Multigrain rice recipes ⬇️ 

Water: Use about 1 ¾ cups water (or until it reaches the knuckle of the third finger when lightly pressing on the rice w/ water).
Another option: Follow the direction on the rice package and add 2–3 tbsp more water.
Beans and grains absorb extra water while cooking

Cooking: I use cuckoo_america rice cooker with a multigrain setting

Let rice cool for 20-30mins in its freezer-safe container before putting it in the freezer. Add a splash of water and microwave for 2 minutes

Brown rice w/ farro:
1/2 cup farro
2 cups brown rice (I use CJ Barn Barn Mee, which includes brown sweet rice)

1. Rinse farro lightly and soak in cold water for 20 mins
2. Rinse brown rice/sweet rice 5 times in cold water
3. Drain farro, add to the brown rice, and place in the rice cooker pot.
4. Add water and cook.

White rice w/ millet and green peas:
2 cups white short/medium grain rice
2 tbsp glutinous millet
1 handful of frozen green peas

1. Rinse white rice 5 times. Wash millet separately in a fine mesh strainer.
2. Add millet to the rice in the cooker pot, along with the green peas.
3. Spread peas evenly across the surface.
4. Add water and cook.

White rice w/ pressed barley and quinoa:
2 cups short/medium-grain white rice
¾ cup pressed barley
1–2 tbsp quinoa

1. Rinse rice, barley, and quinoa 5 times
2. Combine in the rice cooker pot.
3. Add water and cook.

Kimchi jjim (braised kimchi) recipe ⬇️ 

1 whole aged kimchi (묵은지 / mukeunji)i
1 cup water or Korean-style beef bone broth
Semi-thick slices of pork belly (as much as you’d like)
1 Tbsp mirin (optional, helps mellow the porky aroma)
1/2 an onion, sliced
1 tbsp minced garlic
Garnish: chopped green onions, sliced jalapeño (optional)

Seasoning:
2 tbsp gochugaru (Korean red pepper flakes)
1-2 tbsp soy sauce (I used 2T)
1-2 tbsp fish sauce (I used 2T)
1-2 tbsp sugar (I used 2T)
1 tsp dwenjang (Korean fermented soy bean paste)

1. In a shallow pot or pan, layer the onions, pork belly slices, and seasoning.
2. Cut the whole kimchi in fours so it’s easier to eat it and place it on top.
3. Pour in the water or broth, along with some kimchi brine (I used the entire pack for a saucier dish, but you can add just 2–3 Tbsp for less liquid).
4. Bring to a boil, then reduce to a simmer and cook for 20 mins.
5. Top with chopped green onions and jalapeño slices.
6. Continue simmering for another 10 mins, or until the pork is fully tender.
7. Enjoy it with rice

1. In a pan, melt the butter with minced garlic and tteokbokki sauce on medium-low
2. Stir until buttter has been melted, then add the Buldak hot sauce and mix well.
3. Add the rice and toss until evenly coated.
4. Taste and adjust seasoning with soy sauce if needed.
5. Drizzle sesame oil and sprinkle mozzarella on top.
6. Reduce heat to low, cover, and let the cheese melt.
7. Finish with crushed roasted seaweed

Seasoned radish and cilantro shred is from UMMA recipe book by ahnestkitchen 

Korean chicken soup (dak gomtang)
5-5.5lbs chicken drumsticks
1/2 onion
10 whole black peppercorns
6 garlic cloves, peeled
1 bunch green onions (white parts for broth, green parts for garnish)
Salt, to taste

1. Bring a large pot of water to a boil. Add the chicken drumsticks and simmer until foam rises to the surface, ~ 15–20 mins.
2. Remove the chicken. Discard the water.
3. In a clean pot, add the chicken, onion, garlic, white parts of the green onions, and peppercorns.
4. Pour in 8–10 cups of water,  enough to fully cover the chicken.
5. Bring to a boil, then simmer for ~40 mins or the internal temperature of 165°F (74°C) at the thickest part of the meat
6. Remove the chicken. Strain out the aromatics and save the broth.
7. Once the chicken is cool enough to handle, shred the meat
8. To serve, season the broth with salt to taste, add the chicken, and garnish with the green onion and ground black pepper. Enjoy it with rice and kimchi!

Marinated perilla leaves
1 pack of perilla leaves (~30 leaves)

Sauce:
4 green onions, chopped
½ onion, thinly sliced
2 tbsp minced garlic
6 tbsp soy sauce
½ cup water
2 tbsp fish sauce
2 tbsp red pepper flakes
2 tsp roasted sesame seeds (optional)
1–2 tbsp sugar, to taste

1. Rinse perilla leaves and trim stems.
2. Make the sauce
3. In an airtight container, spread a spoonful of sauce, layer 2 leaves, then repeat with sauce and leaves until finished.
4. Refrigerate overnight before serving.

