This is by far one of the yummiest pasta recipes I have made so far, takes no time and is high in protein. The best part no one can tell we have sneaked in spinach in it

RECIPE: 

INGREDIENTS for 4 portions

4 cups (1 L) frozen berries thawed
2 tbsp. (30 mL) granulated sugar
2 tbsp. (30 mL) corn-starch
1 tsp (5 mL) vanilla or maple extract
1-½ cups (375 mL) quick-cooking rolled oats
¼ cup (60 mL) all- purpose flour
¼ cup (60 mL) packed brown sugar
¾ cup (60 mL) butter, softened, or non-hydrogenated margarine
2 tsp (10 mL) ground cinnamon
6 tbsp (90 mL) Nutella

To prepare this delicious recipe, 15g of Nutella per person is enough to enjoy!

METHOD

Pre-heat oven to 350°F (180°C).
In a large bowl, combine the mixed berries, sugar, corn-starch and vanilla. Spoon into six- 1 cup (250 mL) ramekins.

In another bowl, combine oats, flour, sugar, butter and cinnamon. Divide crumble mixture over the fruit. Place ramekins on a baking sheet. Bake for 30 to 40 minutes or until fruit is soft and bubbling.

Cool completely. Serve with a tablespoon (15 mL) of Nutella on top. Enjoy with a glass of milk for a complete breakfast.

My Mom’s Cucumber Cream Cheese Sandwich 🥪 🥒

So sooo good be it for Picnics, Tea time, Tiffin or any house party !!

The Cream cheese used by mom was also homemade but I am using store bought one 

Recipe :- 

Here's what you'll need : ( makes 6-7 sandwiches)

For the filling :
3/4th  cup cream cheese
1/4 cup mayonnaise
2 tbsp finely chopped mint optional 
3  tbsp finely chopped coriander
3 tbsp finely chopped dill (highly recommended)
Salt & pepper to taste 
2 tsp chopped jalapeño optional 
1/2 tsp lime juice
1/2 tsp lime zest

• simply mix all the ingredients and set aside.
• this filling is enough for 6-7 sandwiches.
To assemble:
• use super soft white bread, cut the crusts off.
• spread a generous amount of spread on all the slices.
• arrange thinly sliced cucumbers all over the bread and seal with another slice of bread. For 6 sandwiches I used 1 large English cucumber.

Crispy Corn Bhajia !! 

Monsoon ki baarish and corn bhajia is a marriage made in heaven 

With my recipe you will guaranteed get perfectly crisp corn bhajias that you have never eaten before !!

Recipe 

CORN 2 NOS (I took sweetcorn which was raw and not boiled) 
Salt to taste 
Red chili powder  1 TSP
Gram flour or besan 1 CUP
Water as needed 
Rice flour 2 tbsp 
Corn flour 1 tbsp 
Hot Oil 1 tbsp 

Method:
To make corn bhajiyas its very important to cut the corn in a certain way, if you use whole corn kernels then the bhajiyas might splutter & lose their shape while frying, so if you get corn kernels from the market then make sure you chop them roughly.
Take a whole peeled corn & cut it into two halves, then place the cut side down & cut the corn kernels by moving the knife from top to bottom, similarly cut all the whole corn.
Now add the corn kernels in a bowl, add spices, then add gram flour, rice flour and cornflour  in batches & mix well.
Further add a splash of water & mix it well again until the consistency shown 

To fry the bhajiyas heat the oil until it gets moderately hot 
Further scoop out small portions of the mixture & drop them in the hot oil carefully, you can dip your hand in cold water before scooping if the mixture sticks to your hand.
Fry them over high flame for a minute without stirring them then turn down the flame to medium low & fry until they turn golden brown while stirring at regular intervals.

Home Cafe ❤️

Have been wanting to do this since so long where I convert my home into a cafe for a day 

The menu was curated with a lot of love, a lot of thought and everything was made at home. 

