I recreated one of my favourite restaurant chicken dishes and wacked it in a ciabatta…I think this recipe might take the crown.
What is your favourite restaurant dish let me know on the comments and I’ll put my own spin on it
Ingredients:
-              3 slices parma ham
-              1 large ciabatta 
-              ½ cup kewpie Mayo
-              ½ tsp chilli oil
-              Tsp Kimchi juice
-              1 Tsp siracha seasoning
-              4 boneless chicken thighs
-              200g cherry tomatoes – cut in half
-              1 tbsp dark soy sauce
-              1 tsp tomato paste
-              1 tbsp gochujang paste
-              1 tbsp honey
-              ½ lemon
-              Splash of water 
-              Handful of coriander – finely chopped (garnish)
-              Sesame seeds (Garnish)
Method:
1.         Place the 3 parma ham slices on tray with baking paper, place another sheet on top of the parma ham, then place another tray on top. Put in oven at 180 degrees oven and bake for around 20 minutes until crispy
 
2.         To make sauce add kewpie mayo, chilli oil, kimchi juice, siracha seasoning & water (optional) if you want thinner sauce
 
 
3.         Add chicken thighs skin side down to cold pan and cook on medium heat until oils are released don’t flip chicken until you are happy the chicken skin is golden brown (I flipped too soon!)
 
4.         Take chicken out pan and in same pan add tomatoes, soy, tomato paste, gochujang, honey, lemon and water and reduce until happy with consistency (add honey at end so it doesn’t burn!)
 
5.         Add chicken back to pan when it is almost a thick syrup and coat the chicken cooking for further 2-3 mins
 
6.         Assemble  ciabatta (toast yo buns!!) add sauce rocket chicken and garnish with sesame seeds crispy parma ham rocket and coriander 2025-10-09 03:17:18 .. 84 -69% 0 -100%

This one’s all about balance and uses British cottage cheese that is rich in protein and naturally provides calcium, which is needed for the maintenance of normal bones and teeth as part of a healthy, balanced diet and lifestyle.

Cooking time: 15-20 minutes
Serves: 4

Ingredients:
300g regular cottage cheese
300g wholewheat pasta shapes
4 tablespoons prepared fresh basil pesto sauce
Zest and juice of ½ lemon
1 x 100-120g bag baby spinach leaves
100g cherry tomatoes, cut into quarters

Method:
1. Cook the pasta according to the packet instructions, drain (reserving a cupful of the pasta water), transfer to a large salad bowl and set aside.
2. Meanwhile, put the cottage cheese, pesto and lemon juice into a food blender or processor and blend until smooth.  Stir through the lemon zest.
3. Gently toss the cottage cheese pesto through the hot pasta with a little of the reserved pasta water.  Add the spinach leaves and the tomatoes.  Season and set aside for 1-2 minutes for the spinach leaves to wilt.
4. Toss gently and serve.

I slow cooked this oxtail for 8 hours to make the only pasta you’ll need in your life 🍝 

Takes time but is actually easy to do once you blitzed pepper mixture 

Pepper mixture Ingredients 

* 1 red pepper
* 1 red onion 
* 7 garlics 
* 1 scotch bonnet 
* 3 Tomatos 
* 50ml water
* 1 Tbsp paprika
* 1 Tbsp oregano 
* 1 tsp Cayenne pepper 
* 1 heaped Tbsp chicken bouillon
* 1 tsp garlic / onion powder
* 1 Tbsp tomato paste

* 400ml water 
* 2 limes to wash oxtails
* 3 oxtails 
* Coriander & Parmesan to garnish 
* Tagliatelle pasta 

1. Wash pepper mixture vegetables 
2. Blitz pepper mixture ingredients with spices (Add 50ml water to help blend) 
3. Add pepper mixture with 400ml of water to slow cooker and put on high until oxtail is washed and browned off
4. Wash oxtail and cook in oil on high heat just to get colour (don’t cook too long!)
5. Add oxtail to slow cooker turn to low and cook for 8 hours until falls off bone 
6. Remove oxtail and shred save half of meat for garnish other half mix in with pasta 
7. Blitz the sauce create an emulsion can add butter but doesn’t need as oil from oxtail helps create smooth consistency (this broth great to save for ramen or other meals!)
8. Cook pasta and some pasta water to pan with cooked pasta and blitzed sauce and add meat back in) taste if sauce needs any seasoning 
9. Garnish with Parmesan and coriander

Ingredients
 
For the Salmon
    •    2 salmon fillets
    •    2 tbsp Maggi Air Fryer Seasoning 
    •    1 tbsp olive oil
    •    Juice of ½ lime (optional)
 
