🧨 Good to be back from being on the road for two months non-stop, y’all!!!!

🛩️ Did you know that posting my favorite restaurants for you while eating through the world is actually just a cover for the full-time job running my global studio/agency as a strategy architect & exec producer?

What looks like eating, hanging with chefs and musicians after hours through international cities is actually the soundstage — the groundwork that turns into real-world strategies getting built for clients like the Olympics, NBCUniversal, TV, film & music studios, dining platforms, international tourism boards, restaurant & hospitality groups, airlines, and cities like Los Angeles, New York, Copenhagen, and Hong Kong.

Like my recent trip to Singapore with blk65.co — the kind of brand I love collaborating with because their work lives at the intersection of food, culture, places, and storytelling.

BLK65 asked me for my favorite places in Belleville — and I’m thrilled to share the people and stories behind them, because in EVERY place I eat/share with you here on IG, who is around the table is just as important as what is on the table. Paris IS my kitchen ❤️💯

☀️ You know that feeling when it’s the first warm day you can finally go barefoot in the grass with the ☀️ sunlight on your face and dance like no one is watching?

This is THAT feeling in a glass - fresh & floral on the nose, gorgeous acidity, dry, light and carefree, balanced & elegant, beautiful finish.

Styrian wine grower Sepp Muster opened a very special bottle ... the first vintage he & his wife Maria ever made, a 2005 Erde - which means Earth...a blend of 80% Sauvignon Blanc and 20% Morillon (Chardonnay), fermented on the skins and partly the stems before aging in distinctive clay bottles. The wine is free from any fining, filtration, or added sulphur.

So go ahead, take your shoes off, put your face to the sun 😎 and dance like no one is watching.

🌶️ Catch Her While You Can - Chef Demi Yeh Is Cooking at Cendrillon This Weekend:

Taiwan-born French chef demiyeh is an industry fave — one of a now generation making food from traditional family recipes. It’s spicy, soulful, messy, and a little wild. Plates you eat face first and with your hands.

She was raised on the kind of food her family made on tiny fishing boats off the coast of Taiwan — hot pots, hand-torn herbs, recipes passed down through fingertips. Her cooking is spicy, soulful, and a little messy — like the street stall food she grew up eating.

The last time she did a Paris pop-up, I went THREE nights in a row. I brought friends from London and chefs visiting from other parts of the world. I couldn’t stop thinking about the food - delicate wild mushroom wontons stuffed with smoked ricotta, dressed with sage, yuzu, chili oil, and parmesan. Crispy Taiwanese fried chicken with fermented tofu mayo. A spicy beef tagliatelle so rich I picked up the bowl and drank the jus.

🙋‍♀️I’m a huge fan.

She’s not the next new generation — she’s the « now » generation.

This weekend, she’s cooking out of cendrillon.belleville — the punk-ass wine bar in Belleville that just won TimeOut’s award for best deluxe junk food. 🔥They’ve got a killer binchotan kitchen so I cannot wait to see what she does.

My post yesterday said Belleville is what Paris really is: layered, loud, full of cultures that don’t just coexist — they fuse. And that’s Demi’s food. You eat with your hands. The chili oil runs down your wrist. Which, to the Southerner in me, translates as sexy, dirty, and fabulous.

This isn’t a pop-up. This is a moment to pay attention. Her pop-ups sell out. She’s going international. Catch her while you can.

WHO: Chef Demi Yeh
WHAT: Spicy, soulful, Taiwanese-rooted food that hits like a memory and cooks like a riot
WHERE: Cendrillon, Belleville — loud, punk, perfect. 📍50, rue Piat, 19th
Ⓜ️ Pyrénées or Belleville
WHEN: This weekend — until it sells out. All things taiwanese, all day all night (from 14h till close Saturday and till sold out sunday) so don’t miss out.

WHY Paris IS my Kitchen: Field Notes Sunday 11:29 a.m. /Belleville: Bus 26 - Checking out a new restaurant, it’s the slow reveal of my Belleville neighborhood: real life, hidden stories & freedom to be yourself.

On a wet, gray morning, I took the bus through Belleville — to check out a young chef at his new restaurant.

Scenes in my neighborhood unfolded like a movie outside the window.

Picked up my phone, whispering field notes — instinct from 20 yrs in tv, film, music and food.

