Serves 4–6

RECIPE 

For the “Dare” Blondie base:
125g plain flour
1 tsp baking powder
1/4 tsp salt
120g unsalted butter 
200g light brown sugar
2 medium eggs
1 tsp pure vanilla extract
2 Dare bars, roughly chopped 

For the cheesecake topping: 
330g full-fat cream cheese, softened
60g soured cream 
60g caster sugar
2 medium eggs
1 tsp pure vanilla extract
1 Dare Dark Chocolate Coated Wafer bar, sliced into 9 or 16 equal squares

Every few weeks I turn my kitchen into a micro “Kıbrıslı fırın” (Cypriot bakery) and have a homemade bread freezer re-stock. Here I’m using my one Cypriot tea infused bread recipe (I’ve tripled the quantities for the amount of bread I made in the video) to create four different types of Cypriot loaves. The bread dough ingredients are listed below, but the FULL method, details and recipe is on my blog. Please make it.

It’s so fun and easy to use (my kids love it) and clean, and has 5 pre sets: Slush, Frozen Cocktail, Frappé, Milkshake & Frozen Juice! I’m using the Slush preset for this recipe, and there’s no guesswork, as there’s a brilliant instruction manual included!

Makes around 6 x 250ml slushies

3 heaped tbsp instant coffee granules
200ml boiling hot water
90g caster sugar 
25ml honey 
600ml ice cold water 
200ml ice cold milk 

For topping:

Vanilla ice cream 
Tahini (stir well before drizzling) 
Carob molasses (stir well before drizzling) 
Honey mixed with a little ground cinnamon 
Crushed pistachios 
Crushed walnuts 

Method: 

Whisk together the coffee granules and boiling hot water. Whisk in the sugar and honey until dissolved. Pour in the cold water and milk and stir well. Pour the cold liquid into the Ninja SLUSHi machine and let it do its thing! The liquid will slush up in as little as 30 minutes and keep churning at the same temperature for up to 12 hours! 

Dip the rim of your glasses into the cinnamon honey then the crush pistachios and pour the slushies straight from the machine into the glasses. 

Top the Slushies with a dollop of vanilla ice cream, and drizzle with tahini, carob molasses, more cinnamon honey and sprinkle over crushed walnuts and pistachios to serve. Please make it!

Terbiyeli Tavuk Haşlama (Creamy Chicken & Vegetable Stew). Meliz’s Skin-on Roast Potatoes: Roast potatoes are 100% my ultimate weakness. I could have them every day of the week. Method continued  in caption, full recipe on my blog 🥔 Please make it.

Serves 4-6. 
Prep: 20 minutes
Cook: 1½ hours

6 tbsp light olive oil
2kg (4lbs 8oz) Maris Piper
or King Edward potatoes, unpeeled
2 tbsp cornflour
12 garlic cloves, left whole and unpeeled
1 tsp sea salt flakes
A few sprigs of fresh rosemary / thyme 

Preheat the oven to 220°C/200°C fan/425°F/gas mark 7. Add the olive oil to a large, shallow roasting tray.

Wash the potatoes, then halve and quarter them into 4–5cm (1½–2in) chunks. Place into a large pan, wash with cold water, drain, then fill up the pan with cold water so the potatoes are fully immersed. Add a good pinch of salt. Place the pan on the hob over a medium-high heat, bring up to the boil and simmer for 8 minutes. Once the potatoes are on the hob, pop the roasting tray on the middle rack of the oven for 20 minutes until the oil is smoking.

After 8 minutes, drain the potatoes in a colander, ensuring that there is no water left in the pan at all, then place the potatoes back in the dry pan, sprinkle over the cornflour, pop the lid on the pan and give it all a good shake. Check to see that the potatoes are fluffy and fully coated in the cornflour, then pop the lid back on the pan for another 5 minutes. While you wait, gently bash
the garlic cloves with a rolling pin just so they slightly crack but aren’t fully crushed, and the skins open a little.

