25/024 Yama to Ki - Tokusei Shoyu Ramen

Ramen Yama to Ki (らぁめん山と樹) opened in 2017 and has since then basically in all kinds of top rankings, including the Tabelog hyakumeiten. It’s run by a lovely couple, very very friendly and open to chat. I noticed the three Ramen Beast stickers and after we started talking for a bit, they asked me to extend some greetings to Abram aka Ramen Beast.

Highlight for sure are the hand massaged noodles, made with their noodle machine right next to the entrance. The soup is a very very good example of high quality modern shoyu, chicken and kombu base, not too much complexity, rather letting the great ingredients and technique shine.

Yama to Ki offers shoyu, shio and miso, in tsukemen form as well. A perfect ramen shop to have in your neighborhood, as they serve a wide range of ramen styles. Another highlight of Yama to Ki is its rotating seasonal menu, featuring special dishes like bonito-stock ramen and dried sardine ramen. So you probably will never really get bored with their menu.

Lines don’t seem to be extreme, I went on a Sunday at like 2pm and only had 5-6 people in front of me, sat down after 20 minutes. Probably no line to worry about on a weekday.

The shop itself is easily accessible either via Koenji station or Higashi-Koenji station, via the Chuo line or the Marunouchi line, which means you can easily get there from almost anywhere in Tokyo.

25/023 Tonkotsu Aoto - Tokusei 

Tonkotsu Aoto was the TRY 24/25 ramen magazine tonkotsu newcomer of the year. And oh boy did they deserve this. Absolutely fantastic bowl of ramen. I would categorize it as refined iekei tonkotsu-shoyu, quite similar to Hiiki. I could not stop myself and finished all of the goddamn heavy soup without any regrets.
The noodles are probably the most un-iekei thing about this bowl, quite slippery and not the typical short noodles you know from regular local iekei slinger.
The chashu was an absolute banger as well, definitely worth going for the tokusei here. 

A bit of lore about the shop. This is the second location of “Patta Patta” which used to be Tsubasaya, no idea if there is direct lineage to Yoshimuraya though.
In any case, the owner decided to go his own way and became wildly successful. He crowdfunded the second store and hit the target in 23 hours, which should tell you something about the quality that’s being served here.

25/022 Menderu - Garlic Ramen Special

I had been eyeing going to Menderu for a while, but somehow never got around to it. When I saw their “garlic ramen” special bowl announced online, I knew it had to be now.
Getting an item called “garlic ramen” at a Jiro style shop is a daring thing to do. It’s essentially deep fried garlic plus the oil it was fried in, on top of a heavy bowl of tonkotsu which traditionally comes with a heaped tablespoon full of freshly minced garlic. Garlic galore. 🧄 🧄 
The fresh onion topping was also S tier and I wish more shops would offer it. 🧅 

Besides the super powerful garlic flavor, I really loved the noodles at Menderu. You can see the machine sitting in the middle of the restaurant with which the thick high hydration noodles are made.

Overall definitely in my top 10 Jiro style bowls I had so far and I will be back for their regular bowl one day.

25/021 Nagichan - Morisoba

If you check my post 25/017, you will see that I went back to Nagichan to also try their tsukemen version of their chan-kei style of ramen.
In a good way, this feels so much like salty msg-loaded meat water, that just hits the spot perfectly when you don’t want anything complex or elegant. Just “in your face” flavor. The noodles work really well with the soup and you get quite a lot of them. The chashu is another highlight, also very salty, almost too salty. 

I personally am a big fan of chan-kei style of ramen, as they really embody a simple and nostalgic style of ramen for me that had become a bit difficult to find in some locations.

25/ 020 Kozo Mataomaeka - Dorooma Ramen

Tonkotsu Gyokai Ramen Kozo Mata Omaeka (豚骨魚介ラーメン 小僧またおまえか。) is a tonkotsu niboshi ramen specialty shop in Japan‘s longest shopping street called Tenjinbashisuji in Osaka. This shopping street has an abundance of shops, cafes and restaurants, which include a number of ramen shops. Out of those, Kozo Mata Omaeka is probably the most recommended ramen shop.

