I have wanted to talk about this for a while but I felt a little worried about how it would be received. I still feel it’s a sensitive topic, as I know my parents and grandparents have all enjoyed the meals I now feel aren’t necessarily the right plates of food for me. 

I still enjoy the food, and crave it, I have just made it fit into my requirements.

There is no good or bad food, it’s how we enjoy it that matters.

So the “retinol juice” trend is really just clickbait or a fun marketing term, but it risks confusing people. 

You’d need a lot of beta-carotene (and good liver health) for your body to even convert it into meaningful amounts of retinol and that’s still not the same as applying retinol topically, which works directly on the skin.

Masala Chicken & quinoa burgers with green chutney

- 500 grams ground chicken
- 1 cup cooked quinoa
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 inch ginger, minced
- 2 green chilies, finely chopped
- 2 tablespoons fresh coriander leaves, chopped
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon garam masala
- 1 teaspoon red chili powder (adjust to taste)
- Salt to taste
- 1 egg
- 1/4 cup breadcrumbs (more if needed)

For the Burger:
- Burger buns
- Lettuce leaves
- Tomato slices
- Onion rings
- Cheese slices (optional)
- Mayonnaise
- Green chutney (or sauce of your choice)

 1. In a large bowl, combine ground chicken, cooked quinoa, chopped onion, minced garlic, minced ginger, green chilies, and fresh coriander.
 Add ground cumin, ground coriander, garam masala, red chilli powder, and salt. Add the egg and breadcrumbs. Mix well until all ingredients are combined. If the mixture is too wet, add more breadcrumbs. Form the mixture into patties of desired size. 

2. Heat a grill pan or skillet over medium heat and add a little oil.  Cook the chicken quinoa patties for about 5-7 minutes on each side, or until fully cooked through and golden brown.

3. Toast the burger buns lightly on the grill or in a toaster. Spread mayonnaise and chutney on the bun. Place a lettuce leaf, followed by the chicken quinoa patty, a slice of cheese (if using), tomato slices, and onion rings. Whole Mung Daal

Ingredients

1 cup whole mung beans
3 large ripe tomatoes - finely chopped
1 tbsp tomato puree/paste
3-4 cloves of garlic - crushed
1 inch ginger - grated
1 large red onion - finely chopped
1 green chilli finely chopped
1/2 tsp asafoetida 
2-3 tbsp cooking oil
Lemon juice
Butter
1 tsp cumin seeds
1 tsp mustard seeds
1/2 tsp turmeric powder
1 tsp ground cumin powder
1/2 tsp coriander powder
Salt

1. Wash and soak the mung beans in plenty of water for 3-4 hours, if you don’t have that time, soak in just boiled (very hot) water for 45 mins
2. In a pressure cooker, heat up the oil, add the mustard and cumin seeds, and the asafoetida, once sizzling a little, add the onions, garlic, ginger and chilli. We don’t need to brown them, just soften them
3. Rescue heat and Add the dry spices, and tomato puree, and mix well, then after a minute, add your chopped tomatoes. Add a splash of water and let this cook until the tomatoes become mushy
4. Drain the water from the mung beans and add these to the pan, followed by 4 cups of water. Mix well and bring to the boil
5. Reduce heat and cover and pressure cook for 3-4 whistles, or if not using a pressure cooker, just simmer until the beans area mushy soft. 
6. When you open the pressure cooker, you might find the there isn’t a lot of water, and this is the consistency I sometimes enjoy with roti, but if you want a daal, then add hot water to loosen it up. 
7. While on a simmer, add the salt, a little butter and lots of lemon juice.

Peppery Malai Paneer Tikka (and its many forms lol)

Paneer – 500g, cut into large cubes
Greek yoghurt – ½ cup (thick, full fat)
Cottage cheese – 3 tbsp, 
Garlic – 4 cloves, finely grated
Ginger – 1 tsp, finely grated
Green chilli – 1, finely chopped (optional)
Black pepper – 2 tsp, freshly cracked (adjust to taste)
1tbsp tomato paste 
1.5 tbsp roasted gram flour
Coriander powder – 1 tsp
Cumin powder – 1 tsp
Garam masala – ½ tsp
Chaat masala – ½ tsp
Kasuri methi – 1 tsp, crushed between palms
Lemon juice – 1 tbsp
Salt – to taste
Oil or melted butter – 1 tbsp, plus more for grilling
Onion & capsicum – optional, cut into chunks for skewering alongside

	1.	Make the marinade
	•	Whisk Greek yoghurt and mashed cottage cheese until creamy.
	•	Stir in garlic, ginger, green chilli, cracked black pepper, roasted gram flour, coriander powder, cumin, garam masala, chaat masala, tomato paste ,kasuri methi, lemon juice, salt, and oil.
	•	The marinade should be thick, clinging beautifully to the paneer. (Alternatively you can make this in a blender)
	2.	Marinate the paneer
	•	Coat paneer cubes (and veggies, if using) in the marinade.
	•	Cover and chill for at least 1 hour (overnight for best results).
	3.	Cook
	•	Oven/Grill: 220°C for 15–18 mins until lightly charred.
	•	Pan: Shallow fry or griddle on medium heat, turning until golden.
	•	Air fryer: 200°C for 10–12 mins.
	4.	Finish & serve

Been making these for many many years and they tick all the sweet breakfast boxes for me - I have made some tweaks over the years but they’re very easy x

Green Pancakes 

1 ripe banana (mashed or sliced for blending)
2 handfuls of fresh spinach (washed)
2 large eggs
125g plain Greek yogurt (full-fat or low-fat, your choice)
60g plain flour (or oat flour for a gluten-free option)
1/2 tsp baking powder
A pinch of salt
60ml milk (any kind – adjust as needed)
Olive oil or butter for cooking

Toppings (Optional):
	•	Sliced banana
	•	A drizzle of honey or maple syrup
	•	A dollop of Greek yogurt
	•	Chopped nuts (like walnuts or pecans)
	•	A sprinkle of cinnamon

1. Blend the Batter: Add the spinach, banana, eggs, yogurt, and milk to a blender. Blend until smooth.
Add the flour, baking powder, and salt. Blend again until you’ve got a smooth, slightly thick batter. Add a splash more milk if needed to loosen it up.

2. Cook the Pancakes: Heat a non-stick frying pan over medium heat and lightly grease with olive oil or butter. Pour about 60ml (1/4 cup) of batter into the pan for each pancake. Cook for 2–3 minutes, until bubbles form on the surface and the edges set. Flip and cook for another minute or two, until both sides are golden.

Sweetcorn & papad salad (and other things)

While normally, the sweetcorn takes the lime light, here the papad is the star!  The papad is a humble crispy snack made of a mix of flours, lentils, and spices. They can be fried in oil or dry roasted and are notoriously addictive! Here I have used the papad as a small flavour bomb, but also to add a different texture.  The flavours in this salad are all reminiscent of my street food experiences in India.. do give it ago, and better still, make it your own!

Ingredients (makes 3-4 hungry portions)

500g sweetcorn (cooked, I used tinned, drained water)
1 tin cooked chickpeas
2 dry roasted papads /poppadoms
Large handful of chopped fresh green coriander leaves and stalks
1 large red onion chopped
Handful of grated mature cheddar

Dressing
50ml olive oil
1/2 tsp chaat masala
Salt and pepper to taste
Juice of one whole lemon
1-2 tsp dried red chilli flakes

Mix all the salad ingredients together apart from the papad. Make the dressing and whisking well, pour over the salad and mix well.
Crack your papad over the salad and slowly mix. Serve with an extra shaving of cheddar if you like! Enjoy!
