PICADILLO DE CARNE DESHEBRADA
📋Ingredients
- 3lbs cuete de res (eye round)
- 1 large white onion
- 2 garlic cloves
- 3 tbsp salt
- 8 chile guajillos
- 4 large tomatillos
- 3 large potatoes
- pinch of cumin
- cilantro
✨Directions
1. To a pot, add about 3lbs of cuete de res (eye round) or espaldilla (shoulder clod). Espaldilla is traditionally more fatty but tends to be more flavorful.
2. Add in 1/2 a white onion, 1 garlic clove, and about 8 cups of water or until meat is fully covered. Cook for about 2 hours or until meat is fully tender. You’ll want to cook it until the broth is almost completely evaporated.
3. Bring to a boil 8 chiles guajillos in a smaller pot and set aside.
4. Chop 1/2 white onion, 4 tomatillos, and 3 medium/large russet potatoes.
5. Once the meat is cooked and caldo is almost completely gone, remove meat and shred in another bowl.
6. Add the remaining caldo (broth) to the blender along with the guajillo Chile’s, pinch of cumin, and one garlic clove. You’ll also add some of the water in which the chiles were cooked.
7. Add the chopped veggies back into the pot and sauté until onion is translucent.
8. Add in shredded beef, chile mix from blender, and about 3 additional cups of water or until meat and veggies are fully covered.
9. Add 1 cilantro bunch to the pot, and bring to a boil.
10. Serve with lime and enjoy!
