant Based Pizza - 
As we approach a rising cost in living, we must contend that there is a rising cost to life … including farm life. We may be approaching a time where the price of cheese rises due to unforeseen regulation on farmers. If that day were to come where cheese could not be a cost effective option for business, we would need some solid alternatives, this is not it. Cashew is going to have to come along way, some yeast-based flavor or perhaps the addition of mushrooms could be the way but this isn’t it. Even in the years I’ve spent as a vegan crawling across town for the few options available here and there, I would’ve been thoroughly disappointed in this. The inclusion of this faux-cheese product serves to highlight the cohesive unison that is achieved with traditional pizza. A bad sauce, a bad crust, a bad cheese can detract from the dynamics that would’ve made for a great pizza. The crust is actually really good and the basil is the best basil I’ve had this week. The sauce is not anything to write home about but I appreciate the simplicity of it. However, every bite of the cheese detracted from the experience and tasted like a glob of old unflavored hummus-yogurt.  By the end I found myself doing my best to remove the stuff but it tended to smear like a spread rather pull like cheese, to
further test this for its digestive properties I’ve fed it to my dog and I will be watching her closely. The crust could’ve been the foundation of a top notch pizza, perhaps those who opt for the marinara will have the possibility of a high quality pizza experience, but this isn’t listed on the menu. You will have to subtract the cashew cheese from the margherita, which means you have no choice but to pay for the cashew spread and the total for this comes to $23. I remember Ghost Pizza Kitchen emerging on Melrose as a walk-up window, I guess they were under construction at this point because the location now has a nice glass store front, with stools for patrons to enjoy the view of traffic going by. A prime location that could set the foundation for this shop to be the official after-school slice spot for the adjacent high school. I’d imagine such an arrangement could be ensured by offering a student discount. Slices go for $5.26, which is on the high-end of the slice-price spectrum in Los Angeles. Prior to the pandemic slices were $3.83. I surmise this could be to help recoup costs of operation at this location and the renovation, branding and specially branded pizza boxes. 

Slices are under the glass for your viewing pleasure. They’re reheated in a small Baker’s Pride oven on the counter behind the register. 
The sauce is herby, more herby than tangy, zingy or sweet … the tomatoes are being outshined here by herbs that are debatable as to whether they should be involved at all. Garlic and oregano, I’m talking to you here. The cheese is kind of tasteless and the crust, although some windowpane-like translucence takes place when put up to the sun, is light gold with minimal browning, tastes and performs as if the dough was minimally proofed - the slice cracks and peels when folded, additionally if you can imagine the taste of coagulated flour that does not go through the scientific processed that take place during the proofing stage, you might know what I’m talking about.

My original score for this slice was 7.4 and my notes upon revisit reflect and echo my original visit. Give them a try and see for yourself, based on location this place could be a part of Los Angeles pizza culture for years to come

Prince St. Pizza @ 9161 Sunset 
First and foremost, it should be noted that this shop does not accept cash, nor does it accept cryptocurrency - perplexing steps toward a cashless society . This outpost of the legendary NYC-based establishment is located at the very tip of the Sunset Strip. Prince Street Pizza is one of the only legendary shops that we missed out on during thegreatamericanpizzatour so I was super excited to see it open in the Los Angeles area. For those coming from the west this will be the first slice shop they are greeted by, for those heading west it may be the last quality slice shop.
I was honestly taken aback by the slices I saw under the glass. I am going to have to make a few trips here to try all of these. Luckily this place is open until 3AM, making it a great late-night slice option. I started off with a regular cheese slice and their square slice. The regular slice isn’t anything to write home about. It cracks when folded, flops when lifted and drips when held. The sauce and its flavor  is nearly nonexistent and the cheese is not flavorful but instead is copious and gummy.  The other slice is great, I’m usually not a fan of garlic - and this sauce was practically texturized it was loaded with so much visible minced-garlic, major cheffing going on with this sauce work - but I can sense the onset of some major aftertaste, so my next stop will be for a beverage to wash that away. The crust is almost focaccia-like providing a great bed for the flavors to do their thing together in your mouth. Next time around I’d probably pass on the regular cheese slice and opt for one of the square slices instead - I will be back to review some of the other slices. Definitely a worthwhile visit and a great addition to the Los Angeles pizza scene

There are a couple of pizza trucks that I’ve been noticing on my trips across town, but Elio has been at this long enough to earn some recognition and fan fare, in fact, I remember attempts in the past to catch up with Elio and his truck sometime pre-pandemic. I’m not sure if this is a new location, but it is right off of Sunset Blvd in the Silver Lakes area. If you are headed west bound it will be on your righthand side. Hours are listed as 4:30 to 11PM Friday through Sunday and 4 to 10 Monday through Thursday. When you approach the spot you’ll see neon lights spelling out the shop’s name overlooking a towable trailer that is hosting an active wood fire and pizza prep station. Seems to be operated by two people, cashier and pizza maker - vertically-integrated and streamlined. There is onsite parking, which makes for a nice spot to hang while enjoying your pie, solidifying this location as one of the most convenient Neapolitan pizza options in the city

