Ingredients:
1 lb. salmon fillet
3 eggs, whisked together
1 cup of panko crumbs
1/2 tsp. fine sea salt
1/4 tsp. black pepper
cooking spray

Directions:
Combine spices and panko crumbs. Cut salmon into bite sized pieces (about 1 inch thick) then dip into eggs and then coat with panko crumbs. EASY Chocolate Fudge Brownies 🍫 One bowl. No Mixer. Just gooey, chocolatey perfection 🍫 

⬇️RECIPE⬇️

This recipe is a small batch 8x8 dish recipe if you want you can double the recipe and bake it in a 9x13 pan. (My sister michalll__  was adamant that I update the recipe to reflect this information bc as she says WHO HAS AN 8x8 dish?!) 

✅ Makes: 12 brownies
✅ Prep Time: 10 minutes
✅ Bake Time: 25–30 minutes

Ingredients:
1/2 cup (120ml) vegetable oil or melted coconut oil
1 cup (200g) sugar
2 large eggs
1 tsp vanilla extract
1/3 cup (35g) unsweetened cocoa powder
1/2 cup (65g) all-purpose flour
1/4 tsp salt
1/4 tsp baking powder
(Optional but highly recommended): 1/2 cup dairy-free chocolate chips or chopped dark chocolate

Instructions:
1. Preheat oven to 350°F (175°C).
2. Grease or line an 8×8-inch pan with parchment paper.
3. Mix wet ingredients: In a bowl, whisk together oil, sugar, eggs, and vanilla until smooth and slightly glossy.
4. Add dry ingredients: Stir in cocoa powder, flour, salt, and baking powder. Mix until just combined (don’t overmix).
5. Add chocolate chips (optional but in my opinion, a must!) Fold them in now if using for extra gooey-ness.
6. Pour and bake: Spread batter evenly in the pan. Bake for 25–30 minutes, until the edges look set and a toothpick in the center comes out with moist crumbs (not wet batter!).
7. Cool & devour: Let cool in the pan for 10–15 minutes before slicing for max fudgy texture.

Tips:
– For extra rich flavor, use Dutch-process cocoa.
– Want them chewier? Stick to the shorter baking time.

Ingredients:
1 head of cauliflower, cleaned and broken into pieces
1 cup mayonnaise
1 cup of cup bbq sauce
2 cups corn flake crumbs

Directions:
1. In a medium size bowl combine mayonnaise and bbq sauce
2. Coat cauliflower pieces into mayonnaise bbq sauce mixture
3. Dip cauliflower pieces in corn flake crumbs.
4. Line corn flake coated cauliflower pieces on a lightly greased baking sheet (I like to use parchment paper for easy cleanup) and bake on 450′ for about 20 to 25 minutes until outside is slightly crispy. (I like a crunchy coating with slightly burnt edges)

Ingredients:
2 1/2 cups garbanzo beans (cooked chickpeas from a can)
1 small bunch parsley (about 1 cup chopped)
1 small bunch cilantro (about 1 cup chopped)
1/2 t salt
1/4 t chili powder or cayenne pepper
2 t cumin
2 T flour

Directions:
Combine ingredients in a food processor until a paste forms. (it’s ok if it’s slightly chunky that adds to the texture of the falafel) The flour is meant to bind the ingredients and hold it together. If it falls apart when frying up add more flour to the batter. Using an ice cream scooper, fry up balls of falafel mixture in a small amount of oil until both sides are lightly browned. (flatten down the ball gently when you flip it over to cook the other side this will create the burger shape) Serve with hummus on slider buns. Optional, add sweet chili sauce!

Ingredients:
12 oz extra firm tofu
2 eggs
1 cup corn flake crumbs
4 slices mozzarella cheese
2 cups marinara sauce
1/2 cup grated parmesan

Directions:
1. Remove tofu from container and drain water. Wrap tofu in paper towel and leave on counter to drain for 20 minutes. Pat tofu dry with a paper towel. 
2. Slice tofu in half, across the middle to make two thinner pieces. Then cut tofu into 4 rectangles. 
3. Coat the tofu patties in egg then dip into crumbs. 
4. Place on a lightly greased baking pan and bake in oven on 400′ for 15 minutes or until slightly crispy. 
5. Remove tofu from pan. 
6. Coat pan with layer of sauce. Place tofu on top of sauce. Place additional sauce on top of tofu. 
7. Layer cheese slice on top of sauce then parmesan on top of cheese.