This ramen shop offers a variety of tonkotsu-gyokai broth based ramen, ranging from light versions, all the way to super thick versions, which are so thick and cream that you can stick a spoon in the middle and it does not fall over. Tonkotsu-gyokai means that the broth consists of pork bone elements and seafood elements, which are mainly dried fish like sardines and bonito.
If you are a fan of tonkotsu-gyokai ramen, you will find something here.

Another highlight is the thick and curly noodles which came with the ultra rich and thick bowl of ramen I went for. They perfectly match the heaviness of the soup. To customize your bowl, this ramen shop has a variety of things on the counter, including niboshi-tenkasu, niboshi-vinegar and dried seafood powder. You can make your bowl as intense as you like with those additions and it helps keeping things fresh and interesting throughout your meal.

025/ 019 Awajishima Ramen Poplar - Awajishima Ramen

One of the more unique and out there bowls I have had in 2025 so far. Awajishima, near Kobe, is a wonderfully beautiful island which prides itself on having the most delicious onions in Japan. So it’s only natural that you would find an onion ramen spot on this island.

25/018 Tsukemen Shigeta - Tokusei Tsukemen

Shigeta is the highest rated ramen ramen shop in Kobe according to ramendb. It’s also the ramen shop that gave me the most miserable waiting experience ever. Temperature was around freezing, snow was falling and a biting wind was blowing. My feet and hands were almost frozen stiff as I had not prepared for a wait this long in temperatures that cold.
It’s hard to overstate how miserable this was. The line looked deceptively short, but it took quite a long time for each customer. Once inside, it became clear why. The noodles are insanely thick and due to that have a very long cooking time. But my god were they good. Some of the best tsukemen noodles out there, they can easily compete with the top shops in Tokyo.
The soup was very rich and clings well to the noodles. From the start, due to the extra niboshi power, it’s very seafood forward with a very noticeable yuzu twist from the added peel. “Lots of stuff going on” is a good way to describe the soup.

I can definitely see why this is one of the top shops in the area. Made some footage when I went, so a video is coming at some point. Stay tuned!

25/017 Nagichan - Toku Chukasoba
Chan-kei ramen is one of my more recent love affairs. All of the chan-kei shops have “chan” in their name and serve some variety of clear tonkotsu broth with light shoyu seasoning plus a healthy amount of msg to lift things into the stratosphere. The bowls are usually accompanied by a large amount of chashu and hard boiled eggs. Rice on the side is often free.
These days you can find chan-kei ramen all over Tokyo and in Kanagawa.
The one of this visit, Nagichan, can be found in Shinjuku, Gyotoku or Motosumiyoshi.
Extra points for posting bowls with the hard boiled eggs in r/ramen for the unfiltered rage they cause overtime there.

25/016 Hayashida - Tokusei Sumibiyaki Aji Niboshisoba

There isn’t much I can say about Hayashida that hasn’t been said many times before. It’s one of the few great shops that really has managed to copy and paste their concept and not lose quality on the way. Of course, you’re not making a mistake if you go to the main shop in Shinjuku. But I haven’t really felt any drop of quality at the other locations.
It’s also hard to go wrong with the tokusei option here, which gives you all of their great toppings.

I went for their charcoal grilled horse mackerel niboshi ramen, which brings a well balanced smokiness and niboshi flavor to the table, without overpowering. If you’re just dipping your feet into dried fish ramen, this might be a bowl for you, while niboshi heads might want to look elsewhere for more punch.
 
You can find Hayashida all over Tokyo and some places in Kanagawa these days. They are also part of the same company that runs for example Housenka and Suzuran, which are also worth checking out.

25/015 Hanamichian Kitasando - Spicy Miso Ramen

This shop and bowl really threw me for a loop with how good it was and how easily accessible it is.
Kitasando is just a short walk north of Harajuku, or you can directly go there via the Fukutoshin line from Shibuya or Shinjuku.