The Corner Slice - not my first time passing by this place and I remember noting that the business looked abandoned at one point in the past, I believe this means they have sporadic hours. The cash price for slices is $3 even, perhaps one of the only slice shops in the area until you start driving up Western. The cheese produces a lot of oil and the crust of the pizza has the taste of a hot seasoned cracker but the sauce is pretty good. This slice features a fishscaling on the bottom, alluding to the pan it was baked on inside of the oven …. Hard to go wrong with pizza, so the whole spectrum of pizza quality is usually an enjoyable experience, but I would put this slice in the lower end of the ‘decent category’, making for a slice score of 7.0 - there are many other foods that are almost regrettable if they were to rate in such contrast when compared to the best in their respective category but pizza is unstoppable and you can not deny the convenience and value of a readily-available and nearby slice of pizza … with that said, I would probably get a slice here again if I’m in the area. I surmise this place doesn’t have sell that many slices because the slices available featured various toppings all baked onto the same pie, this means you might run the risk of having some of the toppings from the neighboring slice on yours, something to note🍕🗒

Imagine a slice that is typically only available* seasonally for the summer and so synonymous with a region that having that style of slice across the country is instantly able to remind you of that special time and place. I’m talking about a style of pizza that  is popular along the beaches of the Greater-Boston/New England seacoast, where it is referred to as “Beach Pizza”. An old school style of pizza that seems to predate the NY style slice. It consists of square slices from
a dough baked on a thin rectangle pan. Sauce is typically sweet and many people opt to get there slice with a piece of provolone added to it during the reheat. This style of pizza is rare and square pie specialist, Square Pizza Co. may be the only purveyor of it on the west coast. This means a lot to me personally because no matter what I am going through in life a visit here will bring me back to a special time and place for me. Freddo, the founder of Square Pizza Co is a storied and accomplished pizza man with experience at such pizza institutions as Tripoli’s and Sal’s Pizza. A true master of craft with a wide-ranging knowledge of many styles that he and his shop have mastered. A visit here is an integral part of any trip to San Diego for me. If you know someone who is from the seacoast region of New England this will be a highly-recommended experience. One of my favorite pizza experiences in the world. This shop and the masterful slices it produces, representing an array of all things square, is result of endless passion, countless hard hours and an unwavering dedication to craft.

Proper Pizza has a new location and boy are they moving on up with this one … right next to the Beverly Center, I believe the locals refer to this area as ‘Miracle Mile’. A skip and a hop away from that Mobil gas station that is featured in the Los Angeles Times whenever people want to talk about how high gas prices are getting. This new location features no onsite parking but if you’re into risky business you may be able to get away with parking in the adjacent liquor store parking lot. There are about 3 or 4 spots there. Side street parking is sparse but possible. However the new shop has great presence and I believe this location being so close to an international travel destination like the Beverly Center will do wonders for the perception of Los Angeles pizza and perhaps help Proper Pizza expand to new locations where Proper Pizza is much needed

The NYC Style Slice aka “The Cheese Slice” - this slice features a perfect  cheese:sauce to crust ratio, razor-thin proportions with an exceptional undercarriage. Exceptionally foldable with a slight crack, a perfect NYC style slice experience. Stylistically this slice reminds me of Joe’s Pizza, perhaps with some influence from old school Papa Gino’s (which means, that it is my opinion that, they are using more than just mozzarella here) 
The Brooklyn style slice - starting to get the impression that these pizzerias hailing from New Jersey take their sauce game really seriously. This slice didn’t remind me of anything I had in Brooklyn during thegreatamericanpizzatour - it is actually much better in its own right. With the fresh mozzarella and sauce-driven experience, it almost seems like a Neapolitan pizza experience in squared format but unlike Neapolitan pizza I surmise this pizza has a longer bake time and a more hands-on sauce. The crust is nearly focaccia like, so in a way this actually reminded me of Golden Boy Pizza in San Francisco but with a truly unique sauce. Overall this slice is an inspiring experience.

One of the best slices of Los Angeles, and it comes with onsite parking which is actually available from time to time. Vito’s slice is famous for offering a sauce driven experience, even when I see the design on the pizza box, my mind is already thinking of the sauce, it’s like they chose the perfect color scheme to allude to their saucing prowess. In all of my pizza experience I found this to be the best representation of Neapolitan pizza influence that can be found within the New York style slice format. I say that because Vito’s slice typically features pools of sauce and are served piping hot with an amazing undercarriage. There is something about a Vito’s slice that is old-world, one of the best crusts in Los Angeles as well

While in the area east of downtown Los Angeles, I made a return visit to Superfine Pizza and found that they are no longer serving slices but instead these smaller personal pies. About $12 and made-to-order, this pizza features a phenomenal cloud crust, handles like a Neapolitan pizza but is loaded edge-to-edge with an assortment of cheeses making for a bit of top-heavy  experience, which means most of cheese will fall as you are handling it. Nonetheless, this lives up to its name as superfine pizza that adheres to the craft and sets a high standard for personal pie options in the city