For the Pasta
    •    150g pasta of your choice 
    •    Salt, for boiling
 
Garlic Yogurt Sauce
    •    200g Greek yogurt
    •    1 clove garlic (finely grated)
    •    Juice of ½ lemon
    •    1 tsp olive oil
    •    Salt & pepper to taste
 
Garnish
    •    2 tbsp fresh coriander (finely diced)
    •    40g feta cheese (crumbled)
    •    Red onion (optional)
•    Lemon zest
•    Extra virgin olive oil

Method
 
Step 1 — Prep & Air Fry the Salmon (6–8 mins)
    1.    Preheat air fryer to 200°C.
    2.    Rub salmon fillets with olive oil, Maggi Air Fryer Seasoning, and lime juice.
    3.    Place fillets skin-side down in the basket and air fry 6–8 mins until golden, flaky, and juicy.

Step 2 — Cook the Pasta (8–10 mins, same time as salmon)
    1.    While the salmon cooks, boil a pot of salted water.

    1.    In a small bowl, mix yogurt, grated garlic, lemon juice, olive oil, salt, and pepper.

    2.    Top with the Spoon over the garlic yogurt sauce.

For the garlic yogurt sauce:
• 4 tbsp Greek yogurt
• 1/2 garlic – minced
• ½ tsp lemon juice
• Pinch of salt

For the wrap:
• 2 large wholemeal or multigrain wraps
• Feta cheese
• Lettuce sliced

Method
1. Marinate the Chicken (2 mins) / longer the better 
o In a bowl, mix yogurt, lime juice, and Maggi Air Fryer Seasoning.
o Coat chicken strips well and set aside.
2. Prepare the Salsa (3 mins)
o Mix diced tomatoes, sliced red onion, mint, basil, salt, pepper, olive oil, and a squeeze of lemon and the zest
3. Make Garlic Yogurt Sauce (1 min)
o Mix Greek yogurt, garlic, lemon juice, and salt until creamy.
4. Air Fry the Chicken (10-12 mins)
o Preheat air fryer to 200°C.

Not that it’s any thing to do with this fire fish taco and mango salsa recipe 🐟 🌮 🥭 🥑 This taco went crazyyyyyy

Ingredients

For the Fish
 - 200ml beer (adjust as needed for batter)
 - 1 tsp baking powder
 - 40g cornflour
 - 120g plain flour
 - Oil, for deep/shallow frying
 - ½ tsp salt
 - 400g white fish fillets (cod,
 - ½ tsp garlic powder
 - 1 tsp smoked paprika
 - Add beer until happy with consistency 

For the Mango Salsa
 - 1 red chilli sliced 
 - 1 ripe mango, diced small
 - 1 small tomato, diced
 - ½ red onion, finely chopped
 - Juice of 1 lime
 - Pinch of salt
 - Handful fresh coriander, chopped
 - 1 Tbsp Extra virgin olive oil 

For Pickled Onions
 - 1 tbsp sugar
 - 60ml apple cider vinegar (or white wine vinegar)
 - 60ml water
 - 1 tsp salt
 - 1 red onion, thinly sliced

For Chipotle Mayo
 - 1–2 tsp mexico hot sauce taste) Or chipotle paste
 - 4 tbsp kewpie mayonnaise
 - Juice of ½ lemon
 - Waitrose Mexico seasoning 1tsp

Method
	1.	Make Pickled Onions (ahead of time):
	•	In a small saucepan, bring vinegar, water, sugar, and salt to a simmer.
	•	Pour over sliced onions in a jar. Let cool and refrigerate for at least 30 mins.
	2.	Prepare Salsa:
	•	In a bowl, combine mango,, tomato, red onion, chilli, and coriander and EVO
	•	Squeeze over lime juice and season with salt. Mix gently.
	3.	Chipotle Mayo:
	•	Stir together mayo, hot sauce, and lemon juice. Adjust spice level to taste.
	4.	Fry the Fish:
	•	Heat oil in a deep pan (170–180°C).
	•	In a bowl, whisk flour, cornflour, baking powder, paprika, garlic powder, and salt.
	•	Slowly add  beer until you get a thick batter.
	•	Coat fish pieces in batter and fry until golden and crisp (4–5 mins). Drain on paper towels.
	5.	Assemble Tacos:
	•	Warm tortillas in a dry pan.
	•	Add a layer of shredded lettuce.
	•	Place crispy fish on top.
	•	Spoon mango salsa over.
	•	Drizzle with chipotle mayo.
	•	Top with avocado slices and pickled onions.
	6.	Serve:
