I reckon innovation in coffee lies in depth, not novelty. And innovation isn’t always loud.

It can be the quiet obsession with doing one thing incredibly well, rather than all-singing all-dancing jazz hands. 

In a world overflowing with colour-changing matcha lattes and drinks layered like parfaits, it’s easy to confuse new with better. 

But real innovation, at least to me, isn’t always about chasing trends. It can be as simple as going against the herd and elevating what’s already there. 

That’s partially why Aussies are so well-respected in specialty coffee. We’re seen as honouring traditions while elevating and pushing things forward. 

Trends come and go. But clarity and precision never gets old (says the old-school guy 😝)

Sometimes you meet someone who sees the world in a way you wish you could.

They see beauty and peace when others see hard and chaotic. They have a sense of calm that people envy. 

Chen, our Truck Manager at Paddington Basin is one of these people. He sees the world differently, and it’s beautiful. 

Chen, together with our outdoor barista teams have the hardest job in coffee. Making specialty coffee outside is challenging. It’s a battle of mind and body, all while doing a very technical job under pressure. 

When faced with a rainy day, Chen doesn’t say “ah man this sucks”…he says “I like how the truck lights sparkle”.

When faced with a quiet day where time drags, Chen doesn’t say “damn it’s quiet”…he says “it’s so peaceful”.

When describing people who visit our truck he doesn’t call you “customers”…he calls you “guests”.

Spending time with Chen reminds me to look for the beauty in things. He shows us someone can be tough and robust while also sensitive and soft. 

Chen, thank you for what you do, but also for what you see. You’re a gem. 

Fun fact: Chen and our Paddington Basin truck is the most photographed location by our guests. It’s a beaut.

Sitting around the dinner table last night, I asked my family what they’d like to see as my next post. I wanted to write something they’d like to read. 

Malia (17) astutely said “Dad, your last couple of posts have been quite somber and emotional. How about something uplifting!”

What a brilliant idea, and so well-timed after the week we just had. 

Week-ending 14 September was the biggest non-event revenue week in our history. We broke records at the location* and corporate level.

These included…

• All venues combined = biggest revenue week ever (+12%) AND biggest single-day ever
• Chiswick truck = biggest week in 6 months AND 3rd biggest single-day ever
• The Gessner = new record week (+5%)
• Apo Kew Bridge = 2nd biggest week ever

Our company mission is “Simply brilliant coffee, where you’ve always wanted it, served by the world’s best”. These numbers validate our ambition. Here’s why. 

Two of these venues are non-traditional, hidden locations. One is a tiny coffee truck on a suburban street. Unlike High Street retail, the positions of our businesses don’t make them successful…our team does. 

We’re turning spaces into places. To see records broken after so much work is the very definition of uplifting for me, the family and our business.

“Oh, you’re not my favourite barista!” ☺️ 

We all have our favourite barista in our favourite coffee shop. Those baristas that fill us with joy (and comfort) when we see the top of their head poking up from behind the coffee machine.

“Yassss, <insert name> is working!” we mutter to ourselves. 

But what’s kinda weird is when you’re not that barista and some folks go “oh, you’re not <insert name>”. I guess all that barista can say is “Ummmm, nope sorry!”

Another profession that also experiences this is hairdressing. Customers will often wave away the next available chair so they can wait for their favourite guru. 

Don’t worry, we don’t take it personally. It’s awesome to have your favourite because it means you’ll walk past other coffee shops just to come to ours. 

But fun tip, maybe don’t say it out loud if they’re not working that day 😝

Pink lemonade and chips. 

Before I built Dear Coco, our family was really struggling financially. What I mean by that, aside for some rainy day savings, we were broke. 

I wasn’t earning enough to support a family of five living in West London. We were going backwards and every week was a struggle. I’d work during the day and bartend in secret at night, earning £7 an hour after tax. 

For my middle daughter Lani, going to a pub to watch a simple game of Premier League Football with dad was her idea of perfection. 

We couldn’t afford to buy anything at the pub so I’d buy a can of Guinness at the corner store for £1.69. We’d stand in the pub carpark and pour it into a Guinness glass I stole from the pub weeks earlier. We’d sneak it inside under my jacket so I looked like a paying customer. Lani would drink water. We wouldn’t eat. 

We’d sit there watching the game. I’d quietly watch Lani with tears in my eyes thinking how badly I was letting her down. 

Years of exceptionally hard work later, we now go to the pub together to watch the football. I buy a Guinness from the bar, and I get Lani a pink lemonade and chips. It feels like a real treat. 

I sit there quietly watching her, again with a tear in my eye. Not because I’m sad, but because I feel like the richest man on earth. 

Humble things born from difficult times can be disproportionately powerful. I will NEVER forget those times. They drive me forward with urgency.

Sometimes, just sometimes a great idea is sitting in plain view, but no one’s seen it. 

A beautiful little coffee truck along the hallowed turf of Strand-on-the-Green was that moment for me. 

Late 2020, I’d walk along SOTG every night, sit on the river wall and stare at a patch of road. I must have looked seriously suspicious. 

I’d romanticise a coffee truck sitting right here, in front of the stunning steampacketchiswick pub. I wondered how no one else had thought of it yet.

It turns out they just didn’t see it. 

Over 4 years later I still pinch myself that we get to call this special place our origin story. It’s unlocked a new future for me as Founder, added 3 more venues to our portfolio, with many more to come. We employ the most amazing humans and hopefully give them great memories. We’re part of a beautiful community. 

It turns out all this was in plain view, but I was the only one who saw it. Damn I’m grateful.

What is an “influencer”? I still don’t know even though I won Coffee Influencer of the Year at the London Coffee Festival this year. 

Here’s why I’m unsure. 

A mate of mine tipped me off that an “influencer” (who I actually spent some time with last week), was throwing shade back in May after I won the award. He was also an award finalist. 

According to his Insta stories, he was annoyed he lost the award to someone who wasn’t a “proper influencer”. He also had an issue with me securing investment to grow the business, and referred to me as a millionaire (I wish).

So this got me thinking about what an influencer actually is. 

This chap spends his time trying to influence people into visiting certain coffee shops to buy things like Açai Matcha Lattes. Totally cool if that’s your game, we all need refreshment. 

I guess the influence I want to achieve is inspiring regular people to either pursue their coffee dream, or run through walls to achieve another. My thing is building in public and telling entrepreneur stories from the front lines. I’m building physical things with real people, which is hard. 

I don’t know what approach suits the title of influencer more. But if I have the opportunity to inspire life-changing moments or sell green icy drinks, I’m happy in my lane, “influencer” or not. 

Happy influencing, Influencers. Whatever your lane, give it your all and don’t throw shade. We’re all just doing our thing.

I reckon that’s the percentage of time a coffee shop owner or manager spends thinking about or physically managing people stuff. 

Team members cost the business around 25% of net revenue (the highest single expense line) but represent 100% importance to the business (our biggest asset and competitive advantage). 

Although blanket policies can keep everyone marching in the same direction, people are beautifully complicated and need leading individually.

There’s personal and professional things at play constantly. Leaders ignore the urgency of the team getting what they need at their peril. If the team isn’t humming, the business can’t hum. 

People come and go, of course they do. No one stays forever. All I want for Dear Coco team members is to join, stay and leave knowing they were led well, with care. That’ll do me just fine.

These are the hard days.

It’s 5.10am and rain is smashing the house. Yesterday was a 17-hour day. I’m physically depleted and mentally fatigued. It’s dark and all I want to do is stay in bed. 

No one is watching, no one will care - so just stay in bed, you won’t even break even financially today. 

But there’s a coffee truck to open. People are watching, people do care, I care. My girls are watching. My dad is looking down. 

Get up now and I’m uncommon. Stay in bed and I’m common. This, right here is why I’ve made it this far - by doing the hard things no one else wants to do. 

If I don’t do it I’ll beat myself up all day - that’s way worse than just getting on with the job. 

These are hard days but they NEVER win. Ever. 

Go tackle your hard day, friends. Be uncommon.

Have you ever been in trouble, and someone who’s capable of helping you, won’t? You then end up suffering way more than you needed to when help was available.

The process of re-securing our Chiswick street trading licence was just like this. 

In July I made an administartive error by not submitting our new licence application early enough to accommodate a new council policy for 28 day community consultations on licence renewals. I own this mistake wholeheartedly 

This meant we had a gap of 2-3 weeks between our old licence expiring and the new one being granted. 

Council is within its statutory power to issue short-term street trading licences without any community consultation to cover these sorts of situations. I begged and pleaded, going all the way to the Council CEO and local councillor, yet they ignored my request. 

As a result I needed to manufacture a private land deal so we could at least keep trading to avoid furloughing staff. Sales were materially impacted by moving the business. 

Councils exist to serve the interests of the communities they serve. This particular policy from council feels extremely anti-small business.

I’m now lobbying for a change to council policy to remove 28 day consultations for 6 month street trading licences for long-term traders with clean compliance records. 

Exposing established small businesses to 28 day community consultation every 6 months is bananas. There are other ways to punish traders who fail their licence obligations, so why punish everyone every 6 months and over-consult the community.

Have you ever noticed when you walk into an international airport, time zones of all a sudden vanish. Folks drink beer in the bar at 8am chanting “it’s midday somewhere”.

It’s an example of an environment where you don’t behave the way you typically behave in the outside world. 

Hospitality can also be a bit like that. 

When faced with an experience they don’t entirely like, some people find it appropriate to talk down to service people in a way they never would in the outside world. If they did, they’d likely start a fight. 

To compound the imbalance of power, service staff cannot and will not defend themselves to their rightful extent for fear of losing their job. So they take it. 

What’s left is a weird offset of power. Customer and service staff member both behaving like they NEVER would in the outside world. One punching down and the other barely defending themselves. 

There’s the age-old example of always do job interviews in hospitality environments to see how the candidate treats people in service roles. That’s their true colours right there. 

This is the second post in a row I’m talking about unruly customer behaviour because it happened to my team again yesterday 😡

I gotta tell ya, being the owner puts me in a privileged position. I have the authority to tell disrespectful customers exactly what I think, ideally discouraging them from returning. I can also forbid them from returning.

If only these situations could happen when I’m in the venue, the unruly customer would leave feeling quite different I assure you.

Would you ever confirm an Uber ride, take the trip and then argue with the driver about the price? Likely not - you tapped ‘Confirm’ of your own free will. 

Yesterday we had a person come to our Chiswick truck and do the coffee version of that. 

This woman looked at the menu, ordered a flat white and when the barista processed her payment of £3.60 she laid into her.

She screamed blue murder that the cup was way over-priced. She said we can’t even justify it by providing toilets, an indoor space or air conditioning. She stormed off saying it better be good or else. 

Sorry, what?!

Who in their right mind behaves like this. She left our barista feel really battered.

Firstly, when prices are displayed right in front of you and you don’t agree with them - don’t place an order.

Secondly, you’ve knowingly come to an outdoor coffee truck. Of course we don’t have traditional coffee shop facilities - we’re an outdoor truck.

Next, our menu prices are under the London average (which is currently £3.65 for a flat white).

Lastly, just be cool. Complaining about the price of something you weren’t forced to buy after you’ve bought it is bananas 🍌

Sadly our “No D^*k Head Policy” was violated yesterday, glad it’s a rare occurrence. 

Time for a Coke and a smile.

In May 2021, when I risked our life savings in the middle of a pandemic to build my dream, I promised my wife Emma one thing. 

“I’ll build us the world’s best coffee truck”. 

Of course there’s no such thing as the best - so many people do incredible things. But our little truck sure is beautiful. The coffee ain’t too shabby either ☕️

Mums (and dads) know this feeling. Pausing or abandoning a paid career to raise kids. It’s a privilege but also extremely challenging. 

The feelings of guilt for not “financially contributing” even though raising a family takes paid and unpaid effort. Losing connection with your industry, losing colleagues, having the re-train to re-enter and massive loss of confidence. 

It’s a big deal to raise kids and the reality is it comes at immense cost, in many areas. 

My gorgeous wife of nearly 20 years Emma recently made the decision to re-build her career and re-enter the workforce. 

She set her dream on becoming a pastry chef in a 5-star hotel. She wants to work in an elite environment and transform herself from advanced home baker / cookbook author / recipe developer into a world-class pastry chef. 

Yesterday she did it!

She secured her dream job as Pastry Commis Chef in one of Europe’s finest hotels in Mayfair. She did cold job outreach, impressed her way in the door and won her dream. 

To say we’re proud of her is an understatement. She won this opportunity by backing herself and confronting fears.

THANK YOU Chef Emma for the 10+ years of sacrifice to raise our 3 angels. You’ve made them truly world class people. Now it’s your turn!!
