Pumpkin Overnight Oats 🎃

“I don’t have time to make breakfast” Biggest excuse I hear! These overnight oats took me 5 minutes to make and the best part you make them the night before while your making dinner or during a commercial while your watching tv (and have no time) or while your watching reels (and have no time). You’re welcome! 

Ingredients:
1/2 cup dry oats 
1 scoop protein powder
1/4 cup pumpkin puree 
1/4 cup nonfat plain greek yogurt
1/2 cup unsweetened almond milk or milk of choice 
1 tbsp. Super Seed mix 
Dash of cinnamon 
Dash of pumpkin pie spice 
1 tbsp. Pecans, chopped 
1 tbsp. Pumpkin seeds 

Mix everything together in a mason jar (except for the pecans and pumpkins seeds). Refrigerate overnight. In the morning top with pecans and pumpkin seeds. 

Nutrition profile: 521 calories, 22g fat, 42g carbs, 7g fiber, 6g sugar and 42g protein.

I’ve been using betterbodyfoods super seed mix for years now but then stopped for a while. Well I’m back at it and people have been asking about it so, I thought I’d share.

Babe’s all time favorite dessert is Reese’s peanut butter cups. Specifically the eggs and the trees and the peanut butter to chocolate ratio is 🔥

This recipe makes 6 very large pumpkin molds. Feel free to use smaller molds or silicone ice cube trays. 

Ingredients:
1/2 cup creamy peanut butter
1 tbsp. honey
2 tbsp. almond flour, might need more
3/4 cup lilys_sweets dark chocolate chips 

In the bowl mix together the nut butter, honey and 2 tbsp. almond flour until it forms a mass.

If the dough doesn’t stick together completely, add a little more almond flour, 1 tsp. at a time, until it forms a single, soft mass and the oils are mostly absorbed (it will look matte).

Melt 1/2 cup chocolate in a microwave safe bowl. Pour chocolate into molds. Freeze for 15-20 minutes. add peanut butter mixture to each mold. Place back in freezer for 15-20 minutes. Melt the remaining 1/4 cup chocolate in a microwave safe bowl and top the peanut mixture. Place back in freezer for 15-20 minutes or until the chocolate has hardened. 

1 pumpkin: 261 calories, 21g fat, 24g carbs, 7g fiber, 5g sugar and 7g protein.

PUMPKIN PROTEIN BALLS 🎃

It’s pumpkin season! Let’s get some pumpkin recipes up in here. These little guys are the perfect little snack or dessert. 

Ingredients:
1/2 cup old fashioned oats
1/2 cup quick oats 
1/4 cup canned pumpkin puree 
1/2 cup creamy peanut butter
2 scoops vanilla protein powder (I used optimumnutrition gold standard natural) 
1 tbsp. Honey
1 tbsp. Superseed mix 
1 tsp. Vanilla extract 
1/2-1 tsp pumpkin pie spice
1/4 cup pumpkin seeds 
2 tbsp. Mini chocolate chips 

Mix all ingredients together until well combined. Form into 15 even sized balls. Store in refrigerator. 

Nutrition facts per ball: 126 kcals, 7g fat, 10g carbs, 1.5g fiber and 7g protein.

PUMPKIN CINNAMON ROLLS 🎃

Ingredients:
1 can of crescent rolls
1/2 cup pumpkin puree
1/4 cup light brown sugar
1 tsp. Pumpkin pie spice
1 tsp. Cinnamon 

Frosting Ingredients:
2 oz. Lite cream cheese, softened 
2 tbsp. Plain Greek yogurt
1 tbsp. Honey 
1 tsp. Cinnamon 
Dash of vanilla extract 

Preheat oven to 350 degrees. Grease a 9” pie pan with cooking spray. Unroll crescent roll dough. Firmly press perforations to seal, making it one large sheet. Spread pumpkin puree evenly over the dough.

Evenly sprinkle brown sugar, pumpkin pie spice and cinnamon over the pumpkin puree. Starting on the short side of the rectangle, roll the dough up into a log. Cut the roll into about 8 pieces and place into a baking dish. Bake for 23-26 minutes, until turning lightly golden at the edges. Let it cool in pan for 10 minutes before adding frosting.