Whether you’re walking, in a taxi, or on a bus — you start seeing the shape of a hill, where vines were planted, graffiti tags on walls.

Contrasts and unity coexist.

One storefront at a time.

A little French bistro next to a Chinese noodle shop.

Asian grocery stores next to shoe repair, key making, vet offices — and where neighbors know each other’s dogs by first name.

You start seeing a village — an inclusive gathering spot for people who never fit one mold or another.

Belleville is the only place where you want the bus late to watch the whole world go by.

A man pedaled his bike with a woman riding on the toddler seat.

An Oaxaca chef in pearls roars up on a Vespa for his pop-up.

Three elderly women, friends, and a pregnant lady sat by a contraception sign.

They’re all here. Everyday rhythm.

There’s a girl with a purple afro, purple headphones next to a supermodel wearing Yves Saint Laurent.

It’s inclusiveness.

This is Belleville’s version of real life.

Living here, I forget how lucky I am to have anchors.

Most not born here but this is home.

This is my New Orleans. My Africa. My Nashville.

Chefs under 35, forged in the world’s best kitchens, coming here to start their own places — financially, emotionally, mentally, spiritually free to do what they want.

These are the places that pull me in. The why behind the what.

It’s not just what’s on the table — it’s who’s around it. Who built it. What it took for them to get here. People showing up, doing the work, day in and day out. These are my kind of people.

Neighbors grabbing drinks at cocktail bars.

Neon signs flashing above kebab shops.

This is the Paris that’s held my heart for years.

Paris truly IS my kitchen. 2025-06-09 20:49:48 .. 297 +23% 53 +36%
🔥POULETTE took over Septime CAVE. Copenhagen’s cult fried chicken sandwich rolled into Paris for one day — and the industry showed up.
Shoutout to the Poulette crew: Martin, Jespar, Edgar, Fie, and Marie — you brought the heat. Natural wine, sidewalk pours, Champagne, cold beers, crumbs, and sauce dripping down wrists. The Poulette crew threw down hard. 📍If they ever want to launch a Poulette Paris? We wouldn’t say no Martin & Jespar! ❤️

🧨 Y’all. Some of the most exciting food in Paris right now isn’t tied to one address—it’s moving.

There’s a new wave of chefs building their future one pop-up at a time—cooking across cities, testing dishes, learning fast, scaling smart.

Chef Valentin Burteaux just wrapped a sold-out pop-up at Bambino—and it was a breakout:

Scallop Caesar with pig’s ears.
Karaage BLT with bacon, cheddar, tarragon ranch.
Stone bass with sorrel cream, nasturtium, and caviar.
Tomatoes in lamb jus—we passed the bread, then drank the rest.

He came up through the Septime kitchen. So did his wife and longtime collaborator, chef Fanny Payre, who was right there on the line.
She’s opening a savory pâtisserie in Montreuil soon.

I’ve known them a long time. It almost feels too tender to call them a power couple, but they are—quietly. Patiently. Brave as hell. They’re reading the room, learning fast, and building on their own terms. No ego. No pitch deck. Just two chefs risking everything without losing themselves in the process.

It’s the kind of strength I love seeing in this new generation—and they’re carrying it with heart.

If you missed him at Bambino, wait till you see what he’s doing next at cafedelusine.
And you won’t believe what he’s lining up for the rest of the year.

👉Follow valentin_burteaux and fannypayre to see what’s next.
And if you want more nights like this on your radar—you’re in the right place.

😎 Paris in May: When Locals Are on Vacation, Here’s Where to Eat

If you’re home in your pajamas with a glass of wine, scrolling for where to eat in Paris during May—I’ve got a little surprise for you. 😉

Did you know that May is the longest weekend of the year?

With two holidays falling on Thursdays (May 1 and May 8), locals stretch them into long weekends—and disappear through the 12th. Then there’s more: Ascension Day hits May 29, and Pentecost Monday lands June 9. 🤦‍♀️ Doors close, out-of-offices go up, and your go-to spot might be “exceptionally closed.”

❤️The good news is: a lot of the best places are still open. They aren’t just my favorites—they’re where you’ll see me week after week. These restaurants are my life.

👇You’ll see them chiming in below. Scroll through the comments. That’s where the real stories are.

