If you’ve lived in the RGV, you know we’re blessed with some of the best taquerias north of Mexico. Living in NC, I truly miss a legit taqueria—IYKYK. On my recent visit to the 956, analiz_taqueria was at the top of my list. South Texas’ James Beard Award-winning taqueria was everything I imagined and more. 2024 Best Chef Texas, Ana Liz Pulido, grinds her own corn for the maize tortillas used in her delectable tostadas and tacos. While the tortillas are the star, the fresh ingredients are equally hard to overlook. Y’all, this place is special. Nestled in a small shopping center in Mission, the parking can be a bit of a challenge, but it’s worth it. The staff is friendly, and though there was a wait, it was totally justified. Since I was in full foodie mode, I had to sample a variety to give a full review. Here’s what we ordered tonight: Flautas Baked Potato with fajita Blue maize Vampiro with fajita Chile Relleno Taco on a yellow corn tortilla The Copy Mom’s picks: Tijuana and Discada Sister’s picks: Empanada and Quesadilla con fajita Verdict: IMPRESSED! As a blue corn maize fanatic, I’m obsessed with the “Vampiro”—a blue corn tostada with a cheese crust, guacamole, pico de gallo, and fajita. I’m also smitten with the “Copy,” a half yellow corn, half blue corn tortilla with fajita, grilled onions, fresh cilantro, and onions. Don’t miss out on the beautiful assortment of fresh salsas and Mexican style sour cream that come with every meal—try them all. Some salsas are spicier than others, but all are addictively delicious. Valley folks, you’re lucky this taqueria is just a short drive away. And if you’re a taco aficionado visiting the area, this Mission, Texas taqueria is a must-visit. Ran into this lovely cityofsantafe shop that sells both chocolate + cashmere. Their artisanal Bon Bons are made at their Santa Fe kitchen using local and organic ingredients when possible. Today I hosted a foodbankcenc IG takeover for Hunger Relief Day at the ncstatefair. For the fourth year in a row, I had the honor of chronicling the day and sharing important facts about the Food Bank CENC. If you are planning on going to the fair tonight, you still have an opportunity to donate 6 canned goods in exchange for free entrance to the fair. I’ve always wanted to share a brief post on the importance of giving. I started giving a monetary donation to the charity of choice after my first official job out of college. While the donation at the time may not have been significant, I made it a point to donate monthly. When I was able, I also donated my time or participated in fundraisers in support of one or more organizations. Whether you donate money, your skills, or your time, I feel it is important to support an organization that is close to your heart. I am in awe when I read some of the Food Bank CENC statistics, including the amount of annual donations that they receive and the amount of people they serve in the community. In addition to being humbled by this experience, it pulls my heartstrings to learn about food insecurity and how a large portion of the afflicted are children and the elderly. One of my favorite summertime dishes is a simple and delicious nacho tray. It’s easy to make and perfect for sharing. I can’t decide what I like more, Cocktails 🍸 or Cake 🍰? After years of driving by Maximillians Grill & Wine Bar on Chapel Hill Rd. in Cary, I finally went with my friend ejdevita for a Taurus Celebration Dinner. Everything was fantastic. If you are a Martini-lover, try the Max Martini with blue cheese stuffed olives 🫒. My fellow Taurus introduced me to Martinis on the Rocks and I don’t plan to have a Martini shaken or stirred anymore. Maximillians makes all of their gelatos and desserts in house. If the Coconut Cake is on the menu - order it! It’s been one month since I had a slice of this dessert and I am still dreaming about it. The Pei Mussels are another must. Focaccia accompanies the mussels to soak up the delicious seafood broth. Pure Vegan Cafe is a juice and vegan food restaurant focused on using high quality, healthy ingredients to create premium juices, smoothies, and 100% vegan food. I visited their 8369 Creedmoor Rd. location in Raleigh after work last week and sampled their delicious plant-based menu items. While I am not Vegan, I do follow a diet rich in vegetables and fruits. Some of the food I sampled included the Banana Toast Crunch, PVC Tiki Burger, Chipotle Bowl and Novid Orange juice. I could not stop eating the PVC Tiki Burger. It is made of potatoes, peas, carrots and spices topped with lettuce, tomato, avocado, microgreens, chipotle mayo & honee mustard. In addition to the flavors, I like that I could see the veggies in this burger. It wasn’t a patty of mashed or compressed vegetables. I also enjoyed the Chipotle Bowl Salad made of romaine, black beans, avocado, quinoa, pico cashew dressing and cilantro dressing. Do not leave purevegancafe with out trying an order of Sweet Potato Buffalo Ranch Fries! Desserts are an essential for an Easter banquet. If you’re looking for something different to grace your table, let me introduce you to the Chardonnay cake. It’s a little reminiscent of a Rum cake with the exception of a couple of ingredients including Chardonnay. IMO, this is a crowd pleaser. The cake is also a great dessert to make ahead. In case you’re in a frenzy trying to gather up a couple of last minute Easter recipes, I have a couple of food and drink suggestions for your Easter banquet that I will be sharing this week. I love this Sweet Potato Casserole with Pecans Topping recipe, because you can actually make it a day in advance - plus, it’s one of my favorite sides. This can be prepared in advance (details on the blog). If you prepare it in advance, all that you need to do is remove it from the refrigerator one hour before bake time. A friend once shared this bomb cake 💥 at a party and it was soooo good. The wholefoods dessert called Mud Cake has three tiers of dark chocolate cake with layered dark chocolate butter cream and is covered in a dark chocolate ganache. One of the bakers added a super cute Galentine’s Day decoration at no additional cost. Best of all, the Mud Cake is approximately $30.