Add cream cheese to a medium size mixing bowl. Whisk the cream cheese for a few minutes. Fold in the greek yogurt, honey and pumpkin pie spice. Frost the cinnamon rolls with the frosting and enjoy!

Here are some sneaky ways extra calories can creep into your day and slow down weight loss without you realizing it:

Made this for dinner last week and wanted to share it because it was not only insanely delicious but also super quick and easy to make! 

What your need:
✨8 oz. realgoodfoods chicken strips (cooked in the air fryer)
✨1 box of aldiusa chickpea Mac & cheese (only used 1 tbsp. of butter and 1/4 cup of milk and cheese packet to make it)
✨2-3 cups of broccoli tossed sprayed with 1 tbsp. Olive oil, pepper and roasted at 425 degrees for 12-15 minutes

My FAVORITE combo ⬇️

✨1 cup chocolate fairlife milk + 3-4 tbsp. Additional for re-spin 
✨1/2 cup whole milk 
✨1 scoop cleansimpleeats chocolate peanut butter protein powder 
✨2 Reese cups 

Mix 1 cup chocolate fairlife and 1/2 cup whole milk. Freeze for 24 hours. Spin on lite ice cream. Add some additional chocolate milk. Re-spin. Add in Reese’s and hit add-ins. 

Nutrition profile for 1/2: 218 calories, 7g fat, 19g carbs, 1g fiber, 16g sugar and 21g protein.

PUMPKIN PROTEIN MUFFINS 🎃🧁

Ingredients:
1.5 cups aldiusa protein pancake mix 
2 scoops unflavored or vanilla protein powder 
1.5 tsp. Baking soda 
2 tsp. Cinnamon 
3 tbsp. Super seed mix (blend of flax seeds, chia seeds and hemp hearts)
1 tsp. Pumpkin spice seasoning 
15 oz. Can of pumpkin puree (not pumpkin pie mix) 
2 eggs 
1/2 cup honey 
1/4 cup plain Greek yogurt 
2 tbsp. Coconut oil, melted 
2 tsp. Vanilla extract 
Optional add ins or toppers; chocolate chips, nuts or seeds (we used lilys_sweets chocolate chips & pecans) 

Preheat your oven to 375° and line a muffin tin, 12. In a medium bowl, mix together the pancake mix, protein powder, cinnamon, pumpkin spice, and baking soda. Set aside. In a separate bowl, whisk together pumpkin, honey, eggs, oil, Greek yogurt, and vanilla. 

Add the dry ingredients and stir until combined. Fold in optional add ins. Divide the batter evenly between 12 muffins. Sprinkle with optional add ons. Bake for 20-22 minutes or until a toothpick inserted in the center comes out clean. Allow to cool, enjoy! 

Nutrition profile for 1 muffin: 172 calories, 5g fat, 24g carbs, 3g fiber, 14g sugar and 10g protein.

✨Air Fryer Steak Bites with mushrooms - 1 lb. top sirloin cut into bite size pieces mixed with 8 oz. Sliced mushrooms, 1 tbsp. Butter, 1 tsp. Worcestershire sauce, 2-3 garlic cloves, salt and pepper. Air fry at 390 degrees for 10-12 minutes. 
✨Mashed Sweet Potatoes - 3-4 medium-large sweet potatoes. Washed, poke with a fork, wrap in damp paper towel and microwave for 12-15 minutes. Remove the insides and mash with 1-2 tbsp. Butter, salt and pepper. 
✨Salad Kit (or any other veggie you like).

Five ingredient meal idea ⬇️

✨Salmon 
✨Pasta, I used barilla protein pasta 
✨Broccoli 
✨Pesto
✨Parmesan cheese 

Preheat oven to 425 degrees. Toss broccoli with some olive oil and pepper. Place on prepared baking sheet. Add the salmon to the same pan. (Topped the salmon with some pepper.) Bake for 12-15 minutes. Cook the pasta according to directions. Drain. Mix pasta with some pesto and Parmesan cheese. Mix in some broccoli and salmon. Top with some additional Parmesan cheese. Enjoy!