🎯I’m breaking down who’s open, what they’re serving, and why they matter. Each one comes with a little something about the vibe, the food, and the people behind it—plus a link to their Instagram so you can book a table and fall in love with these places (and the people behind them) for yourself.

📍And if you’re one of those restaurants staying open, thank you! Let us know below. I’ve got a lot to say about you.

🫡 Update: now closed.

Original post: Are you ready? One of the best places for breakfast & lunch near the Eiffel Tower.

It’s not every day I get to point you to something legit near tourist monuments - but Tapisserie is different.

This artisanal pastry shop is from the Septime crew — yes, that Septime, the team behind the restaurant ranked 11th best in the world. The name’s a quiet joke — they flipped the first and third letters of pâtisserie. The original shop is across from their Michelin-starred flagship in the 11th. This second one brings it to the Left Bank.

The viennoiseries and sandwiches are all made in-house, with seasonal ingredients — a lot of it coming straight from the farms surrounding their property in Normandy.

You walk in and the smell of butter hits you like a warm slap. The maple syrup tart might make you cry. The croissant with jambon-beurre, farm butter, and Comté? You’ll be DREAMING about it at 3 a.m. Golden, flaky, salty — the kind of thing you chase through Paris and rarely find. The pistachio Paris-Brest nearly took me out. The cream puffs are filled with tropézienne-style vanilla dream. And the kouign-amann? A caramelized, sticky MASTERPIECE. The pastrami focaccia is ridiculous. Salty, melty, messy. You eat it with both hands and zero regrets.

And the coffee? It’s no afterthought — sourced with larbreacafe, featuring Huista beans from the Guatemalan microfarm of Erika Sanchez, part of Red de Mujeres, a collective of badass women growers in Huehuetenango.

☀️Pretty weather? Sit outside at a picnic table, flanked by Les Invalides, École Militaire, and the Eiffel Tower — or take it to the Seine river one block away.

🧨Save this for the day you find yourself surrounded by monuments and mediocre menus. Or better yet — send it to someone who’s hungover, horizontal, and needs a proper breakfast they can order online.

🛶 Where to Eat & Drink in Venice Italy: here is your list! After having lived, worked and eaten in Venice for more than 11 years, my favorite moments are under the stars barefoot on the warm stones of my canal terrace sharing meals w/friends, in a boat exploring the lagoon (those epic days with Daniel Rose, Frank Cornelissen, Gut Oggau, etc🤭❤️) and taking the world’s chefs, sommeliers, journalists & industry to my favorite places to eat & drink with fiercely proud Venetian locals who give a damn about seasonal lagoon to table food. That means fresh Adriatic seafood, handmade pasta, produce from the surrounding lagoons, natural wine & craft cocktails. 🐟🍷Every bite and sip in these places tells a story of that PRECIOUS island and its waterways. Most have bottles to go & terraces to watch the rhythm of daily life. These are only a starting point and Instagram won’t let me put it all here so I will continue 9-16 in comments. Enjoy and say CIAO for me! 😎Tag your friends, save & share 🙏

1🎯 antichecarampane
Francesco’s family trattoria is one my favorite restaurants in the world. Finding it is half the fun. Appreciating this as a Venetian treasure is required.

2🎯 estrovinoecucina
Brothers Dario & Alberto’s fantastic social wine bar-restaurant in Dorsoduro.

3🎯 stappo_ve
Mathilde & Diego’s Sante Croce wine bar-restaurant is a stunner both in the plate, bottle & rear courtyard.

4🎯 ozio.venice
Natural wine bar on Campo Santa Maria Formosa, you cannot beat the people watching from their terrace seating.

5🎯 bacarorisortovenezia
Francesco’s cherished wine bar at both San Marco & Canareggio (near Masa’s).

6🎯 osteriagiorgionedamasa
Masa’s Japanese - Venetian inspired fresh fish w/dashi & chili flavors. Love the gyozas and even pork belly taco.

7🎯 osterianicestellato
Elise & Estevan’s Osteria on the canal in Canareggio is rustic in the dining room & refined in the plate.

