I’ve been in grind mode. I feel like all I have been doing is working. So a weekend away in Joshua tree was so desperately needed. I felt like my friends needed it too.

I don’t think words can capture how special this weekend was. Friends came in from all over to Joshua Tree to come together and celebrate, hosted in my friend Jonathan’s stunning Airbnb. It was so beautiful, humbling and delicious - everything I could have ever asked for.

Every person who made it to this trip (and even those who weren’t there who were a part of it!) made it so special - it truly felt like, in the words of my buddy Eric, “an annual meeting of the tribes” where everyone played their part collectively to bring the vibes, the food, the energy - and we came together to enjoy, love, laugh and ultimately - have an amazing celebration together. No over-the-top frills—just unforgettable quality time with the people I love. Thank you to every single one of you who made it what it was, whether you were there in person or with us in spirit.

so much lobster and seafood. late night conversations until sunrise about work, life, relationships. random sushi spawns. DJ sets everywhere in each room. just so incredible. it felt like festival in a village everywhere i went with people from the different parts of my life that all keep me whole.

35.	Wow.

I didn’t expect this day to come so soon. This past year was full of trials and tests—climbing out of 34 and walking out stronger because of it.

So much has changed—some of it by choice, a lot of it out of necessity. But every moment has shaped me, sharpened me, and set me up to enter this next chapter with clarity, momentum, knowing I’ve got the right people in my corner.

I’m endlessly grateful to all of you who stood by me, supported me, made space for me, and believed in me—even when I didn’t always believe in myself. They usually say 5 years into your business is where most drop out. You all pushed me beyond that.

The milestones this past year have been wild. Learned how to Golf thanks  to jasonpanzer golftec. Was blessed to be a groomsman at two weddings with my boys derektaing and mikejin23 and some of the most beautiful weddings I’ve ever been to (congrats guys!!). 

Then hosting our first New York pop-
up, running the first ever summer series with littlecityfarmla, cooking amongst several of my chef idols with chefstableofficial for Art Basel Miami, a guest appearance with chubby.club at coachella, to being asked to do out_inthefield and building a wedding and catering team rosalynnsupperclub, shooting my first national TV ad with sommsation, hosting our first ever service & entertainment industry event, cooking on a private jet with jet365 and the honor of co-founding quickreactionfood to serve meals for those in need. And I know we’re just getting started.

EDC…I have no words to describe how incredible this experience was. I had no plans to go, got some last minute tickets and had some of the best memories I’ve had at a festival ever. I essentially went by myself - no group in mind. But my rave fams always come through and I haven’t had this much fun or felt so much love in a minute.

So I got tired of seeing all this back and forward about sharpening your knife with honing steals. Let me clear it up.

A honing steel doesn’t sharpen your knife.
It realigns the edge, keeping it straight and refined between sharpenings. That satisfying “zing” sound? Just edge maintenance—not sharpening.

The only exception is a diamond-coated honing steel, which has enough grit to remove metal and reshape your blade. But even then, it’s not a true substitute for proper sharpening.

The best analogy is something that I heard from a mentor of mine: using a honing steel is like your daily maintenance where you brush your teeth. Sharpening your knife is like going for a deep clean at the dentist and really cleaning it all up.

Want your knife really sharp?
Use a whetstone or hit up a pro like my boy steven_sharpens.

I was able to connect with some amazing people this year at Coachella - and I’ve been wanting to check out the amazing crew at out_inthefield. I’ve seen their work and to finally connect and be there in person was just magical.

Thank you to the Outstanding team for the opportunity to unwind and share a beautiful meal in the Rose Garden. After a weekend behind the grill, it was a gift to simply sit, eat, and be present.

We were a little late (sorry!) But by pure chance, we were seated next to the incredible people behind V59 Winery and Coleman Family Farms and some really amazing people from Chicago and Weho who brought all the vibes. To share stories over food and to learn about the wines and the amazing produce is a testament all I love about food: connecting over something delicious.

Sometimes the best moments are the ones you never saw coming (sorry I know that was cheesy)

My decadent take on Surf & Turf skewers—stacked with wagyu, finished with yuzu kosho, white truffle compound butter, and topped with Hokkaido uni—flew. So much so, they had to restock uni the next day. That’s how good it was. 80 trays wasn’t enough!!!

Huge love to Chubby Club for having me with them at the VIP, and to everyone who pulled up for the experience. Y’all really showed out and made this one for the books. It made me so happy to see so many of you guys come back for seconds and say it was one of the best bites at Coachella.

Four hours, one roasted rotisserie chicken, and a whole lotta Southern soul.

For our Squish Cultures dinner, I went back to my roots and made a Seafood & Chicken Gumbo — a labor of love that starts with a roux. It’s just flour and oil, but don’t let that fool you. Getting it deep, dark, and nutty is a test of patience. I swapped out canola for getgraza olive oil and the result? A gumbo that hits deep but feels light.

Shredded chicken fresh out of my thorkitchen oven, slow-cooked with tomato, carrot, celery, and a mirepoix-based broth seasoned with Tony’s and a whole lotta love.

We finished it with roasted shrimp right on top — because why not make it rich and elegant?

Southern food is where my heart’s at, and this was one of my favorite dishes to make. Thank you squishcultures for the invite, and thank you to everyone who pulled up and tasted something made from scratch.

Seafood Chicken Gumbo w/ Roasted Shrimp Recipe
(Makes ~6 servings)

Ingredients:
	•	1 whole rotisserie chicken, shredded
	•	1 lb shrimp, peeled and deveined
	•	¾ cup all-purpose flour
	•	¾ cup olive oil (recommend: getgraza or light EVOO)
	•	1 yellow onion, diced
	•	2 celery stalks, diced
	•	1 large carrot, diced
	•	1 bell pepper, diced
	•	1 tbsp tomato paste
	•	6 cups chicken broth (preferably homemade with mirepoix)
	•	1 can diced tomatoes (14 oz)
	•	2 tsp Tony Chachere’s seasoning (or Cajun blend)
	•	2 bay leaves
	•	1 tsp smoked paprika
	•	Salt & pepper to taste
	•	Green onions + parsley to garnish

Roasted Shrimp:
Toss shrimp in olive oil, garlic powder, smoked paprika, and salt. Roast at 400°F for 6–8 minutes until just pink and curled.

Instructions:
	1.	Make the Roux: In a heavy pot, combine flour and oil over medium heat. Stir constantly for 20–30 minutes until dark brown (think melted chocolate).
	2.	Sauté Aromatics: Add onion, celery, carrot, and bell pepper. Cook 8–10 min until soft.
	3.	Add Chicken & Tomato Paste: Stir in shredded chicken and tomato paste. Cook 3–5 min.
	4.	Simmer: Add broth, diced tomatoes, Tony’s, bay leaves, and smoked paprika. Simmer 1 hour.
