![Up in the Carnic Alps, above Sauris #friuli, you’ll find roccoeisuoiamici at malga_festons , where the cows graze like they own the place and the food is as pure as the air. Getting here means winding roads, alpine switchbacks, and the occasional need to pull over just to gawk at the view and collect yourself. Once you arrive, Rocco gets to work cooking up a storm at a wood-fired stove and a gas range, where he prepares locally milled polenta, beef from his own stash, and soft scrambled eggs with roe harvested from local trout. ![Back in 2008/2009 stefanocallegari_official’s hole in the wall pizza by the slice joint 00100 began serving trapizzini, essentially pizza pitas made with fluffy and crispy corners of sourdough buns stuffed with Roman secondi like polpette, lingua, trippa alla romana, and (my fave) chicken cacciatore.
