💚LASAGNE AL PISTACCHIO🇮🇹 📝Ingredients: 1 pack/500g of dry lasagne sheets (mine did not required pre cooking) or substitute with fresh ones 120g mortadella 1 whole scamorza cheese (around 250g) 1 to 1.5 L of bechamel (depending on how many layers you do) 4 tablespoons of pure/100% pistachio paste (store bought or you can make your own in a blender) grated parmigiano cheese crushed pistachio for an added crunch and to decorate ‼️Cooking tips: make sure there’s a lot of béchamel sauce so the lasagne sheets (if you’re using the ones that don’t require pre cooking) will cook fully in the oven. 🍋🇮🇹 #SicilianSundays Timballo di Anelletti 📌 RECIPE BELOW👇🏻 Ingredients: 1 onion 1 carrots 2 celery sticks 1 glass of white wine 1 bottle of passata 500g beef mince 350g pork mince 4 aubergines 250g caciocavallo or scamorza cheese 1 cup of frozen peas olive oil parmigiano or pecorino cheese breadcrumbs salt pepper basil vegetable oil for frying the aubergines Method: Fry onion, carrot & celery in olive oil. Add beef + pork mince, season with salt and pepper, then pour in white wine. Once it evaporates, add passata, basil, season again with salt & add frozen peas. Simmer your Sicilian ragù until it smells and tastes divine. Slice the aubergines thinly and fry them in vegetable oil, then let them rest and absorb the excess oil. Line a cake tin with breadcrumbs, olive oil and aubergine slices, slightly overhanging the edge. Boil anelletti pasta for 3 mins, mix with ragù, pecorino (or parmigiano) & caciocavallo cheese (or scamorza). Fill the tin, fold the aubergines over, bake for 30 mins. Flip & serve this Sicilian beauty!
