Being a leader is a lot of the times, seeing where talent and interest lie in individuals and building the safe environment for them to grow so that they can find what truly resonates with their own professional and creative journeys. I know most chefs & owners don’t /shouldn’t see their employees as their kids, but I have never lead in an orthodox manner and she is my kids age! Watching jaidensteele_ bloom and gradually becoming who she is destined to become is a beautiful privilege as a leader. One of the most articulate, strong and mature souls on my team. Ever wanted to know how to make homemade chamoy? Here it is. 🍑🌶️ Sweet, tangy, and just the right amount of heat—perfect for fruit, rim dips, or anything that needs a little kick. Ingredients: 1 cup dried apricot
1 cup of prunes 
1 cup hibiscus leaves
3 cups of water 
1/2 cup of sugar
1 pinch of salt
1/2 cup of chili powder (korean gochugaru works great) in bar closet
1 orange 
3 limes Instructions: In pot add water, dried apricots and prunea with hibiscus leaves. Cook for 10 min on medium heat Remove from heat and Strain (reserve liquid). blend everything together until smooth (use reserved liquid if needed and pour back In pot. Add sugar, salt and chili powder, stir over low heat until sugar dissolves. Remove from heat to cool completely. My baby is 20 today😭 the truest ride or die a mom could ever ask for. Her middle name personifies everything she is and the tough lessons that it comes with. Love is my biggest teacher and if you’ve been in her company and she has felt safe around you, you’ve seen her magic. The best judge of character, if she warns me of someone, it’s always 100% true. When I say, I am my ancestors wildest dreams, it’s not just a cute bumper sticker tag line. I come from a long line of healers, painters, sculptors, poets & musicians. None of whom were able to foster their creative souls, instead raised children, worked factories, fields, cleaned houses, waited on men who never saw them, etc. I remember watching my Tía Lili spend weeks on her Faberge eggs that were made from dried egg shells and sculpted over and hand painted. Or going cross eyed painting the bust of Queen Nefertiti and King Tut. My abue would sit and sing with my uncle the songs he had written. The drawings my mother drew for me as a baby, I remember vividly, most lost to time and abrupt life changes. I’ve been writing since I was a kid. (Proud of my Hemingway poetry prize in 7th grade). To have a poem that I wrote be read by hundreds, week after week is just one of the ways that I can honor my ancestors. Thank you to dsngdbyv for turning my poem into art. How to add to bajaleu legit vinyl record collection and be worthy of sharing space with the artists of said records. Chefs spend more time in their restaurants than their own homes, our friends come and visit us at work, or they would never see us. That’s the beauty of food and being the caretaker of a space, we can inject it with warmth with our energy, intention and details. I obsess over the things most people dismiss. Type of soap/lotion, candle smell in bathroom, check presenters (pause to read the poem Jeff mentions, written by me/designed by dsngdbyv), dessert vessels, vintage tableware (shout out foundaroundgrl ), chiclets in the bathroom and mouthwash, emergency pads and tampons for the girlies.