8🎯 allarcovenezia

🎯 The Butcher of Paris’ epic MONSTER Croque Monsieur sandwich on crunchy butter-toasted organic pain de mie bread from leoniebakeryparis, STACKED with smoky jambon blanc de Cantal, tangy 18-month Comte cheese and the mother load: a punchy crème fraîche-grain mustard sauce. There isn’t a comfort food mouth bite like this in the entire world. Texture AND flavor. If this doesn’t fill you and your belly with joy because they feed your inner kid dreaming of (and working your ass off to treat yourself as an adult) eating at their counter in Paris - then you ain’t breathin’.

🎯‼️Bistrot Paul Bert, Paris: How can just a simple plate of Prince de Paris jambon and salted butter slathered on hot toasted baguette with vinegary cornichons be SO delicious? 🙋‍♀️😳 Followed by bright green spring garlic oeufs-mayo, seared beef filet in Cognac, butter & peppercorn cream, crispy frites with the addictive blow your sinuses Dijon mustard, salted chocolate soufflé and a juicy ‘21 Tavel by #Pfifferling and gutoggau

💖 Always love looking back at our table after a joyful meal shared with my restaurant industry friends from Copenhagen (about to open their brand new place botschaft.cph ‼️🫡) which I joked looked like a crime scene. 😂

❤️Bistrot Paul Bert celebrating 27 YEARS this week. Bravo to Bertrand, Chef Thierry, Second Malé and each one of the front of house who always make it feel like home. 🙌 📕Just one of the fab bistrots in my new Paris restaurant & bar book - type “book” in comments for direct link 🔗…🙏

‼️Wow! This ain’t just another Paris wine bar popup honey…Chef MinSoo Kim (3-years at Septime) is creating dishes you won’t find anywhere else (here at Early June). Sexy, sassy, rich, flavor-bombs and full of attitude - all the things I crave in food these days and of course EJ brings the hospitality FOH with estrada_pollo, the vibe with candlelight and 🕺tunes.

🎶🎧When my Australian music festival industry friends told me they were moving to Paris and wanted to go to EJ, I could not wait to take us so we could celebrate. 🔥The EJ team and Chef MinSoo Kim blew us out of the water!!!! It will be one of those ‘remember that night when…’ kind of experiences - 🍷powered too by Camille’s new very special collab with partidacreus4195 and Victor’s bottles of tomlubbe’s juicy garnet Matassa.

🎯No pun intended, through June, get your “wow” night too with MinSoo creating one of a kind Korean-French dishes from his culinary roots fused with his time in French kitchens. If you’ve only heard about it and haven’t been yet - Early June’s space feels like a hidden gem on the canal in the 10th arr… after your first visit it will feel like “home.”

‼️Check out a few of our dishes:

🫡‼️Leeks and scarmorza flatbread (smoky creamy mozzarella) & ssamjang (red chili & soy paste), Kimchi pork saucisse-purée, OFF THE CHARTS deeply delicious osso bucco & marrow, rice & shiitake escabeche, Veal tripe ragout & sesame powder, and gnocchi tteokbokki-style (spicy, sweet, and savory gochujang sauce) just for starters! So damn delicious.

🔖Save and tag your friends and make a magic night happen for you and yours too. 🙌🙏 Merci team earlyjuneparis and minsoo.k1m! We ❤️ you.

‼️Now-April Mokoloco: Don’t miss this popup by Chef Akira Sugiura, one of my favorite people and up & coming chefs in Paris at Mokoloco (the sister to mokonutsbakery, created by owners Omar Koreitem and Moko Hirayama) Mokoloco is their open kitchen platform for local and visiting freelance chefs who showcase their international culinary roots and love of French food. Many have gone on to open their own restaurants such as industry favorite esulee at jip.paris

📍Right now through end of April, get in on an exciting meal with Japanese-born akira_sugiura … ‼️ I first met him in Paris a few years ago at Restaurant Papi, then at lacavepaulbert when lora.terrade did her first sakenightfever popup. Since then, I’ve following his journey with his popups all over including the one and only snail_bar_oak in Oakland California.

👉 Right now, he is on the pass with an innovative fusion of Italian, Japanese, and French cuisine dishes paired with natural wine & sake. His inspiration comes from a long career working in Japan, Australia, Spain, Italy, and France.

❤️Loved a recent dinner with my entrepreneur- musician soul sister friend, Owner of thehoodparis where we ate our way through most of the a la carte menu.

