you’ll want to add this to your menu for Sukkot or any time during this fall or winter. 
Sukkot Soup 
Ingredients
2 tablespoon canola oil
2 strips flanken
2 medium onions, diced
2 cloves garlic, minced
4 stalks celery, diced
2 large carrots, diced
2 medium zucchini, diced
2 can chickpeas, drained
11/2 pounds (24oz) frozen broccoli cuts
11/2 pounds (24oz) frozen cauliflower cuts
8 cups vegetable broth or water
1 Tablespoon kosher salt
freshly ground pepper
Instructions
Heat oil large soup pot over medium-high heat and oil. Sear flanken for about 5 minutes per side, 
or until the meat releases itself. Remove meat and set aside.
In the same pot, add onion and sauté till translucent. Add in garlic and sauté for 2 minutes.
Lower heat to medium-low, add celery, carrots, zucchini chickpeas, broccoli and cauliflower.
Place the meat back to the pot and the broth, salt, and pepper Stir and bring mixture to a boil

Reduce heat to low and simmer, covered, for 2 hour.
Remove meat and shred off the bones and return the meat to the pot.
Cook’s note: add broth or water till just below the top of the vegetables. Too much water will make the soup too thin

Get ready for a game-changing vegan challah recipe! I’m sharing the one I learned from Chef Andrea Bergquist-Zamir at Gracie Mansion during the challah bake with nycmayor. My team and I put it to the test on the set of my kosherdotcom show, using tuscaninifoods flour, and the result is incredible. I was skeptical about using applesauce instead of eggs, but it works beautifully! Just remember to keep an eye on the baking time. On a side note, I had to do three wardrobe changes while filming this recipe, as well as two other videos that day. Thanks to Doron for the fantastic filming and editing. #veganchallah #challah

MEA Plant-Based Rosh Hashanah Challah (Round & Sweet)
Ingredients:
4 cups all-purpose flour (485 g) (plus more for kneading)
2 ¼ tsp (10g) active dry yeast
¾ cup warm water (about 110°F / 43°C)
¼ cup pure maple syrup 
¼ cup canola oil 
1 tsp Kosher salt
¼ cup applesauce 
¼ cup raisins 
Glaze 
• Pure Maple syrup +Water
• Poppy seeds or sesame seeds if desired
 
Activate Yeast-In a small mixing bowl, combine- Warm water, Maple Syrup, Yeast. Let sit for 5–10 minutes until it’s foamy.
Make the Dough-Mix in a large bowl Applesauce, Canola Oil and Salt. Add the flour and the activated yeast mixture mix till shaggy dough forms.
Knead- Turn out onto a lightly floured surface and knead in raisins. Knead  8–10 minutes, until smooth. 
Place dough in a lightly oiled bowl, cover, and let rise in a warm place for 1–1.5 hours, or until doubled in size.
Shape the Challah
Place on a parchment-lined baking sheet. Cover and let rise again for 30–45 minutes.
Bake-Preheat oven to 350°F (175°C). Bake 30 min
Brush the dough with water/maple mixture for shine. Sprinkle with seeds 2025-10-03 20:31:02 .. 57 -80% 3 -81%

We had a step over in Paris 🇫🇷 for 2 days on our way to 🇮🇱 
We felt completely safe and enjoyed spending time with our friends and exploring the Jewish neighborhood and restaurants. Our tour was put together by Ruben Glaser of  parisandko he took care of the details so we could enjoy. Our first stop was at the dior museum which we loved seeing the beautiful dresses. For dinner we went to restaurant_lebazar which was so good it needed its own reel.

I might not be the best dancer 💃 but I’ve got a pretty good knack for cooking 🧑‍🍳 
While the world 🌎 is going crazy 🤪 around us I cranked up the music 🎶 and danced away while I cooked. 
I had a blast by myself in the kitchen cooking up a storm for the upcoming new year. The Jewish people aren’t going anywhere we are resilient we will survive just like we always have.  Meanwhile, here is an amazing recipe for roasted carrots from my cookbook that I am sharing.  I hope that you all have my Cookbook. You can get it on Amazon all your local Jewish books. I am sharing this from the book. 

