1000 layers upon 1000 layers for one million of you♥️

This is my take on a traditional mille feuille with a chocolate puff pastry and coffee chocolate pastry cream using durosecoffee 

Chocolate and coffee is one of my favorite combos, and I was a little nervous with how the cocoa powder would affect the dough, but it came out so light and flaky! 

If you click the link in my bio, you can find all the tools that I used to make this as well as similar vintage mixing bowls and plates like mine(I just updated my page with new bowls)! And even my outfits☺️ Links are in my linktree in my bio!

Here’s the recipe - makes 4 mille feuilles
Chocolate Puff pastry
25 grams of unsalted butter melted
115 grams of plain flour
15 grams of cocoa powder
4 grams of salt
8 grams of sugar
60ml of water
125 grams of unsalted butter
-Melt the butter and pour over the rest of the other ing except the 125 grams of butter. Mix together till it forms a smooth bowl. Flatten and cover with plastic and place in fridge for 1 hour. Take the 125 grams of butter and flatten it in a parchment square about 12x12cm. Roll out dough to 12x24 cm and place butter in middle then fold over. Roll out dough to about 0.4cm thick then fold in 1/3 like a letter. Rotate dough and roll out again and do the same fold. Cover with plastic and put in fridge for 1 hour. Perform 2 more folds then place back in fridge for another hour, then do another 2 folds for a total of 6 folds. Place in fridge overnight.

The next day roll out dough to a 1-2mm thickness, place on tray, prick all over with fork then place in fridge while preheating the oven to 200C/400F. Before placing in oven, cover with parchment and a baking sheet or pan on top to ensure the dough bakes evenly and flat rather than wonky.
Bake for about 15 minutes, then remove parchment and tray and bake for another 10-15 minutes. You can also dust a bit of icing sugar at the end to get a nice caramelization.
Let cool completely then trim off edges, & cut into 12 rectangles of about 4x11cm.

Never in my wildest dreams, when I started posting videos last September, did I imagine I’d have all of you — the most lovely, supportive, thoughtful, helpful, and encouraging community 🥹

Just a year ago, I was in a much darker place. The city I had worked so hard to call home was starting to feel more and more suffocating. After years of struggling with visa issues and the constant state of uncertainty that causes, on top of working 12–15 hour shifts a day as a pastry chef with little in return, I was starting to fall out of love with Paris and with the life I had once dreamed of.

In an attempt to rekindle that love — for Paris, for France, and for baking — I began creating videos. They became my way of reconnecting with the magic I once felt, and sharing that with others. I wanted to show that French baking isn’t as intimidating or unapproachable as it may seem — that it’s beautiful, simple, and full of joy. 

And more importantly I wanted to show the Paris and France that I wholeheartedly first fell in love with that is often not seen online or often overlooked - not just the overcrowded picture-perfect landmarks or curated café moments, but the quiet streets, the morning rituals, all the quiet towns often ignored, and all the little joys tucked into everyday life. The France that feels like home.

My videos are, in many ways, love letters to the life I dreamed of as a little girl — dreaming of moving to Paris, becoming a pastry chef, and building a life and a family here.

I am so endlessly grateful to have each and every one of you here. If I can inspire even a teeny tiny bit of that magic — of falling in love with the simple pleasures of life — then that’s all I’ve ever hoped for.

Well, it’s officially autumn today, and nothing is more cozy to me than baking a croissant danish☺️🍂

You can definitely make these with premade croissant dough or even puff pastry if you prefer. Now, I know many danishes are baked with the cream cheese filling, but I find the texture a bit strange, so a cream cheese pastry cream is what I make instead to fill after baking, so that the texture remains smooth and silky and the croissant is crispy and flaky!

Recipe for fillings! (I can’t quite give away my croissant recipe for free - I’ve worked many years perfecting her- but soon I will share it!)
 oirf 
Cream cheese pastry cream (enough filling for 12)
160 grams of milk
2 egg yolks
40 grams sugar
10 grams cornstarch
1 tsp vanilla
Pinch of salt
1 tablespoon butter, room temp
80 grams cream cheese, softened

Combine yolks, sugar, cornstarch, and salt. Bring milk to simmer, then pour over egg mixture. Pour this back into pan and continuously whisk over medium heat till thickened and bubbling. Take off heat and add butter. Then add cream cheese. Cover with plastic touching surface and leave to cool. 

