Air fryer carrot chips with pork loin! Perfect for this weekend.⁠
⁠
Pork tenderloin with carrot chips⁠
Serves 4⁠
450g pork tenderloin⁠
500g carrots⁠
Juice of half a lemon⁠
½ tsp nutmeg⁠
Drizzle of honey⁠
30g feta⁠
30g chopped hazelnuts⁠
Handful of fresh parsley⁠
⁠
Preheat the air fryer at 190C for 2 minutes.⁠
Spray the pork with a few sprays of cooking oil and season with salt and pepper. ⁠
Peel the carrots and slice lengthways into quarters. Place in a bowl, lightly spray with cooking, add the lemon juice, nutmeg and honey and season with salt and pepper. Toss together. ⁠
Place the carrots in the air fryer and the pork on top. Cook for 15 minutes.⁠
Slice the pork and serves with the carrots. Top the carrots with a sprinkle of feta and hazelnuts. ⁠

Air fryer cauli tacos - so so good!⁠
Cauliflower tacos⁠
Serves 4⁠
⁠
1 cauliflower, broken up into florets⁠
2 tbsp Mexican spice mix⁠
Corn tortillas⁠
4 tbsp hummus⁠
4 handfuls of mixed leaves⁠
1 avocado, sliced⁠
4 tbsp of pickled kimchi⁠
1 lime, cut into 4 wedges⁠
Hot chilli sauce (optional)⁠
⁠
Pre heat the air fryer at 200C for 2 minutes. ⁠
Place the cauliflower florets in a large bowl, lightly spray with oil add the Mexican seasoning, season with a pinch of salt and freshly ground pepper and toss together. Put cauliflower florets into the air fryer basket. Set cook time for 12-15 minutes or until golden and crispy, turning florets every 5 minutes to ensure even cooking.⁠
Lay out the corn tortillas. Spread each tortilla with hummus. Divide the cooked cauliflower between the tacos. Top with leaves, avocado and kimchi. Serve with lime wedges to squeeze over each taco.⁠

Following on from the DM air fryer article I thought I'd post a few more simple but delicious air fryer recipes, enjoy!⁠
Mexican hash⁠
Serves 4⁠
⁠
600g sweet potato, peeled and cubed⁠
Cooking oil spray ⁠
1 tbsp paprika⁠
4 eggs⁠
1 avocado, diced⁠
4 tbsp Greek yogurt⁠
½ tsp dried chilli flakes⁠
⁠
Place the sweet potato cubes in a bowl, spray with a few sprays of cooking oil and then sprinkle on the paprika and toss to coat well. ⁠
Air fry at 190C for 14–15 minutes.⁠
Meanwhile, spray 4 ramekins or silicon moulds with a spray of cooking oil and crack an egg into each one, season with a pinch of salt and freshly ground black pepper. ⁠
Remove the sweet potato cubes and set aside.⁠
Air fry the eggs at 160C for 8 minutes until poached. ⁠
Serve the eggs on the sweet potato, with the avocado, yogurt and a sprinkle of chilli flakes.⁠