Caramelised Apple, Potato & Sausage One Tray Bake. You voted (on my stories), I cooked it - it was a clear winner. One from the Meliz Cooks archives. Please make it! 

INGREDIENTS
Serves 4-6

3 large pink lady apples, cored and cut into wedges 
750g baking potatoes cut into thick wedges 
2 onions, peeled and thickly sliced 
3 tbsp olive oil 
Pinch of sea salt flakes and coarse black pepper 
3 tbsp honey 
2 tbsp balsamic vinegar 
1 tbsp pomegranate molasses
1 tsp wholegrain mustard
10-12 small, good quality sausages of your choice (I’m using spicy lamb Merguez style sausages in the video)
Few sprigs thyme & rosemary 
2 tsp cornflour blended with a little cold water 
400ml hot beef stock 
METHOD

Preheat oven to 190C fan. Put apples, potatoes and onions in large roasting tray, and drizzle over 1 tbsp olive oil and a pinch of salt black pepper, and stir gently (sausages are salty and will release oil when cooking so I don’t add much salt / oil). Place on the bottom shelf of the oven for 20 mins. 

Meanwhile, in a bowl, mix together the remaining olive oil with the honey balsamic vinegar, pomegranate molasses and mustard and leave to one side. 

After 20 mins, take out tray, add the glaze to the apples and onions, gently stir, nestle the sausages, thyme and rosemary in the tray, gently coating them in the glaze. 

Pop tray back in oven for another 20 mins, turning sausages and potatoes halfway through. Add the blended cornflour to the hot stock. After 20 mins, add stock mix to the tray (turning sausages again if necessary) and cook on middle shelf for another 7-10 mins until the stock bubbles and thickens. Serve with vegetables of your choice. A little extra gravy never goes amiss so you could always make up a little extra stock and cornflour mix to deglaze the tray before serving.

No-Mayo Potato Salad. One from the archives because I’m about to prep a batch for lunch and dinner. Come back tomorrow to see what I do with the extra batch of that creamy sauce…

Serves 6 

Ingredients 

1kg waxy salad potatoes such as Charlotte / Jersey Royal potatoes (you could leave the skins on for the Jersey Rotals, but cut them in half once cooked so some of the flesh is coated in that delicious creamy sauce) 
75g thick strained natural yogurt 
2 tbsp extra virgin olive oil 
3 tbsp good quality tahini 
3tbsp fresh lemon juice
1 tsp freshly grated garlic 
2 tsp Dijon mustard 
1 tbsp runny honey (or agave syrup)
1 tsp white wine vinegar 
1 tsp sea salt flakes
1/2 tsp coarse black pepper 
1 large / 2 medium sized spring onions (scallions), very finely sliced 
10g fresh dill, finely chopped
2 tbsp capers, roughly chopped 
1 tsp dried mint 
1 tbsp toasted sesame seeds 
4-5 large cos / romaine lettuce leaves, roughly chopped 

Method: 

Add the potatoes to a pan of cold water, pop on the hob, bring up the boil and simmer for 15-20 mins (depending on the size of the potatoes) until just tender, drain, and place them in a pan covered with cold water for a few minutes until cooled fully before peeling. 

Add the yoghurt, extra virgin olive oil, tahini, lemon juice, garlic, Dijon mustard, white wine vinegar, salt and black pepper to a large bowl and whisk until creamy (it will look like it’s curdled at first, but don’t worry, keep going!)

Add the peeled and cooled potatoes to the creamy sauce along with the spring onions, dill, dried mint and sesame seeds and stir gently but well so that the potatoes are fully coated in the creamy sauce. Add the lettuce, stir again and serve with smoked or baked fish, eggs, or even crispy chicken. So good. 

To make it plant based: use plant based yoghurt and agave syrup (in place of the honey).

