ingredients:

- 1 cup neutral oil
- 3 tbsp Sichuan peppercorn 
- 2-3 star anise
- 2 bay leaves 
- One small cinnamon stick
- half a cup chili flakes
- 1/4 cup red chili powder
- 2 to 3 tablespoon sesame seeds
- 6-8 garlic cloves smashed
- One onion, diced
- 1 teaspoon salt
- 1 teaspoon sugar
- One to 2 tablespoons soy sauce
- few drops of ossoroflavours garlic, ginger oil

Movie night just got a makeover 🍿🔥🧀
I made this cheesy-spicy popcorn with my own cheese spice mix, bursting with flavor from Tata Sampann Turmeric and Tata Sampann Chili Powder, so that I get nature’s goodness with finger licking taste.. 

You’ll need:
	•	2 cups popped popcorn
	•	2 tbsp cheese spice mix (made with cheese powder, Tata Sampann turmeric, Tata Sampann chili powder, salt
	

Method:
1️⃣ Toss hot popcorn in melted butter or spray some oil.
2️⃣ Sprinkle over the cheese spice mix.
3️⃣ Shake until every piece is coated in that golden, spicy goodness.

My go to coffee combination

- 1 tsp sugar 
- 2-3 tbsp of the mocha sauce
- 1 tbsp instant coffee (i use davidoff) 
- hot water 
- ice & oat milk 

Mocha sauce:

- 1/4 cup cocoa powder 
- 1/2 cup sugar
- 1/4 cup milk powder 
- any chocolate, 2 tbsp 
- hot water 
- pinch of salt

✨kadak chai✨

saw this on cookingwithzainab and it turned out SO GOOD. Still can’t get over how beautiful the color of the chai looks

Steps: 

1. Add sugar and water in a two is to one ratio, which means if you are adding 2 tablespoons of sugar, you add 1 tablespoon of water in a saucepan and let the sugar caramelize on medium low heat.

2. Once it starts to caramelize, that’s when you want to add water followed by tea leaves. At this stage, you may also add some pounded cardamom or grated ginger.

3. Let that brew for two minutes and then add in milk

4. In the original video, she also use evaporated milk, but since that is not readily available in India, I mixed my milk with 2 tablespoons of milk powder to sort of make it a bit more thick and I added that in 

5. Let the chai boil for 10 mins minimum

This isn’t a recipe post by any means because we all know how to make scrambled eggs, but when you undercook the eggs slightly and then turn off the heat, the eggs still continues to cook in the residual heat so you’re not overcook the eggs at the same time, you get a very delicious creamy scrambled eggs, which when you serve with chili oil And toasted bread, it is SO GOOD!

✨Turkish Milk Cake✨

Ingredients: 

- 3 eggs
- 3/4 cup sugar 
- 1 tsp vanilla extract 
- 1 cup all purpose flour 
- 1 1/2 tsp baking powder 
- 1/2 cup milk 
- 1/4 cup oil 
- 1/4 tsp salt

Milk syrup: 

- 1 1/4 cup milk
- 1/4 cup condensed milk 
- 1 tsp vanilla extract 

Whip topping: 

- 3/4 cup non-dairy whipping cream
- 100g condensed milk
- 1 tsp vanilla extract 

Caramel sauce: (optional) 

- 1/2 cup castor sugar 
- 1/4 cup water 
- 1/4 cup fresh cream
- 2 tbsp butter 
- pinch of salt

Bake the cake at 180C for 45 minutes. Let it cool down completely then soak with the milk mix, add the whip topping on top & refrigerate overnight. Finally add the caramel sauce layer and serve!

I have made this recipe over eight times so when I tell you, it works, it really does! 

🚨 : highly recommend getting a kitchen scale so that you never mess up the measurements because that is critical for cookies 

Recipe:

- 18g butter
- 2 (24g) tbsp brown sugar 
- 1 (12g) tbsp castor sugar
- 2 tsp milk
- 40g flour
- 1/8tsp baking soda 
- vanilla essence 
- choco chips & a chocolate chunk

The chocolate chunk I have used in the video is from velourchocolates it’s the 60% dark baking chocolate. You have to use good quality real chocolate if you want for the perfect lava center

Preheat your oven for 20 minutes and make sure you’re also chilling the dough for the same time period. I baked in a convection microwave for about 17 to 18 minutes at 180C

Serving my favorite mac & cheese in this stunning lamuse.in crockery – because presentation matters just as much as taste ✨

Ingredients:
	•	1 cup elbow macaroni (or any pasta you like)
	•	1 tbsp butter
	•	1 tbsp all-purpose flour
	•	1 cup milk (preferably warm, full-fat)
	•	1 cup grated cheese (cheddar is classic, or mix cheddar + mozzarella)
	•	Salt to taste
	•	Pepper or chili powder (optional)
	•	A pinch of nutmeg powder

Instructions:
	1.	Boil pasta:
Cook pasta in salted boiling water according to package instructions. Drain and set aside.
	2.	Make the roux (base for sauce):
In a pan, melt butter over medium heat. Add flour and whisk continuously for about 1 minute to cook the raw taste out.
	3.	Add milk:
Slowly pour in warm milk, whisking to avoid lumps. Cook for 2–3 minutes until it thickens slightly.
	4.	Add cheese:
Turn off the heat and stir in grated cheese until melted and smooth. Add salt and pepper & spices. 
	5.	Combine:
Add the cooked pasta to the cheese sauce and mix well until everything is coated. Transfer this into a baking dish cover with cheese and bake till the cheese on top has melted and developed a crust.
	6.	Serve:
Pour into a bowl or plate – preferably your beautiful La Muse crockery – and enjoy warm!

Some tips: 

- make sure you are soaking your rice paper for 10 seconds
- make sure you are lining your steamer plate with a parchment paper
- don’t forget to also grease your parchment paper
- place the dumplings and keep a little space so that they don’t stick to each other

Apart from steaming, you can also fry them, however steaming tastes the best in my opinion 

For the filling I’ve used 
- minced chicken 
- salt, black pepper & white pepper 
- ginger garlic paste
- spring onion greens
- chili oil
- soy sauce 
- sesame oil

You can get creative and use prawns too or paneer and veggies for a vegetarian option. If you are using paneer and vegetables, maybe you can also try cooking the filling before wrapping up and steaming for more flavor

✨ No oven fudgy brownie ✨

You can, of course, make this in an oven as well.

Recipe:

- 2 eggs (or 1/2 cup hung curd)
- 1 cup sugar [200g]
- 1/2 cup oil or butter [120ml]
- 1/2 cup flour [60g]
- 6 tbsp cocoa powder [36g]
- Few drops of vanilla
- 100g melted chocolate [1/2 cup]
- Pinch of salt 

Always preheat the kadhai. Check after 30 mins. The middle of the brownie should still be wet/fudgy, the sides should be firm, that’s when you know it’s done. Do not overbake the brownie. Enjoy :)

✨ Garlic chili oil ✨

- neutral oil
- 20-25 cloves of garlic 
- 1 onion 
- 1/2 inch grated ginger
- 1 bay leaf 
- chili flakes
- red chili powder (adjust according to your taste)
- 2 tablespoon stock powder /bullion *
- 1 tablespoon soy sauce 

Tip: while I was frying my onion and garlic I also decided to add some dried red chilies. Cut them small with a scissor and add it in the end. Just let them get crispy, so fry for about 3 to 4 minutes, and I swear it is such an amazing texture to the chili oil!! 

* stock powder is my secret ingredient to add lots of umami to the chili oil. I have used chicken stock powder, but you can also use vegetarian stock cubes. They’re available on Amazon ✨