EASY Chocolate Chip Cookies 🍪  One bowl chocolate chip cookies anyone can make. No mixer needed. No chill (unless you wanna) just chewy gooey cookie goodness. 🍪

Ingredients:

1/2 cup neutral oil (canola, vegetable, or light olive oil)
1/2 cup brown sugar
1/4 cup white sugar
1 egg
1 tsp vanilla extract
1 1/2 cups flour
1/2 tsp baking soda
1/2 tsp salt
1 cup chocolate chips (or more!)
 
Instructions:

1. Preheat oven to 350°F (175°C).
2. In a bowl, whisk together oil and sugars.
3. Add egg and vanilla, mix until smooth.
4. Stir in flour, baking soda, and salt until just combined.
5. Fold in chocolate chips.
6. Scoop dough onto lined baking sheet (1 to 1.5 tablespoons per cookie).
7. Bake for 9 to 11 minutes, until edges are lightly golden.

This is dinner. Lazy meatballs. Only 4 ingredients 😱

Ingredients:
1 lb ground beef
2 eggs
1/2 cup bread crumbs
2 jars marinara sauce (trader joe’s basil marinara is my favorite!)

Directions:
1. Bring marinara sauce to a boil then simmer. (you can also use water, almond or soy milk)
2. Combine ground beef, eggs and bread crumbs. Don’t over mix! That creates a tough meatball.
3. Form beef mixture into balls using a tablespoon measuring spoon.
4. Now you have two options, either place them on a lightly greased baking sheet and bake in the oven on 400′ for about 20 minutes then add them to the sauce and let it cook in sauce for an additional 15 to 20 minutes OR place them directly in the sauce and let them cook in the sauce for about an hour.

Optional: Serve with freshly chopped parsley or dry oregano, thyme or rosemary.  I like to use instant oatmeal in place of breadcrumbs for super light and fluffy meatballs. 2025-07-15 08:02:13 This is .. 0 - 41 +3%

Easy Orange Chicken (Better Than Takeout!)

Why You’ll Love This Easy Orange Chicken:

– Made in under 30 minutes

– Crispy chicken coated in a sticky-sweet orange glaze

– Perfect over rice or noodles

– A fun twist on your favorite takeout, made at home!

Ingredients:

For the chicken:

1 lb boneless chicken breast or thighs, cut into bite-sized pieces

1/2 cup cornstarch

Salt & pepper to taste

2–3 tablespoon oil for frying

For the orange sauce:

1/2 cup orange juice

1/4 cup soy sauce

3 tablespoon honey or brown sugar

1 tablespoon ketchup

1 tablespoon lemon juice (optional, for balance)

1 teaspoon garlic powder

1/2 tsp ground ginger

1 tablespoon cornstarch mixed with 2 tablespoon water

Instructions:

Cook the chicken:

Toss chicken pieces with cornstarch, salt, and pepper until evenly coated. Heat oil in a large skillet and cook chicken on medium-high heat until golden brown and cooked through. Set aside.

Make the sauce:

In a bowl, whisk together the orange juice, soy sauce, honey, ketchup, lemon juice, garlic powder, and ginger. Pour into the same skillet and bring to a simmer.

Thicken the sauce:

Stir in the cornstarch slurry and cook for 1 to 2 minutes until the sauce thickens and becomes glossy.

Combine:

Add the chicken back into the skillet and toss until fully coated in the orange glaze.

Serve:

Over hot rice or noodles, topped with sesame seeds or green onions if you’re feeling fancy!

Tips for Success:
Use fresh orange juice for extra flavor.

Chicken thighs stay juicier, but breasts work too.