15g (½oz) unsalted butter

30g (1oz) fresh flat leaf parsley, roughly chopped
500g (1lb 2oz) chicken thigh fillets, skinless and boneless, cut into bite-sized chunks

30g (1oz) unsalted butter, melted
1 tsp olive oil

For the garlic yoghurt:
150g (5½oz) natural yoghurt (it doesn’t have to be thick-set as it will be poured over)
1 tsp finely grated or crushed garlic
A pinch of sea salt flakes, or to taste

For the chilli butter:
50g (1¾oz) unsalted butter
2 tbsp olive oil
1 tsp tatli biber salçası (Turkish sweet (mild) red pepper paste)
1 tsp pul biber (Aleppo pepper/Turkish red pepper flakes)
½ tsp dried mint

To garnish:
1/4 tsp sumac

Ok, let me show you how I turn my vegetables into THE main event 💜❤️🧡💛💚🤎 Flavoursome, fried and crispy vegetables are known as “Sebze Kızartması” or simply “Kızartma”. Kızartma means ‘to fry’ or ‘frying’, but since these vegetables are oven baked, the crispy texture is achieved with a spicy cornflour coating. The vegetables are elevated with the chilled yoghurt and an utterly delicious sweet, tangy and garlicky pomegranate molasses garlic sauce, and I promise you that this dish will convert anyone with a vegetable aversion to fall in love with everything on this platter. 6 tbsp olive oil
4 tbsp cornflour

2 tsp garlic granules

2 medium aubergines, cut into 3 x 6cm (1¼ x 2½in) batons
2 onions, peeled and cut into 4 wedges (the root still intact to hold the layers together)

2 large courgettes, cut into 3 x 6cm (1¼ x 2½in) batons
2 kapya biber (capia peppers), red romano or small red bell peppers, halved, deseeded

Macaroni Chesse, Cavolo Nero & Roasted Cabbage Bake 🫕🧀🥬🌿

INGREDIENTS: 
3 tbsp olive oil 
1 1/2 tsp sea salt flakes 
1 large sweetheart cabbage, cut into four equal wedges 
200 g Cavalo Nero (stalks removed but retained and finally chopped) 
1 large onion peeled and finely chopped 
75 g butter 
75 g plain flour 
1.1 L hot milk (whole milk best, semi-skimmed if you prefer)
150 g macaroni 
Tbsp Dijon mustard 
1 garlic clove finely grated 
125g mature cheddar or Gruyère, coarsely grated
50 g Parmesan, finely grated 
1/2 teaspoon coarse black pepper 
Few sprigs of time, leaves only 
1 tbsp toasted sesame seeds

METHOD: Preheat oven to 200°C fan / 220°c conventional.

Drizzle a stove top and oven proof casserole dish with 1 tbsp olive oil and drizzle the remaining olive oil and half of the sea salt flakes all over the cabbage wedges. Rub well, place the cabbage wedges into the casserole dish and bake in your preheated oven for 25 to 30 minutes, or until charred all over, giving them a quick turn after 20 minutes. Place a separate pan with boiling salted hot water on the stove.

Remove the cabbage from the dish and place them on a plate. Leave to one side. 

Using oven, carefully gloves pop the casserole dish on the stove and melt the butter over a low heat. Once melted, add the finally chopped cahili nero stalks and onion to the pan along with the remaining salt. Soften over a low heat for 8 to 10 minutes then add the flour to the pan, stir well and cook down for a minute or two. Slowly start whisking the hot milk into the softened vegetables and flour and keep whisking until it just starts to bubble and thicken. Take it off the heat, stir in the garlic and Dijon mustard.

I can’t tell you how many times I turn to my Whipped Tahini, Spiced Butter & Boiled Egg Salad from Dinner Tonight for a quick five minute breakfast, lunch or dinner fix. 