👉THRILLED to introduce you to Akira. Follow Akira’s progress because when he finally opens his new place - you’re going to want to be there! 🙌

🎯Japanese rice bowl, marinated egg yolk, black truffle & Parmesan

🎯Crab & creamy scomorza (smoked Italian mozza) croquettes, dried tomato bulldog sauce

🎯Outrageous warm spoonfuls of foie gras chawanmushi (“steamed in a tea bowl” custard-style), yuzu dashi & wasabi. Could eat this every damn day for breakfast. And I don’t “do” breakfast.

🎯Yakitori-style tsukune, guinea fowl meatballs w/ tofummus (tofu hummus)

🎯Amberjack sashimi, sesame, shiso & Sichuan powder

🎯The neighborhood corner cafe-bistrot-bar is making a comeback thanks to young chef-owners like Flo’s cafe_du_coin & lorillon_bar_de_quartier and the crazy popular lecornichon.paris while places like Martial & Joëlle’s old school fleuribar bistrot have been going strong for years.

🎯My lunch today reminded me of Paris 30 years ago, when places like this were in every neighborhood on corners, long before Septime and Bistrot Paul Bert were staples. Back then I remember being so damned intimidated at my corner local because I had zero clue what was going on service wise and not speaking French.

🎯Now, I see these places through different eyes, a masterclass in HOW locals actually eat - beautifully fast-paced and chaotic, no reservations, waiting outside before going in and getting your act together before sitting down. So fast paced, servers balancing hot plates up their arms pushing past you to get to tables, the noise deafening, barking at customers “How many? One?” (Pointing wildly to a table by a swinging kitchen door) “Over there! Sit!” You took whatever seat they gave you honey. Hesitate and you’re toast.

🎯I was emotional here, because I forgot about these village corners, where everyone knows everyone, parents bringing their kids for lunch during Wednesday’s 1/2 days, and the kids eat properly with knife & fork. A regular reading a paper at the bar with a beer, the brutal sound of frites hitting the fryer oil in the kitchen, ordering within 10 seconds of being asked what you want, served within in 60 seconds and standing in line to pay after. ‼️At Fleuri Bar, the price of their Normandy roasted chicken-frites has never changed, only 6.86€ (yes you heard me) and the wine list is simply “white or red?”, it’s crowded as hell and you practically walk through the kitchen for the WC located under a common stairwell.

❤️When I saw one of my favorite Paris restaurateurs coming towards me saying, “I just moved in across the street today!”… I would have been jealous as hell if I wasn’t so happy for him. 😂Merci Le Bar Fleuri for the nostalgia and giving me a million reasons to go back.

🍕 This is the life…an XXL 24-inch NY-style pizza in Paris. From the Owners of Bouche Restaurant across the street - Rori Pizza is a hot neighborhood spot for slices/whole pies to take away or dine in. 🎬 The last frame/video is when I recently took the owner & team from Les Enfants du Marche and let’s just say we didn’t order just one. 😂

What makes it special you ask?

🍕The pizza: ….is made using a 4-day long fermentation process with very little yeast giving it a cracker crunch crust.

🎯Styles: it’s not just whole pies but slices such as the focaccia pepperoni “square slice” called the “grandma”or crispy NY-slice triangular slices.

‼️Toppings: Hit up their online menu for all of them but you’ll find me face first in the spicy Italian salami with hot honey, or their genius cacio e pepe and my favorite : mozzarella, scamorza, and razor-thin sliced potatoes dipped into a side of super tangy dill-pickle cream.

🕺The vibe: Lively, buzzy, joyful, heartfelt.

👀The look? Red vinyl, formica and chrome give it a vintage deli.

🥃To drink: Their cocktail program was created by a specialist in Copenhagen for a concise list of craft drinks such as: Negroni, Manhattan, Sbagliato, or red/whitevermouth specials, with IPA beers, natural wines and even Bourbon on hand too.

Who goes? 🚶🚶‍♀️🚶‍♂️In the know foodies and regulars start lining up outside the pizza joint that Owners Angela Kong, Antoine Bernardin and Chef Florent Peineau started not even a year ago. As soon as it opens, the take out window swings up for the take away orders, and the terrace seats, bar seats, and table seats are packed from the minute they open until they sell out of pies.
