Perfect for tiffin / while travelling✨

A great Weight-loss recipe, this is exactly how my mother brought my brother & me to eat healthy sprouts when we were younger. 

Ingredients:
• Sprouted Matki 
• Mustard & cumin seeds
• Hing
• Masalas: turmeric, red chilli, coriander seed, sugar, salt

Method: 
• In a pan make a tempering of mustard & cumin seeds, add hing and sprouted Matki to it. 
• Next add in all the Masalas, some water, cover and cook for 10 mins. 
• Dry out the water to crisp up the Matki. Done! 

* You may use sprouted mung, masoor of even chana for this recipe. 
* Add some chopped onion, curry leaves in the tempering for additional flavour. 
* Use lesser oil and skip sugar if required

Fibre packed Amranth stir-fry✨

This Marathi quintessential is one of my favourites and tastes great with Jowar Bhakri, veggie stir-fries and much more..

Recipe: 
🌱 Clean & pick out the Amranth leaves & small stems. Wash & set aside.
🌱 In a pan temper, little oil, smashed garlic, some onion, green chillies and finally add in the Amranth leaves.
🌱 Sauté for 3-4 min and next add in some fresh grated coconut for good fats, followed by peanut powder (optional), salt & little red chilli powder. Done!!

10 minute Spicy, sweet, tangy Noodles✨

Ingredients: 
• 1/2 cup prawns (proteins/veggies of choice)
• Boiled noodles
• 1 tsp chopped garlic
• 1 tsp chilli oil
• 2 tsp schezwan sauce (optional)
• 1 tsp soy sauce
• 1 tsp lemon juice
• 1/2 tsp sugar 
• Salt & pepper

Method: 
• Marinate your protein (skip for veggies) with salt pepper & lemon juice. 
• Pour some oil in a pan and sauté garlic, chilli oil, protein, schezwan sauce, salt & pepper.
• Once your protein is cooked, add soy sauce, lemon juice, sugar.
• Finally add the cooked noodles and give everything a mix. Done!!

Veggie options: Sweet corn, baby corn, spinach leaves, onion, carrot, bell peppers, mushrooms, etc.

Cooking time for proteins:
• Prawns - 2 min on both sides
• Chicken - 5 min (1 inch pieces)
• Paneer - sear till crispy 
• Tofu - sear till crispy