 I must say i miss this adrenaline which I experienced when I was running my own Cafe. This one had its own challenges with the small oven and small kitchen space but at the same time so much fun to do

Back in the day, my mom had her own version of seekh kebabs - wholesome, tasty, and always paired with her “secret” healthy dip. 
So I thought, why not bring that recipe back today? ✨

Recipe :- 

Veg Seekh Kebab

Ingredients:
2 tbsp Oil
1 tbsp Jeera
½ cup Onions
1 tbsp Ginger minced
1 tbsp Garlic minced
1 tsp Red Chilli Powder
1 tsp Coriander Powder
1 tsp Jeera Powder
1 tbsp Garam Masala
½ cup Carrots crushed
½ cup French Beans crushed
½ cup Corn crushed
Salt to taste
1 cup Paneer Grated 
1/2 cup potato grated 
½ cup Coriander chopped
½ cup Mint chopped
½ cup Green Chillies chopped (less spicy)
Besan for binding
Oil for cooking
Walnut 1/3 cup chopped 

Method:
Pour some oil in a pan, add in cumin seeds with onions, ginger and garlic. Sauté for 1-2 mins
Now add in red chilli powder, coriander powder, cumin powder & garam masala
Cook this for another minute
Lastly add in carrot, french beans, corn, salt and little water and keep cooking till the water dries out
Cool down the mixture, add in boiled potatoes, crumbled paneer, coriander leaves, mint leaves, fresh green chillies, chaat masala, salt if needed and very little besan for binding. Roast chopped walnuts and add this too 
Combine all the ingredients & your seekh kebab mixture is ready
Grease your palms with some oil, make equal portions of the mixture to make your kebab skewers.
Cook the kebabs on a tawa with some oil till they are golden brown on either side

Healthy Mayo 

Ingredients:
½ cup Greek yogurt
5-6 soaked Kashmiri red chilies
15 cashews
70g  paneer
2 garlic cloves
1 tsp honey
Salt to taste
1 tsp lemon juice 
Blend all to a smooth paste

I’ve added my little twist with walnuts for that extra crunch + goodness, and a creamy cashew mayo that’s pure magic on the side. 🌿🔥 
One bite and you’ll know why I keep going back to this recipe again and again!

Veg Choila 

This high protein Nepalese Dish is so yum, can have it as salad but I also enjoyed this with roti 

Recipe 

Veg choila
1/2 cup soya chunks, I took mini ones@
Warm water for soaking

For coating
1 tbsp mustard oil
1 tosp red chilli powder
Salt to taste
Air fry the chunks for 8-12 mins at 180 degrees depending on the size 

For tomato base
1 tbsp mustard oil
4 tomatoes cut halfway
8-9cloves of garlic
2-3 Kashmiri dried red chillies(I removed the seeds) 

Dry roast 

2 tsp coriander seeds 
1 tsp jeera 
4-5 peppercorn 

Final mixing
Going the spices first, then mix 
Tomato base
Soya chunks
1 small chopped onions 
2 tosp roasted peanuts
2 tbsp coriander leaves 
Salt to taste 
1 tsp oil tadka with ginger julienne

Cucumber Dahi Tadka aka Cucumber Tambli 

This is a Karnataka special South Indian dish which literally takes very very less time to make and is yum. Has cooling properties too 

Cucumber Tambli / Dahi tadka

Cucumber Tambali Recipe
Ingredients -
Chopped cucumber small - 2 
Pepper - 1/4 tsp
Jeera - 1/2 tsp
Sesame seeds - 2 tsp
Green chilli - 1 
Garlic - 3
Coconut grated - 1/3 cup
Coriander - Handful
Salt to taste

To mix later 
Water - 1-1.5 cup water 
Curd - 1 cup

Tempering - 
Oil - 1 tsp
Dry red chilli - 2-3
Mustard - 1/2 tsp
Jeera - 1/2 tsp
Curry leaves - 7-8

Method

Grind the ingredients mentioned it all into a smooth paste by adding little water.

Add in water, curd to adjust the consistencv. to a thick buttermilk, add cucumber mix

For the tempering -
In a pan add in oil, mustard seeds, jeera, dry red chilli and curry leaves
Once the tempering is prepared, pour it over the prepared mixture. 

Enjoy it with hot rice.

