🌮 Happy National Taco Day!

We didn’t eat a lot of beef growing up, but when we did, it was usually ground beef because it was the most affordable option. My grandma would make carne molida tacos at least once a week.

She’d send me to the store for potatoes, saying “para que rinda,” which meant “to make it stretch.” She’d boil the potatoes, mash them with the beef, and fry corn tortillas until they were perfectly crispy. Then came the best part, stuffing them with picadillo, adding lettuce, tomatoes, cheese, and salsa.

Sounds delicious, right? They are, but as a kid, I got tired of them. 😅

I’ll never forget the day I wasn’t allowed to leave the table until I finished three tacos. Once my grandma left the kitchen, I secretly wrapped them in a napkin and buried them deep in the trash. 😂 I’m pretty sure she knew, but decided I’d learned my lesson.

Now those same crispy tacos are my favorite comfort food, nostalgic, simple, and full of love. 💛

Blake was just 2 years old when I started Muy Bueno, and he’s been my biggest cheerleader ever since. 🌶🔥 Hatch vs. Pueblo — which team are you on?

I grew up in El Paso eating Hatch chile from New Mexico (so I’ll always have love for it), but living in Colorado has me hooked on Pueblo chile too. Meaty, smoky, and full of flavor, it deserves just as much recognition!

👉 Fun fact: depending on the climate during the growing season, Pueblo chile can actually be spicier than Hatch — and vice versa. Drier years usually bring more heat, while extra rain tends to mellow things out.

Charcuterie boards, churros, and champagne… oh my! 🥂✨ Paris was the ultimate foodie adventure to celebrate Maya’s 23rd. We tried it all—Italian & Japanese fusion at riviera_fuga, ceviche, beef tartare, French onion soup, and ratatouille at les_antiquaires_paris, and escargot on a dinner cruise. Dreamy picnic setup by myparistay 🧺. And of  course there were plenty of croissants too. 🥐

It’s officially peach season 🍑 and I can’t help but think of my grandma’s kitchen. The smell of peaches simmering with cinnamon and cloves, the sound of her wooden rolling pin hitting the counter… those memories are baked into every empanada I make.
