Listen, do I need a reason to make some fried dough filled with cheese? 🙂‍↔️

Recipe 👇🏻 
3 cups all purpose flour
1tbsp salt
1 cup warm water
1tbsp oil
1tbsp vinegar
oil for frying
250g low moisture mozzarella

Instructions:
Make the dough by combining the flour and salt, then making a well and adding the liquids and kneading for 5 minutes. Let it rest for 30 minutes and divide into 8/10 pieces.

Roll each piece out thin and add the cubed mozzarella in the middle. Fold over itself and seal with a fork. Fry for 3 minutes and remove excess oil with paper towels, enjoy 😮‍💨

UOVA IN PURGATORIO 🍳🥫🇮🇹 - the Italian shakshouka?

Recipe 👇🏻 
Ingredients:
3-4 eggs
1 can whole peeled tomatoes
2 small red onions
1 garlic clove
A few basil leaves to taste
Olive oil
Salt and pepper

Instructions:
Chop the onion finely and peel the garlic. Place those in a pan with some olive oil on medium heat for 3-4 minutes. In that time, squeeze the whole peeled tomatoes with your hands into a bowl and add the basil. Mix and add to the pan, alongside salt and pepper, and cook for 20 minutes on low heat with the lid on. Finally, make small wells and add in the eggs to the pan, cooking covered for an additional 3-4 minutes (so the yolks stay liquidy). Buon appetito 🙂‍↔️

EGGPLANT KATSU CURRY 🍆🇯🇵

There’s something about fried eggplant that just makes it one of the best foods there are and you can’t change my mind 

Recipe 👇🏻 
1 yellow onion
2 small potatoes
2 small carrots
Japanese curry blocks (4)
1 eggplant sliced into rounds
2 eggs
2tbsp flour
Salt and pepper
Panko breadcrumbs 
Oil to fry
Japanese short grain rice

Instructions:
Cut the onion, potato and carrot into cubes. Place the onion in a pot with a dash of oil and cook for 3-4 minutes. Now add the potatoes and carrots and cover with water. Boil for 20 minutes. Finally, add the curry blocks and stir until fully dissolved - let it cool down slightly as it thickens off the heat after 5 minutes of simmering.

Slice and salt the eggplant over some paper towels. Prepare the wet batter by combining the eggs with the flour and pepper - the dry batter is only the panko. Heat up the oil for frying and once it reaches 180°C go in with the eggplant (which you’ve previously passed in the wet batter first and the breadcrumbs later). Serve the dish with the cooked rice and some green onion for garnish 🙂‍↔️

THE ONLY PIZZA RECIPE YOU NEED 🍕😋🥫

Growing up I used to (almost) always have homemade pizza on Sunday nights. I’ve now tried to keep that tradition alive and by doing that I’ve come up with a foolproof recipe that works with any oven and doesn’t need anything but a bowl (and my hands) - so it’s time to let you in on the secret 🙂‍↔️

Recipe 👇🏻 (makes 3 pizzas)
500g flour (try using a flour with at least 11% protein)
320ml water (lukewarm)
13g salt
7g dry yeast
3-4tbsp of extra virgin olive oil

Instructions:
In a small bowl add the lukewarm water and the yeast and mix well. Let the yeast bloom for 10 minutes to check that it’s still alive and kicking. In a bigger bowl mix the flour and salt, make a well in the centre and add the water/yeast mixture. Stir together with a wooden spoon until it starts to come together, then add the olive oil and work the dough with your hands - in the video I say “knead twice” and what I mean is this will take about 5 minutes of kneading to get a shaggy dough, you then want to let it rest for about 10 minutes and give it a second knead for a couple of minutes to get a smooth dough. Let it rise overnight in the fridge OR already divide it into separate ~270g balls and let them rise 3-4 hours at room temperature.

(If you let the dough rise in the fridge, divide it into balls once risen and let the balls come to room temperature for a couple of hours before shaping)

At this point turn the oven on to the max (mine went up to 275°C but do go as high as you can) making sure to leave the tray in to heat up.