Raspberry jam
50 grams raspberries (fresh or frozen)
80 grams sugar
1 tsp of lemon juice

Smash raspberries in pan and bring to boil for 4 minutes. Add the sugar and lemon juice and boil for a further 4 minutes (it should reach the temp of 103C/218F)

1-8. We were invited to the opening of the gardens of domaine.dampierre & we truly had the most spectacular night seeing how the chateau is being restored, the grounds and gardens, and then the incredible light show at night😍

Taking my husband on a bakery date in Paris might just be the cutest thing we’ve done in the city 🥐🥰

We signed up for a croissant & baguette class through klook_usa, and it was such a special experience. Our boulanger Didier from lepetitmitron not only taught us the techniques, but also shared stories about milling his own flour, working with just a few natural ingredients, and keeping alive centuries of bread traditions at his bakery. We even got to see him bake different breads beyond baguettes and croissants — he’s a true master with endless knowledge about flours and history (more about this in my stories!).

Even though I’ve baked thousands of croissants and baguettes as a professional pastry chef and boulangère in Paris, I loved picking up new tricks and talking about all things baking with the boulanger Didier.

And Lev? He surprised me with how good he was — honestly, he’s hired if I ever open my own bakery! He was talking about the class for days afterward, which tells you how much fun he had!🥹

Recipe below!🥖 it officially feels like autumn today in Paris, so it felt only right to make my favorite soup☺️🍂

In France, this bread is called Préfou, originally “prefour,” which translates to “before oven.” This is because before thermostats, bakers would make a simple & quick dough to test if the oven was at the right temperature. Today the bread is still served warm with your aperitif, but I wanted it to accompany my favorite soup, French onion soup☺️ 
And the bread is a lower hydration dough, so it’s an easy beginner friendly recipe!

Prefou bread recipe

250 grams of bread flour or t65
150 grams of water
60 grams sourdough(can be discard or refreshed, it’s more for flavor than leavening. You can substitute with 30 grams of water and 30 grams of flour, or you can make a poolish ahead of time)
5 grams salt
2 grams fresh yeast/ 1 gram dry active yeast
10 grams of water

Combine the 150g of water and flour, knead for 5 minutes, then leave for one hour in a warm place.
Add the rest of the ingredients and knead for 10 minutes, till dough is smooth and elastic. Cover and leave in warm place for 1 hour till dough has doubled. 
Divide in half and preshape, leave for 10 minutes, then final shape, put on parchment, cover, and leave somewhere warm for 45 minutes. 
Preheat your oven to 250C (I use a Dutch oven as my oven doesn’t have the right environment to bake bread properly. If your oven is well equipped, you can preheat with a baking stone, then once you load in bread, add boiling water to a pan underneath to make steam) 
After 45 minutes, check to see if the dough is proofed by poking the dough, and if it springs back slowly and not all the way back, it’s ready. Bake for 10 minutes in Dutch oven with lid on or with baking stone and steam, then remove lid and bake for an additional 10-15 minutes till lightly golden browned. Traditionally, the bread isnt supposed to be too browned.

Dream Provençal Fig Cake Recipe
Ingredients
* 100 g almond flour
* 75 g flour (or gluten-free blend)
* 1.2 grams baking soda
* 1 gram salt
* 2 eggs
* 150 grams honey
* 80 grams extra-virgin olive oil
* 80 grams yogurt (really any yogurt will do as long as it’s full fat)
* Zest from about 1/2 of an orange
* About 4-5 figs for cake and then another 3-4 figs for decor
* 2 tbsp sliced almonds
* Extra honey for drizzle
* Fresh edible flowers or lavender sprigs

Method
* Whisk eggs & honey until pale and fluffy
* Add olive oil, yogurt, and orange zest
* Fold in dry ingredients gently.
* Arrange halved figs onto the bottom of a parchment-lined tin 8 inch/20cm with spray.
* Pour batter on top then sprinkle with sliced almonds.
* Bake in a preheated oven at 175°C/350°F for about 30-35 min, until golden and set, or toothpick interred comes out clean.
* Let cool slightly then turn over onto plate. Add figs, almonds, and drizzle with honey. Garnish with lavender sprigs or edible flowers et voila, bon appetit!

To get to this chateau:
From Paris, you can take the RER A train to Saint-Germain-en-Laye or Marry-le-Roi, then it’s a short bus ride or a 20-minute walk through peaceful residential streets.
And the train ticket is only 2,50€ per person as it’s within lle de France, or it’s free if you have a Navigo Pass!

The estate is open to the public several days a week (check their website for seasonal hours, and you can explore the gardens, the romantic stone pavilion, and the ornate rooms where Dumas wrote his novels.)

