Experience Tokyo through its most legendary unagi restaurants.

Beloved since Edo times, unagi, freshwater eel, is celebrated for its rich flavour and the skill it takes to prepare. Its preparation is an art: grilled over charcoal, glazed with tare sauce, and perfected over years of practice.

In the Edo style, chefs cut the eel along the back, steam it for a soft, fluffy texture, then grill it carefully, adjusting the flames to bring out layers of flavour.

Tokyo’s unagi scene is as diverse as it is delicious, from historic restaurants preserving centuries old methods to innovative kitchens reimagining tradition.

Among them, the fifth generation of Nodaiwa Azabu Iikura Honten was recently awarded the Mentor Chef Award in the MICHELIN Guide Tokyo 2026, honoring generations of craftsmanship.
