Post vacation / rentrée (re-entry) PICS 😌

Picked a massive amount of figs in Provence and spent two-days making jam. And with that jam, I made this easy jam tart (the easy tart and jam recipe is in my new book Ready for Dessert - which is out in two weeks and you can preorder your copy now!🎉🥳) I served the tart with fig leaf ice cream 😋

Pickled the fresh chiles 🌶️a farmer gave me in the south of France, which are quite spicy🔥, and I think she was very happy they were going to an appreciative home😀 and now I’ve got enough pickled chiles until I see her again next year. Hopefully.

In spite of what the internet/social media says, oat milk is available in France (and no, you won’t get yelled at if you ask for it), although it’s not everywhere. But this was at a highway rest stop ☕️ 🚗🚙

The fantastic façade of monoprix supermarket in Arles

When we came home, almost all the figs on our tree were mysteriously gone. There are literally 5 or 6 figs on it, and whoever (or more likely, whatever🐦‍⬛) took them, left us one (1) very nice one.

Considering how brutal and relentless the mosquitos are in France, it’s surprising that window screens are non-existant. I know the windows are often odd sizes but anyone know why screens aren’t more in use in France?🤔

I waited for this one to move, before I got to “go” 🐸🐸

It’s been 3 days since I sat here, and I’m missing it. When can I go back!?!

Last meal of vacation, at a highway rest stop on the A6 - Jambon à l’os (ham cut from the bone), haricots verts and frites with a madeleine for dessert, but no coffee since I didn’t realize that I had to put my own cup under the spigot until it was too late…😆

One of my favorite markets in France is the outdoor market in Olonzac. While it’s not sprawling in size, most of the stands are manned by the farmers, who sell what they grow, plus a kind gentleman who makes jam from berries and figs. (I never buy jam because I make my own, and *only* buy his🥰😊) The goat and sheep milk cheeses are phenomenal as well, especially the unnamed cheese in the last slide. (A wheel of it may be coming back to Paris with us…🧀😋)

When traveling in the south of France we often stop at Portuguese truck stops to eat, and-or shop (many sell Portuguese food and wine for the truck drivers.) The people are always very friendly and the food is copious!

After lunch we ended up buying a few bottles of vinho verde, a refreshing light wine for summer from Portugal, although it’s usually white (I’ve never seen blue…until now!)😃

One of the best parts of summer in France is being out in the countryside and going to the markets where the ‘producteurs’ (producers) sell what they grow, and produce. 

At the small market in Mareuil in the Périgord today the producteurs had really beautiful locally-grown fruits including melons and strawberries🍓, bottles of richly flavored walnut oil (a specialty of the region), local honey, tiny, colorful plums, vibrant heads of lettuce🥬, and baskets of this season’s crop of garlic🧄 

Almost makes me want to move to the countryside!🥰

Summer always makes me hungry for Brandade, the classic dish from the south of France made from salt cod, potatoes, olive oil, garlic, and a little cream. It’s great for lunch or dinner on a beautiful day along with good bread and a salad. It’s also a great do-ahead dish, too😊

I make it from the recipe in my book MY PARIS KITCHEN but found this already de-salted salt cod so I used that, and skipped that step.😅🐟

To make it: Simmer 1 pound (450-500g) de-salted salt cod pieces with 2 very large potatoes, peeled and cubed, along with 1-2 bay leaves, until potatoes are tender, ~30mn. Meanwhile bring 6 thinly sliced cloves of garlic with 1/2c (125g) olive oil and sprigs of thyme to a boil. Turn off heat and set aside.

Drain potatoes and cod and remove any bones when cool enough to handle. Mix fish and potatoes in a stand mixer, or by hand, with the garlicky oil (pluck out thyme first) and 3/4c (180ml) cream until everything is well combined and the texture is a chunky paste. Season with pepper (I used this amazing white pepper I got in Vietnam), and salt if needed. Spread evenly in oiled or buttered 2qt/2L gratin dish and bake at 400F/200C until heated through and top is brown, about 20mn. Eat!

It’s funny because as a baker, one of my most widely made recipes are these Caramelized ribs. They’re baked in the oven, so they’re possible to make in any size kitchen (no grill necessary), and have a rich, shiny glaze of dark brown sugar, beer🍻,caramel, soy sauce, bourbon and for this batch, I added a soupçon of fish sauce (the best! from redboatfishsauce). They were part of a summer dinner last night with some terrific friends…which were accompanied by some very nice wines, too - and the evening ended at 1:30am 😃🤗🥱🤕

Fresh corn isn’t really a thing in France; most of it is grown for animal feed🐷. But every once in a while I come across fresh ears that don’t look dry and tough😆🌽🌽…and yesterday was that day, so I bought two ears (€2.20/$2.75 each) and figured they were a low-risk deal for dinner☺️

After cooking them in the microwave, a tip I learned from elisebauer 🥰 (it makes getting all that pesky corn silk off a breeze, and there are no pots or pans to wash🥳) we swiped them with lots of  salted French butter from Brittany, sprinkled them with fleur de sel…and they were actually pretty good. Not as good as the sweet corn from farm stand corn that I ate growing up, but it was a bit of the taste of summer that I’ve been craving and missing😇 - and Romain loves fresh corn too! 🇫🇷🇺🇸

It’s been a summer weekend (i.e.; 4+ days) of Breton pastries in Brittany with a few flaky, buttery caramelized Kouign amann pastries, as well as thick crêpes made with applesauce in the batter (a specialty of the region we’re staying in), and delicious Far Breton, prune custards, very much appreciated, enjoyed at the beach after a brisk swim in the icy water 🌊🥶🏊‍♀️😅

One thing that’s been wonderful to watch over the years is how much fun people have making ice cream, whether it’s at home or in the ice cream shops that have opened around the world.

One of my favorites in Paris in glazed_paris where henriguittet makes all sorts of creatively fun flavors, such as this Black Sesame Ice Cream featured in his new book, La Glace de Nos Rêves, and since Romain’s new favorite flavor of ice cream is Black Sesame, I had to make it.