My typical Korean bfast… Recipes ⬇️ 

Doenjang jjigae (soy bean paste stew):
2 cups water
2–3 spoonfuls doenjang (Korean soybean paste; often found near gochujang)
1 tbsp minced garlic
¼ onion, chopped
2 scallion whites, chopped
½ Korean squash (zucchini works too)
1 can cooked clams (reserve the juice) or sliced pork belly
1 pouch Korean broth powder (optional, but adds depth. I got mine from kimcmarket seafood stock powder sticks)
1 fresh chili pepper (optional)
1 pack firm tofu, cubed
1–2 tsp fish sauce (optional, add at the end if it needed)
1 tbsp cooking oil (or pork fat if using pork)

1. If using pork belly, cook it first in a pot until browned. Remove and set aside.
2. Heat oil (or pork fat) in the same pot. Sauté onions and scallions until fragrant.
3. Add garlic and cook for 30 seconds.
4. Pour in water and broth powder.
5. Stir in the doenjang. (For a smoother soup, dissolve it first in a ladle of hot broth before adding.) Some don’t mind it with the beans and add the paste directly into the soup.
6. Add squash, clams with a spoonful of their juice (or the cooked pork belly), tofu, and chili pepper.
7. Simmer on medium-low for about 15 minutes. Taste and adjust with fish sauce if needed for more salt

Microwaved steamed eggs:
* 3 eggs
* 1 tsp fish sauce
* ¾ cup water or chicken broth (can add a bit of Korean broth powder for extra flavor)
* Pinch of salt
* 1 drizzle sesame oil (for finishing)

1. Crack eggs into a microwave-safe bowl. Whisk with fish sauce, water/broth, and salt until smooth.
2. Skim off any bubbles from the surface.
3. Place the bowl on a microwave-safe plate, then cover it with another plate to prevent spills.
4. Microwave for 4–5 minutes, checking the center to ensure it’s set.
5. Finish with a drizzle of sesame oil before serving.

8-10 eggs
Water for boiling
1 tsp salt
1 tsp white vinegar 

1 cup soy sauce
1 cup water
1/4 to 1/2 cup sugar and/or honey (depends on preferred level of sweetness)
1 tbsp roasted sesame seeds
3 scallions, chopped
1 chili pepper, sliced
1/2 an onion, chopped
1 tsp minced garlic

Adjust the sauce measurement to your liking!

1. In a pot, add water, salt, and white vinegar
2. When it boils, add the eggs and cook for 6 mins and 30 secs
3. Remove and immediately put the eggs into an ice bath
4. Make the sauce
5. Peel the eggs and rinse lightly for any small shells
6. Add them into the sauce, making sure the eggs are almost covered in sauce
7. Refrigerate overnight

I eat them within 3-4 days, refrigerated. I don’t reheat them.

Multigrain sticky rice recipes ⬇️ 

Water Measurement Tip:
I usually add water until it reaches just above my third finger knuckle when placed flat on top of the rice. Otherwise, you can follow the package directions for white/brown rice!

Cooked rice storage tip: Portion into 1-cup glass containers with lids, let cool slightly, then freeze 

Rice cooker: I use an old model cuckoo rice cooker and select the multigrain option.

Bulgogi japchae recipe ⬇️ 

1 pack of Trader Joe’s beef bulgogi
~100g vermicelli noodles for japchae

Veggies: 1/2 an onion, 1 carrot, shiitake mushrooms, 1 tbsp minced garlic, 1/4 of cabbage, 3 stems of green onions. Can also sliced bell peppers and spinach

2-4 tbsp soy sauce (add as needed)
1/4 cup water
Salt
Cracked black pepper
2 tsp sesame oil
1 tsp roasted sesame seeds

1. Heat a little cooking oil in a pan, then sauté onions, mushrooms, and carrots over medium heat until the onions turn fragrant.
2. Stir in minced garlic and a pinch of salt.
3. Add the frozen Trader Joe’s beef bulgogi.
4. Cover with a lid for about 5 minutes to help it thaw and cook through.
5. Remove the lid and add a splash of water, along with cabbage and green onions.
6. Toss in the cooked vermicelli noodles (prepared according to package instructions).
7. Season with soy sauce and cracked black pepper.
8. Once the meat is fully cooked, add a swirl of sesame oil and a sprinkle of roasted sesame seeds.
9. Serve hot over rice—and enjoy!

5. Bring to a simmer and cook for 10 minutes on medium-low heat, or until the rice cakes are soft.
6. Stir frequently to prevent the rice cakes from sticking.
7. Add green onions during the last 5 minutes of cooking.
8. Adjust seasoning to taste (add more soy sauce or sugar if needed).
9. Finish with a drizzle of sesame oil and a sprinkle of sesame seeds before serving

Soon tofu: I buy the pre-packaged BCD soondubu packs at Hmart, found at the tofu section

~1.5-2 lbs Korean or LA-style beef short ribs
Cold water + 1 tbsp sugar (optional) for soaking

Marinade:
1/2 onion, chopped
1 small Fuji apple, chopped
1 cup cold water (for blending)
3 cups cold water (for mixing)
1 ¾ cups regular soy sauce (not low-sodium)
½ cup dark brown sugar
4 tbsp minced garlic
1 bunch green onions, chopped
3 tbsp sesame oil
2-4 tbsp honey or corn syrup (helps bind ingredients)
2 tsp ground black pepper

1. Soak the ribs in cold water + sugar (optional) for 30 minutes in the fridge.
2. While soaking, blend the onion, apple, and 1 cup water into a smooth puree.
3. In a large bowl, combine soy sauce, brown sugar, garlic, green onions, sesame oil, honey (or corn syrup), and black pepper.
4. Add the apple-onion puree + 3 cups water and mix everything well.
5. Drain and gently rub the rib bones to remove any bone fragments.
6. In an airtight container, layer the ribs with the marinade — start with a little sauce on the bottom, add meat, more sauce, and repeat.
7. Marinate overnight (or at least 12 hours) in the fridge.
8. Air-fry at 375°F (no preheating) for 15 minutes, flipping halfway through.

Tip:
Got leftover marinade? Use it for bulgogi! Just keep in mind: the flavor may be stronger since bulgogi meat is thinner and soaks it up faster.
