Lovely Thai flavours in the food as well as in their amazing cocktails! Among my old Thai favourites was the Tom Kha. I’ve had some really good ones in my life but this would rate very high. And another dish I had never tried - a sweet potato and pumpkin dish in a gorlae sauce was outstanding. The #fireback staff were really warm and welcoming! If you like your Thai food, don’t miss this chance!

Winter Vegetable Wonderland! While many parts of the world struggle with winter, we in India rejoice because of the huge variety of seasonal vegetables that it brings. People look forward to the bright red winter carrots to make halwa (not my thing!), mango ginger and fresh green pepper to pickle (yum!), fresh and sharp grated radish and fresh cauliflower to stuff into parathas (swoooon!). But my all-time favourite winter vegetable has to be the green peas especially those found in the Northern and Eastern parts of the country. Following my family tradition of carting fresh vegetables across the county, on a recent trip home, I carried amazing green peas, dark green chillies and fresh ginger back to Hyderabad. And thanks to neighbours like debamitadey I get them transformed into brilliant green peas stuffed kachoris served with a simple potato curry made with new potatoes! Amazing Sunday morning breakfast!

Found fresh gongura (roselle or hibiscus) flowers in the market! While the leaves of the gongura plant are available pretty much through the year and extremely popular in this region, the calyx or the outermost whorl of the flower is yet another ingredient that adds a lovely sourness to the food of this region. Plan to make some into a chutney as well as a nice sour dal. If I have any flowers leftover, I will dry them and make them into a syrup that I recently had (and absolutely loved!) at amritabhattachaarya ‘s lovely home at Shantiniketan while on my annual #khaanasutra last month.

Found a strange street food snack in Jiaganj in Murshidabad District and the name is even stranger! I was told that I will be able to taste bhelpuri and that got me excited (my friends will tell you how much I love it!). When I reached the shop, I saw vada like things being fried in oil and served with a sweet sour chutney. While I was busy looking for bhelpuri, I was told this was it!!! What is traditionally called bhelpuri is called Bhel Muri here as opposed to the Jhalmuri which has most of the same ingredients as bhelpuri with the added bite of mustard oil that adds the distinctive sharpness. This #bhelpuri is made with maida (refined flour) dough and shaped like a bagel is and usually double fried. The taste without the chutney was kind of like the mysore bajji of Hyderabad.

It has been more than two weeks since I got back from Spain after a 6 week long amazing adventure there. While I was in the country I was busy experiencing it and wasn’t really motivated to post much. As I struggle now to get back to my day to day routine, I  plan to take breaks to look back on this trip of a lifetime and post my impressions of this country. These posts are dedicated to all those I met there. To the families that generously opened their homes and hearts to me, to the new friends I made there, to random strangers who helped me during my travels, Blablacar drivers and fellow passengers, guides at the various cities and all those who spoke to me patiently and slowly (which is a challenge for most Spaniards!) so that I could improve my Spanish speaking skills!
The country left me with a feeling of familiarity - a culture where people are nice and friendly, strangers ready to help you with detailed directions, help carry luggage and generous with their time and always most importantly, not taking themselves or their lives too seriously. Over the next few days, I will be posting specific highlights of my trip, especially my experiences of travelling through a meat-loving Spain being a vegetarian who doesn’t eat cheese!

What is common to mango lassi and sangria? According to me, both are usually found on menu cards of touristy restaurants and not really something most natives would order. This drink however is what many Spaniards have in summer. Tinto de verano which is currently my favourite while travelling through the really hot Andalusian region. It’s a mix of a little bit of red wine with lots of lime soda and is very refreshing! Another interesting fact about the word vino tinto which is used for red wine in Spain (as opposed to vino blanco for white wine)…. I always wondered why it was not called vino rojo, the latter being the word for red. After scouring the Internet, I found out that the word tinto comes from the process of ‘dyeing’ or ‘tintar’ which makes the wine red. Also, the word rojo entered the Spanish language much after the process of making wine started. Hence, vino tinto!! Fascinating!

Really touched by this! One of the guests on my culinary tour #khaanasutra3 designed this gin specially for the tour. Apart from being a wonderful gin, the gesture also showed how much some of the people in the group have been waiting for this tour. It was first planned in October 2020 and finally started today! Feel blessed to have guests willing to wait for almost 3 years for the tour! Wonderful day 1 and another 11 days to go! So much food, so little time!

Day 1 of #khaanasutra3 and what a day it was! A garland of vadas dedicated to Lord Hanuman, visit to other local temples to learn about the favourite foods of Hindu gods, a traditional #chettinad lunch, a visit to a snacks factory, sharing of a giant dosa and to top it all, a special gin created by one of the guests in the group just for this tour! This humble dish from Bihar and Jharkhand is the litti chokha and it’s cousin the sattu Paratha. In both cases the filling is made of the highly nutritious sattu which is powdered roasted channa (chick peas) mixed with spices like ajwain (carrom seeds), coriander leaves, lemon juice etc and then stuffed inside whole wheat dough. In the case of litti, it is flattened slightly and for the sattu Paratha, it is rolled out into discs. Nowadays, the litti is cooked on an open fire on a wire gauze but traditionally it is baked in a fire fuelled by cow dung cakes. But what elevates and adds oomph to both these dishes are the accompaniments! Chokha which is made by roasting tomatoes or and or aubergines that are mashed into boiled potatoes with the addition of raw onions, garlic, green chillies, coriander and the final flourish of sharp mustard oil that is so typical of this region. Also served with a generous dollop of green coriander or tomato chutney, the more richer version of litti is dunked into hot ghee. The Paratha is cooked on a tava or griddle with the addition of oil. The dish keeps you full for hours especially given that the sattu induces a lot of thirst and keeps you reaching for water. During my childhood this dish was made only in homes but has become a popular street food now across Bihar and Jharkhand.

A glimpse through one of the arches in the Qutb Shahi Tombs complex. I always look forward to the reaction of the guests when they are already impressed with the first tomb they see of Abdullah Qutb Shah and then I casually (I try!) tell them “there are 40 of them in the complex”! One of the most underrated sites in India. Unbelievable complex with majestic tombs, beautiful mosques, step wells and a mortuary bath all being carefully restored by the #agakhanfoundation Truly, it is a place worth coming to #hyderabad for!

The joy of exploring a local vegetable market! Such amazing fresh produce and so many strange looking varieties. Damn the baggage limits on flights! Still managed to buy a dozen of the local lemons / limes and thanks to some local friends, carrying back some of the amazing Shillong pineapples!!