I’m not a huge fan of “çılbır” - sorry, but the poached egg and yoghurt combo just doesn’t do it for me. However, give me a perfectly boiled jammy egg on top of creamy, tangy tahini, drizzled with a spiced pul biber butter, contrasted by the crunch of toasted sesame seeds and a fresh, chunky salad, and I’m all yours. In fact, give me a slice of toasted bread to dip into it with, and I’m a friend for life. Try this one and I promise you’ll be like, ‘çılbır, who?!’

HELLİMLİ SİGARA BÖREĞİ (Hellim-Filled Cigar Shaped Filo Rolls). 

We didn’t grow up eating these at home, as my mum would always make the Cypriot-style rectangular fried börek (fried and baked pastries) with her homemade yufka (pastry) instead. However, we did grow up eating Sigara Böregi every time we were served hot meze at a restaurant in Kıbrıs or at weddings / balos (dinner and dances). They are called Sigara Böregi because of their shape. Filled with a herby cheese filling that becomes deliciously oozy once fried, they must be eaten hot. So hot, in fact, that due to my impatience, I can rarely feel the roof of my mouth after eating them. They can be made with hellim (halloumi) or beyaz peynir (white cheese such as Turkish “Lor Peyniri” or Cypriot “Nor” (anari)), similar to feta, but I make mine using a combination of grated, fluffy “hellim” and tangy, crumbly “beyaz peynir” or “nor”. Full recipe in Meliz’s Kitchen and method also continued and pinned in comments. 

INGREDIENTS
Makes 14
1 large egg
100 g (3½ oz) beyaz peynir (Turkish white cheese) or feta
250 g (9 oz) hellim (halloumi), finely grated
25 g (1 oz) fresh flat leaf parsley leaves (stalks removed), finely chopped
10 g (¼ oz) fresh mint leaves (stalks removed), finely chopped
½ tsp dried mint
½ tsp pul biber
14 triangular-shaped sheets of “üçgen yufka” filo pastry
500 ml (18 fl oz) rice bran / light olive / cold-pressed rapeseed / sunflower/ vegetable oil, for frying

***Note
If you can’t find triangular üggen yufka pastry, then you can use regular filo sheets cut into triangles. However, please note that these filo sheets are a lot thinner, so the texture of the cigars will differ.

* 1 bulb/s garlic bulb, cloves roughly chopped
* 2  unwaxed lemons, zest of both, juice of 1, 1 cut into 6 wedges

* 8  chicken thighs (skin on, bone in)

* 500ml fresh chicken stock (or 1 stock cube dissolved in 500ml boiling water)
* 250g easy cook long grain white rice, washed and drained
* 400g can Chickpeas, drained and rinsed (approx 200-240g drained weight)

Honey Caramelised Figs with Oven-Baked Rice Pudding - “Ballı İncirli Fırında Sütlaç”. This “Fırında Sütlaç” is a slightly more indulgent version of the stove-top “sütlaç” my mum would make us for breakfast when we were kids. We love our “Fırında Sütlaç” warm, fresh out of the oven but rested for 30 minutes (not to burn the roof of your mouth!) so the cream still retains that luxurious consistency and the scent of cinnamon and rose water continues to subtly drift through the kitchen. The main recipe is perfect but I’ve given you a couple of suggestions below if you prefer a looser consistency to the cream / lightly more cream to rice ratio. We all have different preferences in our household, but the sutlac I grew up with was always a little looser in consistency. 70g short grain pudding rice (use 65g of rice if you want more cream to rice ratio) 
30g cornflour (use 25g cornflour if you prefer a looser consistency to the cream)

4  large figs, cut into quarters

ETLİ GÜVEÇ (LAYERED ONE-POT SLOW-COOKED BEEF & VEGETABLES): Ok, what are you having for dinner tonight, because you know as soon as my big casserole dish comes out, there’s some serious one pot delicious goodness coming your way. Think of this as the lazier, easier (if that’s even possible) sister version of Yanyana Tavası. 

