- If you can catch some sunshine this weekend, it's perfect cherry blossom watching time! There are a few places to catch them in NYC but my favorite is on Roosevelt Island cherry walk because of the wide open space and no time limit and the tram in the background and it's free ninety nine. 🌸As far as I know, the Kwanzan variety, double flower bright pink fluffy flowers, are not blooming yet so you still have a chance to catch them. 🌸The white blossoms (Shirotae, Shogetsu, and Fudanzakura) are in full bloom and falling and the pink single blooms (Rosea, Rosy Cloud, and Yedoensisare) are at peak as well. It's such a serene and peaceful thing to experience watching the petals fall and enjoying the fragility of these flowers. 🌸 If you aren't near any blooms at all you can take a virtual walk through brooklynbotanic and watch the video from 2020 's blossom season. It's like a scene from a Studio Ghibli film. Their selection of blossoms is unmatched. And if you go in person, the hills and the Cherry Esplanade makes for the dreamiest shots. - Another weekend, another food project. I bet that you are wondering "What's in my bowl?" . This time it was Pa Kimchi (scallion kimchi) and I can truthfully say this is one of my favorites. Spring is scallions season so they are very easy to find and in abundance at the store. Kimchi if you haven't had it before is one of the more popular Korean foods that all Koreans have in their fridge. It is served with anything & everything oe just with rice alone. There are hundreds of variations and the most popular is made with cabbage. I've made cabbage and pepper kimchi before so I wanted to try a new variation. Despite the strong aroma of scallions, when it's fermented most of the bite is taken out of it and it's so flavorpacked that this works even with a bowl of plain rice. With the addition of the main ingredient, spicy gochugaru ( Korean red pepper flakes) it won't be bland at all. I was so fortunate to get all of my ingredients from the Korean supermarket, but it is really far from me. A business owner in my neighborhood, who happens to be Korean, volunteered to help me and buy them for me because I wasn't traveling because of quarantine. So I had to make it as authentic as possible. I got the seal of approval from her and that meant the world to me. She was so touched that I enjoyed her cultural foods. Of course, she was gifted with a jar. You never know where you'll receive aid from. This time it wasn't a vegan recipe but it can be veganized by replacing fish sauce with a vegan broth. I was inspired by maangchi to make this from her buchu kimchi (Chinese chives) recipe. That's next with possibly the addition of pajeon (vegetable pancakes). 🤤 I have never enjoyed scallions the way I did with a jar of this. I'm sure that I kept people at distance with the aroma but we're still social distancing so all the better.
