HALLOWEEN GHOST BAKES 👻

Jam or chocolate, sweet or savoury fillings. These are adorable ghosts, to be filled with your liking. We are making ours with a heart-shaped cutter, straw and a piping tip to create these cute ghost shapes 👻

Ingredients supervalu_irl 
shortcrust pastry jus_rol 
Powdered sugar, for dusting
Any flavour of jam for filling, we are also using bonnemaman_irl Hazelnut Chocolate spread 

Method:
��Preheat your oven to 180 C (160°C for fan assisted ovens) Gas Mark and line a baking sheet.
���Roll out dough, use a heart-shaped cookie cutter to cut out shapes, then cut each shape in half. For the eyes, use the small end of a piping tip or we used a straw to make a bit bigger to create two small holes. For the mouth, use the larger opening. Gently tilt and press the cookie slightly at the bottom end to give it a ghost-like appearance. Do this to half the shapes.
Spread the rest of the shapes with your fillings of choice and then place the face shapes on top.
���Bake for 10-12 minutes until golden.
���Cool on a wire rack.
���Dust cookies with powdered sugar and enjoy!!! 😊

MONSTER MOUTH APPLE TEETH 👹 

It’s coming up to our favourite time of year again 🤗 🎃 We love making these every year and they are the easiest treats to put together!!! The sweetness of the marshmallows will make kids overlook the healthy apple and peanut butter these are made with 🙏

First start by cutting the apple into slices. Then cut them into smaller slices. 
Now you want to put about a teaspoon or two onto each slice. 
Then put a row of mini marshmallows ( picked up supervalu_irl ) across one apple slice. Then sandwich them together. Press firmly until they stick and you have your teeth! 👹🤗

This was one of the most beautiful walks I’ve ever taken in my life, right in the town of Rovaniemi along the riverfront. Not many people mention it, but it’s truly one of the most breathtaking walks — so peaceful, with the stunning winter landscape all around. ❄️🌲 We stayed in In the town of Rovaniemi our first night, and the next morning walked along the river at sunrise — an unforgettable experience I’d highly recommend. 

From there, we moved on to santaclausholidayvillage where you’re right in the heart of the magic — we stayed in one of their beautiful cosy lodges located right on the Arctic Circle in Rovaniemi, Lapland (Finland) — and it’s often called the “official hometown of Santa Claus.” It’s a magical destination where you can:

LEEK & POTATO SOUP | ONLY 210 KCALS 
Just so quick & simple to make, healthy and so satisfying for a little comfort on a cold day. 

INGREDIENTS
Frylite spray or 2 tbsp oil 
3 leeks
5 medium potatoes
1 medium onion
3 cloves of garlic
1/2 Tsp Cayenne pepper 
1 1/2 litres of Chicken stock
100ml low fat milk 
Salt & Pepper

Method 

Spray Saucepan with fry lite for slimming soup
Or otherwise use a knob of butter or 2 Tbsp  of oil.
Chop onion and garlic and add to the pan and sweat for 5 minutes
Chop the leek and potatoes and add one the pan along with cayenne pepper & Salt & Pepper.
Add 1.5 ltr vegetable or chicken stock 
Bring to the boil or until potatoes are soft
Add milk 
Blend with a hand blender and

4 INGREDIENTS PUFF PASTRY CINNAMON ROLLS 🤎🍂READY IN 30 MINUTES 🤗 They are most delicious when served fresh out of the oven. Nevertheless, you can still freeze them and bake them later.

INGREDIENTS:
Sheet of jus_rol puff pastry
30g unsalted butter - room temperature
2 Tbsp cinnamon
6 Tbsp light brown sugar

Preheat your oven to 180°C/350°F and line a baking tray with parchment paper.

Im using jus_rol ready-made puff pastry that already has parchment paper that comes with the pastry.

In a mixing bowl, mix butter, light brown sugar and cinnamon together with a spoon until combined.

Unroll the ready-made puff pastry and spread the cinnamon, butter and light brown sugar mixture evenly over all the pastry and then roll like a Swiss roll.

With a sharp knife or a piece of string, cut the pastry approximately 2cm long.

Place them on the baking tray and bake in the oven for 20 minutes. Leave space in-between each cinnamon swirl as they do expand in the oven whilst baking.

Enjoy!!! With a hot cuppa ☕️

MARS BAR SQUARE | 4 INGREDIENTS | NO BAKE
This is the stuff of my childhood and now I make it for my own little girl, we all love them as a delicious treat, it never fails to deliver. 😋 Make sure to hide in fridge 😉

4 INGREDIENTS | NO BAKE
Bag of Fun size mars bars chopped in half (save 3 for popping on top)
60g butter
200g or so of Rice Krispies ( just add little by little until your happy with consistency 👌
2 x Family sized block of Cadbury milk chocolate for laying over top. 

