“Orwell’s DOWN AND OUT IN PARIS AND LONDON was a big book for me… I remember the effect that reading that book had on me when I was a dishwasher; it was very much a template and an inspiration for KITCHEN CONFIDENTIAL. 

You know, this is a book written in the twenties, and the fact that it was so recognizable and I felt such kinship with these characters so long ago . . . People that found themselves were the refuse and the refugees and, you know, people for whom things had gone wrong and they were the second smartest kid in the family… But that connection was something that I kind of yearned for; when I wrote [DON’T EAT BEFORE READING THIS for The New Yorker in 1999], I had hoped for nothing more than to inspire that feeling of ‘I’m not alone’ in a few other cooks in the New York area. That was my goal...

I figured, look, I better keep my day job here, but eventually the restaurant was filling up with journalists. It was like a hard news story. I had no clue that this was coming. I had no expectation that anything would come of this. Even after the book came out . . . I kept working. Who could reasonably expect to make a living writing? It seemed like a delusional notion.”

“I think money is sh*t. You know… how much you spend on a thing… If I spend a couple thousand dollars on sushi for two, I don’t feel guilty about that. I do find that my happiest moments on the road are not standing on the balcony of a really nice hotel. That’s a sort of bittersweet—if not melancholy—alienating experience, at best. My happiest moments on the road are always off-camera, generally with my crew, coming back from shooting a scene and finding ourselves in this sort of absurdly beautiful moment, you know, laying on a flatbed on those things that go on the railroad track, with a putt-putt motor, goin’ across like, the rice paddies in Cambodia with headphones on… this is luxury, because I could never have imagined having the freedom or the ability to find myself in such a place, looking at such things.

To sit alone or with a few friends, half-drunk under a full moon, you just understand how lucky you are; it’s a story you can’t tell. It’s a story you almost by definition, can’t share. I’ve learned in real time to look at those things and realize: I just had a really good moment.”

Remembering the incredible Marcia Resnick, a true visionary photographer, who passed away at 74 on June 18th in Manhattan. Her raw portraits of New York City’s downtown art scene in the 1970s and 1980s captured a moment in time like no other. She’ll live on forever through her art.

Among her notable works is this portrait of a young Anthony Bourdain from 1981, featured in her book “Punks, Poets & Provocateurs: New York City Bad Boys, 1977–1982” (published in 2015).

“Before I set out to travel this world, 12 years ago, I used to believe that the human race as a whole was basically a few steps above wolves.

That given the slightest change in circumstances, we would all, sooner or later, tear each other to shreds. That we were, at root, self-interested, cowardly, envious and potentially dangerous in groups. I have since come to believe – after many meals with many different people in many, many different places – that though there is no shortage of people who would do us harm, we are essentially good.

That the world is, in fact, filled with mostly good and decent people who are simply doing the best they can. Everybody, it turns out, is proud of their food (when they have it). They enjoy sharing it with others (if they can). They love their children. They like a good joke. Sitting at the table has allowed me a privileged perspective and access that others, looking principally for “the story,” do not, I believe, always get...

I am not a journalist. I am not a foreign correspondent. I am, at best, an essayist and enthusiast. An amateur. I hope to show you what people are like at the table, at home, in their businesses, at play. And when and if, later, you read about or see the places I’ve been on the news, you’ll have a better idea of who, exactly, lives there…

People, wherever they live, are not statistics. They are not abstractions. Bad things happen to good people all the time. When they do, hopefully, you’ll have a better idea who, and what, on a human scale, is involved.

I’m not saying that sitting down with people and sharing a plate is the answer to world peace. Not by a long shot. But it can’t hurt.“

“So, there I was, age 44. I was still dunking french fries at Brasserie Les Halles, which I thought was a pretty good gig at the time. 

But, there was this little free paper they gave out on corners in a little box called The New York Press. I thought, I’m going to write something that will entertain other cooks, maybe I’ll get a hundred bucks, and my fry cook will find this funny. So, I wrote that first piece, that first version of [Kitchen Confidential] with the intention of being published by the New York Press and making 100 bucks, and being a hero to a few fry cooks in New York. 

I wrote it and I sent it to The New York Press… So, every week I’d run to the corner. ‘Oh, I’m gonna be in the free paper!’ and I wasn’t in there. And, in a moment of frustration and possible inebriation, I mentioned this to my mom who said, ‘Well, you should send it to The New Yorker. I know somebody there. They’ll read it.’ And I’m thinking, what is the statistical likelihood ever, even if you’re represented? There’s no chance. Ever.

Out of alcohol-fueled hubris and on the insistence of my mom, I stuffed a copy, a print of this thing I’d written into an envelope and sent it off to The New Yorker, and thought that’s the last I will ever hear of this. Then, a month and a half later, the kitchen phone rings, and it’s David Remnick, the publisher from The New Yorker saying we’d like to run this piece. 

And when it ran, it transformed my life within two days... Everything changed. Everything. From that point on.”
