#ChaseSapphirePartner | I sat down at kabawa tonight for a special dinner. The evening, brought together Kabawa’s Chef Paul Carmichael and Chef Carlo Mirarchi of robertaspizza and thefoulwitch, consisted of a four-course feast that blended both chef’s distinct culinary perspectives.

A few years back, reneredzepinoma pulled me aside and said something I’ll never forget: Paul Carmichael wasn’t just one of the best chefs in Australia—he was one of the best chefs in the world. At the time, Paul was running Seiobo in Sydney, and what he did there changed how a lot of us thought about fine dining. René saying it out loud confirmed what many of us have known for a long time—especially those who’ve tasted Paul’s cooking or worked alongside him over the past twenty years: Paul Carmichael is, and always has been, one of the very best.

Now he’s doing it again in New York City with Kabawa. And people are finally catching on. He’s getting the love he deserves, with raves from grubstreet matthewschneier and a killer new review by helenr in newyorkermag.

Kabawa is Caribbean food. It’s smart, soulful, and ridiculously tasty. But don’t overthink it—just show up hungry and let the food do its thing. It’s fucking delicious.

What makes Paul special isn’t just the food—it’s how he runs a kitchen. He’s a teacher, a team builder, the kind of leader who lifts everyone around him. And somehow, through it all, he stays humble, generous, and just an incredibly good dude.

I’ve learned so much from Paul, and it’s been amazing to see him build something this personal and powerful. He deserves every bit of this attention—and way more.

Go eat at Kabawa. Bring friends. Tell people. (He’s not on social media, so he won’t see this anyway.)

Kalbi-jjim (갈비찜): A beloved Korean braised short rib dish, but my mom’s version was legendary—the kind friends and family would invite themselves over to eat. She never wrote down recipes, so here I am winging it again. She always cooked it outside, on this tiny portable stove perched precariously on a shaky, fragile glass table, somehow supporting a giant oval steel cauldron filled right to the meniscus with 20 pounds of bone-in short ribs. She stirred the whole thing using the same beat-up plastic ladle every single time, and honestly, the whole setup always looked like it was seconds away from toppling over—but it never did. It never made sense how perfectly seasoned her ribs were, or how she kept them tender but never falling off the bone. She seemed to be cooking at a full boil, yet everything stayed at the perfect simmer. Even the lid was always just slightly off-center—her secret trick to getting the perfect reduction of the braising liquid. The whole thing defied culinary logic. Her cooking always felt like magic.

Me, I went boneless ribs (I know, I know), used apple juice instead of fresh Korean pear juice, and made a few other questionable calls. Flavor’s close, but I’ll never fully match hers. This is the first real dish I’ve cooked since surgery over five weeks ago, and I wanted my kids to have something my mom definitely would’ve cooked for them. An hour before going live on nflonprime for the Black Friday game, I followed rsherman25’s advice and added bacon to the Wedgebuster—the ultimate leftover Thanksgiving sandwich for the MVP of the game. We had allergy-friendly options prepped for players who weren’t fans of mayo or other ingredients…but who knew 🥓 would be the issue… or that snap to Aidan O’Connell or that sherm would sabotage me. Every day, I pack up this lunch box and send it off. We go through our routine, and it’s great. But you know what the best part of my day is?