Their menu at Hanamichian is huge and you probably need a dozen visits to try everything. And then you would still have specials to try, which they regularly run.

The main draw is surely their miso ramen, either spicy or non-spicy. I went for their spicy bowl, which had good heat, but nothing overwhelming. Maybe a 5-6 out of 10 on the Nakamoto scale. As one would expect, a wok is involved in getting the soup ready, always fun to watch.

One of the highlights for me were the noodles, super thick and well matched to the rich and heavy soup. They almost felt more like tsukemen noodles, but somehow worked really well here and almost made me wish I had ordered extra noodles. 

Adding some garlic some time into the bowl really amped up the power of the bowl and made it perfect for me.

Lovely place and now an easy “spicy miso” recommendation, which I am often asked for.

The companies we talk about include “Gift Holdings” which runs this iekei ramen chain called “Machida Shoten”, among other brands.
As I have put a bit of money into their stock, I get shareholders privileges like a free bowl of ramen. So I went and actually got it and it came with a free bowl of chahan.

Not gonna lie, I do not recommend eating there to ramen heads. It’s just not comparable to all the shops that make their own stuff. Here, everything comes out of central factories. It’s not bad food, but there’s so much better iekei out there that you don’t really have to eat here. But I get the appeal, since they are often the only iekei around and specifically target areas which are missing this style.
If that was the only iekei at my station, they would probably see me a couple of times per year with a hangover.
With that said, the chahan was a soggy mess and nothing even worth my stomach space for free.

Mazesoba at Jazzy Beats

Probably overlooked by many, since the shoyu and shio are so famous and popular, I really liked this approach to mazesoba. With the iwanori, the fried gobo, green onion, red onion, there’s so much going on. It’s rich and flavorful, with every bite tasting a bit different. Definitely one of the better mazesoba I have had last year and an easy recommendation if you have had the shio and shoyu already at Jazzy Beats or Break Beats.

25/013 Sanratanmen at Niigata Sanpotei
If you have seen my personal top 10 list on my website, you might be aware of my love for Niigata Sanpotei.
They are kind of an outlier ramen shop, which only serves mabomen (mabotofu ramen) and sanratanmen (hot and sour soup style ramen).
Both are somewhere on the Japanese-Chinese food spectrum, but probably a bit closer to the Chinese side than most versions in Japan. Things can get quite spicy and numbing with the additions you can order and the stuff on the table, but that's what makes things fun.
It is hard for me to say which one is better, so just make sure you come here twice to get both of their main bowls. They do have other menu items and seasonal bowls, but to be honest, they fall far back behind their 2 main bowls.

25/012 Yokohama Iekei Osakiya - Tokusei Ramen

Osakiya is almost next to the Shin-Kawasaki and Kashimada stations.
Osakiya serves a very solid, above average iekei style tonkotsu shoyu ramen.
I found their relatively thin noodles interesting, or maybe I am just misremembering Sakai Seimen noodles. The chashu at Osakiya definitely is a highlight and I recommend getting extra.

As with all iekei ramen shops, you can adjust the noodle firmness, the amount of oil and saltiness to your liking. My personal call is “katame, koime, oome”, which means firm noodles, strongly seasoned and lots of chiyu chicken oil.

Although it’s not one of the absolute top shops for iekei, I can say it’s worth checking out if you’re trying to learn more about iekei and want an easily accessible shop in Kanagawa.

25/011 Ryojuan - Tonkotsudashi Base Chukasoba

Ryojuan (中華そば領寿庵) is a relatively new ramen shop near Hirama station of the Nambu line in Kanagawa.
What they serve can be described as a fusion between Okinawa soba and tonkotsu ramen.
I got the tonkotsu dashi base, very heavy and creamy tonkotsu with noticeable katsuo flavor. Overall very Okinawa soba風 but way way more impactful and rich than any Okinawa soba out there. The soki is great, chashu very good. Wish they had koregusu lol but benishoga, sesame, garlic and kombu vinegar was offered and worked well with the bowl. Noodles were very good too, temomi hand-massaged which I really like.
Ryojuan got 2 rank in the MIX category of the 24-25 TRY magazine, so yeah, it’s good.