Roasted Carrots Harissa Tahini Drizzle 🥕 
One of my favorite outings is going to the farmers markets to see all the different varieties of 
vegetables that aren’t available in the supermarket. When I saw carrots in a multicolored bunch, 
I bought them right away, knowing how beautiful my recipe will look. 

Pareve Yields 6 servings
Ingredients
1 teaspoon cumin
½ teaspoon cinnamon
½ teaspoon paprika
2 Tablespoon olive oil
1 teaspoon salt
1 pound fresh rainbow carrots, sliced in half
Harissa Dressing
4 Tablespoon tehina
1 Tablespoon harissa
1 Tablespoon silan
1 teaspoon kosher salt
2 Tablespoon water
1. Preheat oven to 400°F. Line 2 baking sheet with parchment paper; set aside. 
2. In a medium bowl, mix together oil, spices, and carrots; toss well to coat carrots.
3. Place carrots on prepared baking sheets. Roast for 20 minutes
4. Prepare the harissa dressing: In a small bowl, mix together all the dressing 
ingredients. 
5. Pour dressing over carrots right before serving.
Cook’s Tip: If you don’t have rainbow carrots, this recipe is still delicious with any carrot variety

Rosh Hashana. This recipe includes dates to make a sweet and delicious recipe for a sweet 
new year.
Sticky Date Chicken 🍗 
1 cup pitted dates, packed (of course I used beleavesgreenhouse ) 
1/2 cup boiling 💧 
2 lb boneless skinless chicken thigh, cut into bite size pieces 
2 tbsp cornstarch 
1 tbsp soy sauce
Date glaze
1/2 cup soy sauce lite
4 garlic frozen garlic cubes
2 tbsp silan
4 tbsp lemon juice 🍋 
2 tsp sesame oil 
½ teaspoon salt 🧂 
Instructions
Preheat the oven to 400° F.
Add the dates to a small pot and bring to the boil with lid on. After it hits boiling points shut 
off heat and let soak for 20 minutes with lid on. 
In a large bowl, toss chicken with cornstarch then add the 1 tbsp soy sauce and toss again 
until evenly coated.
Spread the chicken evenly on to a sheet pan and bake for 15-20 minutes or until golden 
brown and cooked through.
While the chicken is cooking put the dates in a food processor with the “S” blade, add soaked 
dates and soaking liquid, remaining soy sauce, garlic, honey, lemon juice and sesame oil. 
Blend until smooth, scraping down the sides as needed.
When finished baking, toss the chicken with the date glaze

Lamb stuffed dates 
Ingredients for dates
24 large, pitted dates, (I used 2 packages of beleavesgreenhouse brand)
1 pound ground lamb
1 small shallot, finally minced 
2 cloves garlic minced
2 tablespoons chopped parsley
1 ⁄2 teaspoon cumin
1 ⁄2 teaspoon allspice
1 ⁄4 teaspoon cinnamon
1 teaspoon kosher salt
1 ⁄8 teaspoon pepper
2 tablespoons pine nuts
Sauce:
1/3 cup pomegranate molasses
2 tablespoons of extra-virgin olive oil 
1 tablespoon silan 
1 tablespoon tomato paste 
1 teaspoon kosher salt 
Crush black pepper 
1 cups of water 
1 cup red wine 
Mix the ground lamb with all the ingredients
Gently fill the dates with the meat mixture. Set aside.
In a large wide saucepan, add sauce ingredients on a medium low heat until ingredients is 
dissolved. Add in stuffed dates and simmer on low, covered, for 45 minutes for an hour basting ½ way through.
Garnish with pomegranates and fresh parsley 
If you have left over lamb you can roll them into balls and cook them alongside the dates

My daughter, Eli eliseliyah2020 had a special request the day of her wedding 👰 Seeing  it’s not our family custom to fast, all she wanted was Sushi 🍣 and the place to get it from is sagasushipoke one of the best restaurants in Jerusalem. I had been there a few days before and we were blown away by their attention to detail. They even make their own sauces and they have the highest level of kashrut as they make their own seaweed as well under a special certification.