Well alternative fuels and methods of transportation will come and go during our lifetimes … so let’s talk about something that will truly affect us for the rest of our lives, and that is the rising cost of pizza (and diminishing value of the dollar). Did you know the average cost of a slice of NYC is much lower than those in Los Angeles? A slice in Los Angeles can range from $3-$5, while a slice in New York will often cost less than $3. Is it the economic effect of all of the dollar slices keeping the rest of the market down or is it the rising cost of doing business in California? Even the megalith pizza enterprises such as Pizza Hut will charge an additional fee to their customers in California to help offset the cost of doing business here. Cue in ‘Pizza Orgasmica’ on Hollywood Boulevard. There’s a lot of great graphic design here, many instagrammable items to take pictures with along the wall, and this business may have a solid future in clothing design as all of their employees are garbed up in t-shirts with nice in-house designs. If you are operating a pizzeria in Hollywood Boulevard, why not sell clothing as well? This is a prime location, that will capture many unsuspecting tourist walking from east to west on the boulevard, simply because this is the first pizzeria they are greeted with during their walk. My first impression of this pizza was that it had been purchased from Little Caesars and is being resold at a 4-5x markup, I mean I’m not complaining, all those lights are going to cost a pretty penny with the rising cost of energy. Realistically though, the sauce was only slightly too herby to be Little Caesars. Also, it should be noted that even this pizzeria is an improvement upon the one that was operating out of this location earlier (Combo’s Pizza, not sure if anyone remembers that one but if you do I would love to hear your stories)

In the two weeks since my previous post a lot has changed. But one thing has remained the same and that is government’s propensity to institute terrible policies. As a country we have went from an economic bubble to pandemical collapse and as a result of the panic buying it is easier to find good cocaine than it is to find flour at a fair price, and I say that not with the intention of encouraging anyone to purchase either of these but more so to point out how easy it is for perceptions to change - as there are really no systemic supply chain issues with either commodity (cocaine or wheat) but now wheat has also joined the club of commodities being sold at exorbitant rates by scrupulous vendors due to the economic effect of poor government policy
But enough nonsense, if you’re on this page it is is because you share the same love for pizza that is shared by many people around the world. When I began this page with the purpose of finding the best slice of New York style pizza in LA, admittedly a niche pursuit, I soon found that any pursuit of pizza is a self-rewarding pursuit
Now that enthusiasm for finding pizza has evolved into a passion for the science, art and craft of making pizza at home with my girlfriend which ultimately may one day manifest itself into the opening of our own pizza dispensary in a more business friendly state, in a storefront that is really just a front for the storage of our commercial pizza oven - and as a matter of conception the business plan is already being written 
Anyway, after this three year quest to find the best slice of pizza in Los Angeles  I am now ready to unveil my list for the top 10 slices of Los Angeles will be unveiled on March 31st - after which, I do not feel there will be much need to continue this specific pursuit - however there are so many people that I’ve come in contact with on this page that I must stay in touch with, so all of you will likely find me when I connect with you all on another pizza themed Instagram page in the future. New logo and declaration of purpose - SliceOfLosAngeles is a conscious pizza consumer and aspiring pizza producer, capturing my observations and sharing them in a medium that affords me an outlet to write about a subject of my enthusiasm. I make observations and share opinions while learning as much as I can along the way. However my opinion is just an opinion and I am by no means an authority or guru on pizza. In fact, I often credit my affinity for pizza to being a psychological backlash to two years of gluten free veganism. At this time last year the closest I had to DiFara’s pizza was the unauthorized Las Vegas imprints using the name without the blessing of the pizza legend. I realized I needed to expand my horizons and experience more pizza. Since then the pursuit of pizza perfection has set me off on the 12,000 mile thegreatamericanpizzatour that brought us through 22 states in 53 days with over 100 slice shops reviewed around the country. Through this I acquired a lot of perspective on the craft of pizza and the pizza industry itself, but as much as I’ve come to learn I’ve always maintained that all I know is enough to know that there is still so much more to learn. If I give a rating it is only meant to serve as guide to denote the distance at which I would recommend traveling for the pizza. I encourage all readers to experience these slices firsthand. Garage Pizza - running into the late hours, serving slices and playing the top hits of the 80s. The sauce seems to feature red pepper flake and there’s enough oil on this pizza to start an unprovoked war over, but I like it and maybe a copious amount of cheese oil is exactly what you need if you’re getting a slice at 4 AM - the slice runs $4, which puts it on the higher end of the LA slice price scale, a small price to pay for a slice that’s available when you need it most (4 AM)

Apollonia’s Pizza - Another revisit to one of the best NY style crusts in the city. Seem to be masters of the reheat, in each of my experiences here the slices are consistently served after the cheese has been brought to a bubbling from the heat - I see this as the mark of a good reheat, when observing this be sure to allow for a few second to cool so you can avoid mouth burn . Somewhere I’m getting the taste of meat. It’s not the cheese, it’s not the crust so by process of deduction I assume it’s in the sauce, however this could be just the general essence of something else in the oven 🤷‍♂️ Make sure to arrive during the early hours to get one of the coveted square slices