The concept of Tava is very similar to Güveç, the only difference being that the latter is layered into a deep clay pot, weighted down, with the meat at the bottom, rather than spread out into a large round metal baking tray. It’s the perfect dish for long, lazy weekends due to the slow-cooking methods, but it makes a good, hearty midweek meal too. Recipe is on my blog (link in bio - it’s quite an old one, so search for “ETLI GÜVEÇ (LAYERED ONE-POT SLOW-COOKED BEEF & VEGETABLES)) and also in my first book, Meliz’s Kitchen. For this recipe I use braising beef, but you could also use the more traditional lamb, or chicken. Please make it. 

Serves 4-6

2 tbsp tomato purée
2 tbsp Turkish sweet red pepper paste (tatlı biber salçası) + 100ml boiling water 
400ml chicken / beef stock 
4 tbsp extra virgin olive oil
800 g (1 lb 9 oz) beef braising steak, diced
2 large red onions (300 g/10½ oz), thinly sliced
8 garlic cloves, peeled and bashed
2 bay leaves
1 1/2 tsp sea salt flakes
¾ tsp coarse black pepper
2 kapya biber / tomato / small red bell peppers
2 large long green mild (carliston) pepper / 2 small green bell peppers, cored, deseeded and cut into 2-3cm pieces 
750 g (1 lb 10 oz) Cyprus or Maris Piper potatoes, peeled, cut into 3cm chunks 
3 slices of fresh lemon
½ tsp dried mint
1 tsp dried oregano
4 tomatoes, halved and sliced

Oven-baked Tavuk Şiş (chicken shish kebabs). Turn the oven (or airfryer) on instead of the mangal, and you won’t be disappointed. 

Ingredients 
SERVES 4-6 (the leftovers are delicious cold the next day, and great for prep ahead lunches for the week) 

2tbsp Turkish Sweet Red Pepper Paste
3 tbsp thick natural yoghurt 
4 garlic cloves, finely grated
2 tsp pul biber
2 tsp paprika
3/4 tsp ground black pepper
1 tsp dried mint
2 tbsp olive oil 
6 large chicken breasts (approx 1.2kg) cut into equal 4cm chunks
1 1/2 tsp sea salt flakes
6 large wooden skewers 

Mix together everything other than the chicken and the salt until you get a lovely thick marinade. Add the chicken to the marinade stir really well cover tightly and refrigerate for at least an hour four hours if you can and preferably overnight for 12 hours for maximum flavour. Soak your wooden skewers in hot water for at least 30 minutes to prevent them from burning whilst cooking. Stir most of the salt through the marinated chicken then skewer the chicken onto the six wooden skewers. Season with the remaining salt and cook as per the instructions below until tender and juicy. 

Oven: Preheat oven to 200c fan / 220c. Place the tavuk şiş (chicken skewers) on a shallow baking tray lined with baking paper and bake on the top rack of the oven for 15-20 minutes, turning half way through, or until the internal temperate of the chicken is at least 75c.

Airfryer: Preheat airfryer to 200c. Place the tavuk şiş (chicken skewers) in the airfryer basket and cook for 12-15 minutes, turning half way through, or until the internal temperate of the chicken is at least 75c. 

Serve immediately so the tavuk şiş are hot, juicy and tender, or allow to cool, then cover and refrigerate for up to 3 days for prep ahead meals during the week.

While rushing to get ready for school in the mornings, my mum would always place a hot, freshly toasted Kıbrıs pidesi (Cypriot pitta bread) wrapped in kitchen paper in my hands; the inside of the pide pocket would be dripping with melted butterand loaded with thickly cut slices of uncooked hellim (halloumi) and tomato. This breakfast would be my fuel to start the morning, alongside a hot cup of black tea infused with cinnamon bark, cloves and aniseed. Those sweet Cypriot smells still evoke memories of the speedy midweek breakfasts of my childhood, as much as the slightly more extravagant spreads that we would all share as family on Sunday mornings.
