We hit up Kailash Parbat in Frisco the past weekend, a North Indian/Sindhi chain with a big Mumbai influence. The food was good, and it was interesting to taste the regional variations. The most notable difference was the pav bhaji, which had a distinct tangy flavor, almost like they included some tamarind (quite different from the typical Mumbai/Gujarati styles). The frankie was also a definite highlight, and we enjoyed the masala papad and corn cups. The dahi puri was good but just okay for us (we enjoy it more at Goli Soda!). We also tried the Amul cheese sandwich; it lacked a strong flavor for me, but it could be a hit for people who love the taste of Amul cheese. Did it taste like sambar🤣🤣 NO - shockingly, sambar consists of a lot more than these four ingredients so I guess i’s unfair to assume that it’ll taste like sambar - but I’m there with you in thinking it was different but NO it did NoT taste like sambar! . . Is it even mildly close to what you may call “traditional” (or bombay style) chaat? NO - if you notice no Green chutney, No imli chutney so this is super far from that bombay ragada that we’re all used to!! . . If you’ve had Masala Puri in Chennai or even Nellore areas - this is actually very very similar to that! It’s a niche item - and it’s overpowered by bombay ragada so it’s hard to recall but this recipe is THE TRADITIONAL CHENNAI MASALA PURI!! . . I highly recommend you try it- the ragada battani/vatana in your house will find a second purpose!! And it can be done with minimal ingredients compared to bombay chaat (all the chutneys..) . . Sakhuu Thai in Plano was so nice! The ambiance is really well done—stylish and comfortable. The food delivered too: basil stir fry, fried veg dumplings, yellow curry, and pad thai, all excellent. Let’s talk ratios! My go-to is 1 part white urad dal, 2 parts sona masoori rice, and 1 part quinoa for a yummy, slightly healthier twist. You can try with 1:3 urad to rice or sub out rice for millets, brown rice, do whole black urad dal instead of white. But remember, change it up gradually, because healthier doesn’t always equal ‘original’ deliciousness! Now, the blender. Air is KEY! Wet grinders are preferred for their open tops, but if you’re using a top-down blender, whisk the batter vigorously after blending to incorporate air. Use your hand to help with warmth and better fermentation. And make sure your blender is 550 watts or higher for smooth results. Water usage? Minimal! Add only as much as needed for the blender to spin. Less water equals better batter consistency. For fermentation, you can use an Instant Pot with the yogurt setting. But I prefer the oven method: just turn on the oven light and let it sit for 6-8 hours, depending on the season. Yall this was the best veggie sandwich. This was that FIX ive been craving for over a week - oh my god. I think that there are a few MAJOR things for a good sandwich- a good bread, something for moisture, and something to hold that moisture in place. I wanted a one time thing - so I got a single Bolillo roll from krogerco - for the moisture, i did a good creamy ricotta and of course a squirt of sriracha mayo, and to hold in moisture, i used some sautéd cabbage but man lettuce works great too - i have some obsession with ricotta + zucchini together - so I went that route - lightly sautéing the zucchini also makes it nice warm and juicy! Its really hard for me to put out measurements so Ill try to give tips instead. . 1. Cut your chikkudukayas into small 1/2 inch pieces - larger pieces will not absorb the taste and come out good 2. Be sure to steam them first, they take a long time to cook otherwise. 3. Use fresh or frozen coconut! 4. If you dont have pesara/moong dal you can try other lentils, but be sure to soak/cook for a bit longer as other lentils take more time than Moong. 5. Moisture is SUPER important in this kura, be sure to check in for hydration at all stages- while cooking moong, while cooking beans. I heard all your requests asking for more Vishnu content (cue eye-roll!!) so I found something for yall! Pasta Alla Norma ft Vishnu - he only cooks “extravagant” sounding dishes while I go for a easy simple everyday vibe. But this Pasta is a bit of both so definitely check it out! . Serves 4 Ingredients: - 12 oz pasta of your choice (traditionally, rigatoni or other tubular pasta is used) - 2 medium eggplants, cut into small 1-inch slices (typically, eggplant rounds are used, but we’ve modified it to slices) - 2 cups cherry tomatoes, halved - 3 cloves garlic, minced - 1/4 cup extra virgin olive oil - 2 tbsp chopped fresh basil - 1 tsp dried oregano - Salt and pepper, to taste - 1 cup dry ricotta cheese - Grated Parmesan cheese, for serving (optional) Instructions: 1. Bring a large pot of salted water to a boil and cook the pasta according to the package instructions until al dente. Reserve 1 cup of pasta water before draining. 2. In a large saucepan, heat the olive oil over medium heat. Add the eggplant and cook, stirring occasionally, until it’s tender and lightly browned (about 10-12 minutes). 3. Add the garlic, cherry tomatoes, basil, oregano, salt, and pepper to the saucepan. Cook, stirring occasionally, until the tomatoes have broken down and the sauce has thickened slightly (about 10-12 minutes). 4. If you HATE cottage cheese like I do, but people say it's really healthy so you really want to try it, and you find it on sale - try this recipe! I love making this recipe for large batch cooking! But you can make a simple weekday dinner with this too! To serve 4: 1 cup of cottage cheese 2 tablespoons of tomato paste (you can substitute for 1 cup of roasted diced tomatoes too) Handful of fresh basil leaves 2 tsp chili flakes 2 tsp italian seasoning Salt as needed. I’m just going to come out and say it: hosting Ammamma isn’t always a stroll in the park but I owe a huge debt of gratitude to my parents for shouldering this responsibility with grace and love. It’s not without its challenges, integrating one more person into our nuclear family, making her feel welcomed (the cultural taboo of staying with your daughter doesn’t make it any easier), navigating her very unique quirks (which at times are very amusing but at times can drive a person up the wall), and the general responsibility of caring for an elder - Yet I cherish the opportunities it affords us to deepen our bonds, even as we navigate adulthood. My mom and dad really exemplify what it means to prioritize family with every step that they take. Reflecting on these moments, I can’t help but wish we had the chance to welcome our other grandparents into our home too. The time spent with grandparents is nothing short of priceless for kids. From the stories they share to the wisdom they impart, their mere presence is a treasure trove of memories. Every laughter-filled afternoon and shared meal is a testament to the strength of our family ties. Gratitude fills my heart for these invaluable experiences. And of course, I cannot end this without thanking you ALL immensely! for all the love, care, and affection that you’ve showed towards Ammamma.
