I am saddened to hear of Mr Armani’s passing. His legacy is monumental both in women’s and men’s fashion. Mr Armani was always elegant, always kind. And what a work ethic he had. Sui generis. The last time he dressed me, he even sent flowers to say thank you—to me (!) commenting on how he and his niece loved the way I looked. Such a gentleman.

I’m so grateful for this last year around the sun. It’s been productive professionally and also very moving to watch #Littlehands start high school and continue to blossom. I’m so grateful that all of you have joined and supported me on this roller-coaster ride.
Two years ago, I took a leap, and there was so much that was unknown. Would I work again? What would the future bring? I’ve been pivoting and plotting the next phase of my life—and it’s here now. As I celebrate this birthday, I’m so thankful I’m about to create a new show, all my own, with amazing people around me working hard to bring you something that’s entertaining, engaging, and informative. And I’m also about to publish my 8th book.

A perfect sweet-and-sour summer dish to use up the abundance of stone fruit we have right now. This plum chaat is one of the simplest but most delightful recipes in my upcoming cookbook, Padma’s All American.

For those who may be new here, chaat is Indian street food that is usually made with a variety of fried ingredients (sev papdi, samosa) and boiled ingredients (potatoes, chickpeas), and topped with various spices, chutneys, and herbs. What makes chaat exciting to me is the intense mingling of sweet, spicy, sour, and salty flavors that burst in your mouth with a variety of textures and temperatures all at once. There’s a lot that goes into each chaat, and every chaatwala has their own method and recipes – but most chaats are vegetarian! I’m not into extreme detoxes, juicing, or most of that stuff, but I found a natural TOPICAL way to help flush out water retention and bloating. Bug repellent made from essential oils — and it smells so good you won’t need perfume! Another oil that I did not use here that would also work is citronella. 

Here is what I mixed together:
- About 1 oz of rose water
- 25 drops of lemongrass oil
- 25 drops of geranium oil
- 10 drops of neroli oil
- 10 drops of rose oil

Rasam is a quintessential South Indian soup. This elixir is ladled out to any sick child or woebegone adult. It can be sipped at the start of a meal or served as a second course, mixed with rice and ghee.

Making a Tadka in Hindi, or Poorichukotal in Tamil, is a common practice in South Asian cooking. It’s often used to finish a dish. It’s also referred to as “tempering spices”. Frying spices in oil or ghee extracts and amplifies the flavors of the spices you’re using. Learning this step is essential to many of my recipes, including the thayir sadam that I shared with you yesterday! Also a tadka is great way to give steamed rice some personality.