One of those trending Insta recipes I tried which is soooo worth your time & effort

For the baingan:
5-6 dried deseeded Kashmiri red chillies 
soaked in water for 30 mins 
8-10  garlic cloves
1 tsp dhania 
1 tsp jeera
Salt to taste
2 tbsp  mustard oil
Little water to blend 

1 large eggplant
 
Protip:- cook at low heat with loads of oil and cover and cook it so that it’s cooked well from inside or else the top layer might just burn and Baingan can remain uncooked

It’s a fusion of flavours you’ve never tasted before – and I’m obsessed. 🎉

recipe 
1/2 cup Mejdoul Dates, pitted and roughly chopped
3/4 cup Milk
1/2 teaspoon Baking soda

Deseed and chop dates roughly, soak in hot milk and add baking soda and keep aside for 30 minutes. Now mix vigorously to make a smooth paste 

1/3 cup Brown Sugar (Demerara Sugar)
1/2 cup butter 

Whisk sugar and room temp butter 

Add 1/2 teaspoon Cinnamon Powder 
1/4 teaspoon Salt
3/4 cup All Purpose Flour 
& the date milk mix 

Transfer and bake in a preheated oven at 180c in a 6” x6” for 25-30 mins until@a skewer comes out clean 

Chocolate Toffee sauce
1/2 cup butter
1/2 cup brown sugar
1/2 cup fresh cream
½ tsp vanilla
50g Dark chocolate

Mix all and start to cook stirring continuously at low heat until it melts and starts to thicken little, let it come to a boil and bubble vigorously be careful. Switch off the flame . It’s gonna 
Thicken further 

Poke the cake and drizzle some sauce 

Serve with icecream optional and drizzle more sauce

10 Mins Airfryer Hack !! 

It’s a must must try

Note:- 

Murmurs flying - ofcourse i could hear the sound of murmurs flying inside but after a few seconds it stopped, i continued doing and turned out just fine. And the Airfryer was good too

Everything evenly cooked - Yes surprisingly everything’s as perfect, cashew, peanut, coconut and even murmura 

Kept Checking - I checked twice to see If the murmura wasn’t burning 

Which Airfryer ?? 

This is a 10 year old Philips model which i think they are not selling any more 

You can eyeball the ingredients like i did, but a rough recipe 

A big bowl of puffed rice 
1/2 cup peanuts 
1/4-1/3 cup sliced dry coconut 
1 sprig Curry Leaves 
Green chillies 2 chopped into big chunks 
2 Kashmiri dry red chili cut into pcs 
3 tbsp Mustard oil so that everything coats well 
Salt to taste,1/4 tsp turmeric powder, 1/2 tsp Kashmiri chili powder, 1/2 tsp amchoor powder 
10-12 cashews 
10-12 almonds

Panjiri - Janmashtami Special 

Panjiri ka mention Ayurveda main bhee kiya Gaya hain, it’s high in nutrition and we generally open the fast eating this only 

Dhania ki Panjiri is  the most commonly made prashad in Janmashtami and  Do make this for  Kanha

Ingredients for Dhania
Panjiri Prasad
Coriander(dhaniya) powder -1 cup 
Desi Ghee - 3 tbsp
Makhana(fox nut) - 1/2 cup
Sugar(powdered)/Bhura - 1/2 cup
Ripe or desiccated Coconut - 1/2 cup(grated)
Cashew nut, almonds - 10  pcs each
Elaichi powder 1/2 tsp

1) Roast Makhana in 2 tsp ghee and keep aside 
2) Roast nuts in 1 tsp ghee and remove 
3) Dry roast desiccated coconut 
4) Roast Dhania which we blended into powder with 2 tbsp ghee and keep aside once it turns aromatic 
5) As soon as these cools down completely only  then add add powdered sugar(grind the sugar in blender or use boora if available or jaggery) mix along with cardamom powder.

Lemon juice - 1/2 teaspoon
Water to blend 
Jaggery 1/2- 1/3 cup as per taste 

PREPARATION
1. Blend all to smooth purée, please check for salt and sugar as the taste of Jamun may vary. So feel free to adjust seasonings 
2. Transfer, this into popsicle mould and freeze overnight

Ingredients 
½ cup almonds
½ cup cashew nuts
' cup pistachio
½ cup walnut (optional)
25 dates (pitted)
1 tsp cardamom powder

1. Remove seeds from dates if not already pitted.
2. Dry roast almonds in a pan for 5 minutes.
3. Add cashews, walnuts and pistachios and roast 
4. Let all cool down and grind coarsely 
5. Toast pitted dates in the pan for 2-3 minutes. And blend the dates until mushy 
6. Now mix both dates and coarsely grounded nuts and blend one last time, add cardamom powder 
7. Grease hands with ghee, take some mixture, and shape ladoos.
8. Enjoy immediately or store the dry fruit ladoo in an airtight container