Onto a work surface add a fistful of semolina and gently place the round dough on top. Work with your fingers at first and then your hands to shape your pizza. Move the dough onto parchment paper (if you have a pizza peel you can skip this step, but if you have a pizza peel then you probably don’t need this recipe 😂)

Finally garnish your pizza with tomato sauce, low moisture mozzarella and whatever toppings you’d like. Transfer the parchment paper onto the HOT tray and bake until the mozzarella and the sides are starting to turn deep brown (I’d say 7-12 minutes, mine took about 10). Buon appetito 😋

HOMEMADE CHILI CRISP 🌶️🫙❤️‍🔥

I don’t know what it is but I find the store bought version a little too much - and also, what’s better than making a homemade version?

Recipe 👇🏻 
500ml sunflower seed oil
A bunch of coriander
1 shallot
1 green onion
1 inch ginger 
2tbsp chili flakes
2tbsp chili powder
A pinch of salt and sugar
1tsp sesame seeds
5 star anise
2tsp sichuan peppercorns
3 bay leaves
1tbsp crushed nuts (I used a blend of peanuts, almonds, cashews and peanuts)

Instructions:
Roughly chop the shallot, ginger, green onion and coriander and place them in a pot with the oil on low heat. Bring to a simmer and add the spices (not the chilies). Once it’s all crunchy, remove from the heat and immediately pour into the jar.

As you wait for the vegetables to turn crispy, prepare a heatproof jar with the chilies, sesame seeds, sugar and salt. Once the oil is ready ladle it in until ¾ full. Finally add the nuts and mix well. Enjoy! 🙂‍↔️

Today’s aperitivo: negroni sbagliato and the perfect bruschetta with hexclad_europe 🍹🍅

Recipe 👇🏻 
For the bruschetta
150g Cherry tomatoes and a vine tomato
Salt & pepper
4-5 basil leaves
1tbsp olive oil 
Rustic bread

For the negroni sbagliato
⅓ red vermouth
⅓ Campari
⅓ Prosecco (brut)
A thin orange slice or peel

Instructions:
Thinly chop the tomatoes and place them in a hexclad_europe bowl. Season with the chopped basil leaves, salt, pepper and olive oil. Let this rest for 30 minutes in the bowl, which you can close with its airtight lid to allow the flavours to get to know each other super well. In the meantime, slice the bread 1/1.5cm thick and place it in a hot pan with olive oil to get crispy on both sides (3-4 minutes per side). (The heat retention of the hexclad_europe pans is incredible to get the perfect crispiness 😍) Rub a garlic clove on the bread before adding the tomatoes and serving with the negroni sbagliato 🙂‍↔️

SHIRO WOT 🇪🇹

I’ve honestly lost count of how many sauces I’ve made in this series, I think we might be close to 100 countries. This one is usually eaten with injera, a fermented flatbread popular in Ethiopia and Eritrea (which I can’t wait to attempt to make) 🫓

Recipe 👇🏻 
Ingredients:
For the niter kibbeh (spiced clarified butter)
250g butter
3 garlic cloves
1 inch ginger
3 black cardamom pods
3 cloves
1tbsp fenugreek seeds
½ tbsp cumin seeds
½ tsp turmeric, coriander, nutmeg and cinnamon

For the rest
2 yellow onions
3 garlic cloves
1 Roma tomato
4tbsp berbere spice
¼ cup neutral oil
1 cup chickpea flour
1 cup water
Salt to taste
1tsp garlic powder

Instructions:
Make the spiced clarified butter by firstly toasting the spices and combining them with the chopped garlic and ginger and butter. Melt it over low heat and let it all infuse for an hour. Filter it and let it solidify in the fridge (use a cheesecloth as well as a sieve, I only had the sieve so I had some residue).

With a food processor, make a paste out of the onions. Place them in a pot with nothing on medium heat and cook for 3-4 minutes. In the meantime make a paste out of the tomato and garlic. Add oil and berbere to the onions and let them infuse for 2 minutes before going in with the tomato/garlic. Cook for another 5 minutes before adding the chickpea flour (half of it) as well as half of the water. Cook and repeat after 2-3 minutes. Once the mixture starts solidifying add 2tbsp of the butter, garlic powder and salt to taste. Keep cooking until the oil starts separating a little. Enjoy! 🙂‍↔️
