Pumpkin Pesto soup remains one of my favorite healthy heart warming soups for this season! And nothing smoothes it like the Vitamix A3500 Ascent blender. Here’s the recipe 

Serves 8

INGREDIENTS

1 kg pumpkin
1 medium potato (300g)
1 medium onion (120g)
4 garlic cloves
1 tsp salt
1/2 tsp pepper
4 tbsp olive oil
4 cups water or vegetable broth
125 ml 12% cooking cream 
1/4 cup pesto
fresh basil and pumpkin seeds for garnish

Approx 175 calories a bowl👌🏻

If you’re torn between kefir and yogurt, here’s a comparison to help you decide:

However, kefir edges out yogurt in a few key areas. It has slightly less sugar and boasts a higher concentration of probiotics—beneficial bacteria that support digestion, enhance immune function, and improve nutrient absorption. This makes kefir a standout choice for gut health.

Probiotics can enhance immune function, digestion, nutrient absorption, and help prevent infections. Just remember, not all yogurts have these live cultures, so be sure to look for labels that specify “live cultures” if you’re after the probiotic benefits.

One of my favorite easy and healthy side dishes in Ramadan and the Easy Fry & Grill Dual Basket from Tefal makes if even easier! Cooking side by side with my chicken mousakhan rolls🤩

Ingredients
1 cauliflower
1 tbsp olive oil (for brushing)

For Sauce
1/2 cup tahini (sesame paste)
1/3 cup lemon juice
1/4 cup water
2 garlic cloves minced
1/2 tsp salt
1 tsp cumin
1/4 tsp chili powder
Parsley and pomegranate for garnish

Instructions:
Wash and dry cauliflower well. Brush it with olive oil.  Bake in the tefal dual basket fryer for 45 minutes at 140 degrees Celsius. You can adjust temperature to 195 last 5 minutes for a golden brown result. 

In the mean time mix sauce ingredients. Pour over it when it’s cooked and garnish with parsley and pomegranate seeds.
