- Soup Season is Here! 🍂🍁 Over the next couple of weeks I will be sharing some of my favourite soups to make this autumn. Episode 1 - Roasted Tomato & Harissa Soup This isn’t your average tomato soup… One spoonful and you’ll never go back to plain tomato soup again. The secret? Rose Harissa it adds a smoky & spicy kick. Roasted Tomato & Harissa Soup What you need * 1.5 kg Mixed tomatoes * 1 tbsp belazu_co Rose harissa paste * Olive oil * 1 garlic bulb * 1 onion finely sliced * 1 tsp sugar * 200 ml vegetable stock * Salt & black pepper What to do: 1. Add your mixed tomatoes to a baking tray & spread them out. Drizzle olive oil over them. Then season with salt and pepper. Chop the head from the garlic bulb, drizzle with oil, then wrap it in foil. Place the garlic onto the tray with the tomatoes and roast for 50 minutes. 2. Heat olive oil in a large pan over a medium heat. Add the onion & a little salt. Fry for 10 minutes until soft 3. Squeeze the roasted garlic into the pan. Then add in your roasted tomatoes 4. Next up add in your harissa paste, sugar & vegetable stock. Give everything a good stir, then bring to a simmer and cook for 5 minutes, 5. Now add everything to a blender. Blend until it’s smooth. Taste it to see if you need to add any pepper. If you want it less thick add some more veg stock into the blender and blend again. 6. Time to serve up. - Fan of beans on toast? I think beans on toast is one of my favourite comfort foods. I don’t have it enough. You can’t go wrong and it’s really quick to make when you don’t know what to have This is my elevated chorizo & baked beans toast. It might take an extra 10 minutes but give it a try. I used boldbeanco Smoky Chilli Baked Beans for this. Big fan of this company and these are spot on. Love that they’re made using natural ingredients & no artificial additives. Paired with chorizo and this is a tasty brunch 👌🏻 Chorizo & baked beans toast What you need: * boldbeanco - Smoky Chilli Baked Beans* * Sourdough * Chorizo sliced. * Parmigiano Reggiano PD * Pickled pink onions * Chives What to do: 1. First you want to toast your sourdough. 2. Slice up your chorizo and cook this for about 5 minutes til it’s a little crispy. 3. Now heat up your baked beans and then add them onto your sourdough. 4. Spoon on your cooked chorizo & some pickled pink onions. 5. Now grate over some parmigiano & finish with some chives. Enjoy! - Come with me to sundayinbrooklyn_ldn for dinner. I normally go for brunch so was great to check out the dinner offering at the Marylebone location. I was really impressed with what was on the menu. What we went for: Starters * Chicken Yuma’s Buffalo Sauce, Fancy Ranch * House croquettes Cauliflower, Mozzarella, Black Garlic Aioli Mains * Sirloin 6oz Steak * Glazed chicken breast + Baked Mac & Cheese + Garlic buttered new potatoes + Green beans & almonds + Black Garlic Aioli sauce + Three Peppercorn Dessert * Sunday pancake™ – single Hazelnut maple praline, brown butter * Apple cake Cocktails * Sunday espresso - Mezcal Verde, Banana, Espresso, Vanilla Bean * Orchard margarita - Seedlip Grove, Green Apple, Celery, Pandan, Lime, Pink Peppercorn, Salt Both of the starters we had were really tasty. The House croquettes were something different. The mix of Cauliflower, Mozzarella & Black Garlic Aioli really worked. The signature hazelnut maple praline pancake was one of the nicest pancakes I’ve had in a long time. Though boy is it filling. Definitely recommend sharing one. It’s a must.