Method:
*melt butter and Mars bars on a low heat
* Add rice crispies and mix well
* Add to tin with baking paper and press down
* Melt chocolate and pour on top
* Add chopped mar bars on top 🤟
* Leave set in the fridge for a couple of hours

Chop into squares when ready. 
Store (Hide 😉) in fridge

Apple pie… for breakfast? Yes please 🍎🥧✨ These overnight oats are pure autumn comfort in a jar 🍂Warm cinnamon apples, creamy oats, pure deliciousness in every spoonful 🍁

Serves 2 | Prep 10 mins | Chill overnight

Ingredients:
80g oats 
( Im loving the themerrymillporridge gluten free oats with Chia Seeds, Organic Sunflower Seeds & Organic Flax Seeds)

250ml oat milk (or milk of choice)
2 apples , chopped
1/2 tbsp brown sugar (or maple syrup)
1 tsp ground cinnamon (plus extra for topping)
½ tsp vanilla essence
2 tbsp yoghurt (I’m using gleniskyogurt natural )

Method:
In a pan, fry the chopped apple with cinnamon and sugar until soft and caramelised.
In a bowl or jar, add the oats and oat milk.
Stir in the yoghurt, vanilla essence, and the warm apple mixture.
Mix well, top with an extra sprinkle of cinnamon, then cover and refrigerate overnight.
In the morning, enjoy cold or warmed up — it tastes just like apple pie in a bowl 🍂🥧✨

Snickers Overnight Oats 👌
Dessert or breakfast - you decide!

Serves 2|Takes 10 minutes

INGREDIENTS:

80g themerrymillporridge Organic overnight Oats

1 ripe mashed banana

1 tbsp maple syrup (optional)

1 tsp vanilla essence (optional)

250ml almond milk

2 tbsp peanut butter

40g dark chocolate

1 tbsp roasted salted peanuts, roughly chopped (optional)

METHOD:

Mix together the Porridge Oats, mashed banana, maple syrup, vanilla essence and almond milk.

Spoon the mixture into 2 jars or glasses and top each with peanut butter.

Drizzle over melted chocolate and sprinkle with peanuts. Leave in the fridge for a minimum of 6 hours (or overnight), then enjoy!

NO BAKE PEANUT BUTTER GRANOLA CUPS 
Stack them high for the Midweek treat, they are dreamy delicious 😋 another Healthy & nutritious snack for the Midweek list and made in only 20 mintues. 🙏
They’re also highly customizable, gluten-free, low-sugar, and vegan!

Ingredients: 
270g cups granola I like to use a low sugar Granola 
200g peanuts-chopped
4 Tablespoons peanut butter or nut butter of choice.
3 Tablespoons Honey (or more if required) 🍯

Filling:
1 cup peanut butter-melted
Topping:
350g dark chocolate
1 Tablespoon coconut oil

To make Peanut Butter Granola Cups, in a bowl combine granola, chopped peanuts, peanut butter and honey. If the mixture is too dry add more honey to get sticky consistency of the mixture.

Grease cupcake pan and divide the mixture in 12 cups. Press the mixture well to hold together and make a dent in the center of each cup. Freeze for 5-10 minutes, until the cups are firm.

Then, melt peanut butter and pour into the center of each granola cup. Now, freeze for another 5-10 minutes, until firm.

Finally, melt dark chocolate and coconut oil and spoon melted chocolate on top of peanut butter. Chill until chocolate has set.

Store in the fridge in air-tight container., or freeze for longer storage.

650g chicken breast
1 large onion
1/2 tsp chilli flakes or 1 fresh chilli (add more to your liking 🌶️)
1 tbsp minced ginger
1 tbsp minced garlic
1 tbsp ground coriander
5 cardamon pods
1 tsp cumin
1 tsp tumeric
1 tsp sugar
1 tbsp tomato puree
400g Tin chopped tomatoes
3 tbsp chicken tikka masala paste (I used pataksuk paste)
3 Tbsp of philadelphia_uki light cream cheese
Handful of corriander for and chilli to garnish

Method:
��Add all the ingredients to the slow cooker, season well give it a good mix then cook for 3 hours on high or 5-6 hours on low, 20 minutes before serving add the Cream Cheese, serve with rice and Enjoy!!!

These OATY BANANA BARS will take you 10 mins to put together with only 4 easy INGREDIENTS and are packed with wholesome ingredients with bananas, peanut butter, and oats, providing essential nutrients including fiber, protein, and healthy fats for growing kids and family members looking for a tasty, healthy treat 👌

Ingredients:
4 mashed bananas
250g peanut butter
300g rolled oats I’m using my favourite Irish brand  themerrymillporridge 
Chocolate chips to ( sprinkle to your liking on top)

Method:
Preheat your oven to 350°F (175°C). Grease or line an 8×8 inch baking dish with parchment paper.
Mash up the  bananas and add the peanut butter, rolled oats and mix well until all ingredients are fully incorporated.

Use a spatula or the back of a spoon to spread the mixture evenly in the dish, smoothing out the top and sprinkle with chocolate chips!!! 

Place the baking dish in the preheated oven and bake for 12-14 minutes, or until the edges are golden brown and the bars are set.

Once baked, remove the banana bars from the oven and allow them to cool completely in the dish before slicing into bars.