25/010 Hiro Hashizume - Tantanmen, Sansho noodles
The whole shtick of Hiro Hashizume is that you can pick your own noodles out of a bunch of interesting choices, including yuzu noodles, burdock noodles or sancho noodles. The sancho numbing pepper is a natural choice for a combination with their tantanmen. 
I wish I could say that this was great, but somehow the bowl fell a bit flat for me this time, not enough spices, not enough impact, not rich enough. If you like a bit milder tantanmen, then this one could potentially be for you.
Being only a short walk from the station, it’s one of the ramen options around Hiroo, there isn’t all that much to choose from. My recommendation would be to rather go over to Ebisu and pick something from the more broad range of options there, if you’re craving ramen.

25/009 Tanaka Shoten - Negichashumen
Finally re-visited the best Hakata/Nagahama style tonkotsu ramen spot in Tokyo.
As good as it always has been. Nr.1 address for Hakata/Nagahama tonkotsu in Tokyo, and easily can compete with whatever Kyushu has to offer.
My last visit was in 2019, so I had almost forgotten why I loved this shop so much. 
Essentially it’s the full pork flavor forward soup, not over the top creaminess and a good amount of funk, way more funk than I remembered.
Must visit for everyone, even though it’s so out there in terms of location.

25/008 Negiramen at Paimen
Paimen serves iekei-ish tonkotsu-shoyu with a relatively high gelatin content, which gives it a distinct smooth and lip smacking soup consistency. Another highlight is their pork belly kakuni topping, a super tender big piece of pork, probably boiled in seasoning for quite a while.
It’s not the best tonkotsu-shoyu shop out there, but somehow I get drawn to it when I have a hangover. Then it’s one of the saving moves of the day. But so would probably be any other heavy and salty tonkotsu.
As I’ve been here quite a few times, I finally went for their negi ramen, which adds quite a bit of freshness and crisp to the bowl. Maybe my new favorite way of eating at Paimen. 
But to be clear, unless you’re in the area and really really crave a tonkotsu-shoyu, there’s no need to go there to try it. Better shops not far available.

25/007 Gamushara Hatagaya Honten - Seabura Shoga Tamago Ramen

Gamushara is a household name in the ramen scene and it stands for lots of ginger in impactful shoyu ramen. This style of ramen originated from Niigata prefecture, more precisely Nagaoka city, where it warms the hearts and spirits of people during the cold months along the Sea of Japan. This is why ginger shoyu ramen is often called Nagaoka style ramen.

Gamushara has multiple ramen shops all over Tokyo, all with their own specialty and focus, but all are consistent with the ginger shoyu ramen theme. The main store is in Hatagaya, where you can find their classic dark Niigata style ginger shoyu ramen. The Hatsudai shop focuses more on pork back fat and niboshi, but of course combined with ginger shoyu ramen. The Yotsuya Gamushara has fried rice and curry rice additionally on the menu, which they like to combine into ramen sets. In the past there have been a few more shops, for example a miso focused shop, which have closed by now.

Another point of Nagaoka style ramen, as you can see from the first picture, is the copious amount of seabura pork back fat that is used. I ordered extra, but even the regular bowl comes with a good amount of buttery creamy globs of pork fat.

25/006 Mokou Tanmen Nakamoto Hashimoto - Tojimiso Gentei

Bowl number three on that day with ramenguidejapan, after taking a bit of a breather, we decided to check out the local Nakamoto at Hashimoto station, as Cody found some interesting specials offered. He went for something that can be described as liquid razor blades. I got this basically non-spicy bowl, which was nonetheless super interesting. In essence it was a super thick white miso ramen with Chinkiang vinegar, which honestly worked super well together and was kind of addictive. If you’re playing around with miso ramen at home, maybe try a drizzle of Chinkiang vinegar, it definitely worked very well here!
Maybe the first and only good non-spicy bowl you will find at Nakamoto.