Wandering here feels like stepping into the pages of a classic story — or straight into a Pride & Prejudice moment, if you’re listening to the soundtrack. The château is surrounded by lush greenery, little bridges, and hidden corners that make you feel worlds away from the city.

Visiting-while being respectful of locals, the environment, and small businesses-helps support these towns and gives Paris a little space to breathe.

One of the best things I find about living in Paris is that when city life gets a bit too hectic, you can easily explore so many beautiful towns that are just an hour (or less). Vernon and Givenry are perfect for a day trip or weekend escape.

We took the train from Gare Saint-Lazare to Vernon (which is a 50 min ride/fast train and depending when you get your tickets, is about 20€ per person), wandered the town, and picked up picnic supplies (less than 20€ for 2 people) as there’s a lovely spot just across the bridge!

From Vernonnet, we caught bus line 10 (€2 pp, cash accepted) to Giverny, a lovely quaint village that has several restaurants and shops and most famously the Home & Garden of Monet😍The tickets were about 10€ per person. Unfortunately they do not let dogs inside, so Lev and I took turns while watching Lola, but the village is dog friendly so we took her to restaurants and cafes and had no problem!

Tip: The gardens are at their best in spring through early autumn, but each season has its own charm. Early mornings and late afternoons are the quietest-perfect for soaking it all in without the crowds.
And I highly recommend to buy tickets to Monet’s house online in advance-worth it to skip the lines, especially in summer!
Before we went back, we hiked up the hill in Giverny to see the sun setting, which we highly recommend for a spectacular view!

From our last day in the south of France🤍

I hope you’ve enjoyed this small break from all things Paris from our recent south of France trip, & it’s given you some ideas of places to go to on your next trip☺️(more details will be in my stories!)

1-2. Since having Lola, traveling might be a wee bit more complicated, but both Lev & I can’t imagine traveling any other way now & we are always so delighted to see just how pet friendly traveling with pets is in France! 

3-6. While in Uzes, we cannot recommend enough going to Pont du Gard, an ancient Roman bridge built in the 1st century. It is truly a sight to behold, & having our dinner while watching the sunset was something I’ll never forget. 

7. Our early morning in Uzes as the village was just waking up was a dream

8-11. We headed to Castillon du Gard, a picturesque Medieval village perched on a rocky hill with a view of the Pont du Gard in the distance😍

12-13. When we go to the south, we always take the train from Paris to Avignon and then take a car to explore the area, so we know Avignon pretty well now, & it’s always so beautiful & peaceful. We love to walk around the old city center, visiting the Palais des Papes, Notre Dame de Doms, the garden of the cathedral, the bridge, eating on a terrace, & walking down Rue des Teinturiers (a picturesque cobblestone street along the river).

I think I get asked the most about flea markets in Paris, so here is my full guide with all the tips & tricks for the markets because weekends in Paris are for flea markets☺️

Tips to make the most of it:
• Bring cash — most sellers don’t take card
• Go early (around 9–10am) to beat the crowds, or later if you want to haggle as they pack up
• Haggle — it’s normal here, so don’t be shy!
• Learn a few French phrases — even just “bonjour” and “ça, c’est combien?” goes a long way

2-6. My dream chateau 😍 chateaustvictorlacoste , who kindly hosted us and gifted our stay. I share more about its history in yesterday’s video, but I have to say… this place felt like stepping into a dream. From our room, to their sunlit kitchen (where I baked with the season’s best produce and all the best Provence has to offer — recipe in yesterday’s video!), to the pool and courtyard… every detail was pure magic. ✨

7. Then we went to the nearby town of Uzès (about 20 minutes away) — absolutely storybook-perfect, with its restaurants, shops, and museums.

8-10. And if you’re in Uzès, you must go to the market at Place aux Herbes 🥖🍇 — one of the largest I’ve ever been to! Held Wednesdays & Saturdays. My tip: go early (8am) or later (1pm) to avoid the crowds. Truly unmissable!

When I tell you that this is the dreamiest and most beautiful and special place, I’ve ever been to, I truly truly mean it. chateaustvictorlacoste is an absolutely stunning chateau that we were so graciously gifted a stay by Alison and Costos, who are the most wonderful hosts. And their love and care for the chateau is so evident with how they have kept the chateau in its restored glory. The kitchen alone is something out of my dreams, that oven ooolalala😍! So I knew exactly what I wanted to bake, something seasonal and using the best of Provençal ingredients! 

The chateau was originally built in the 16th century to an Italian banker and gifted by the king of France, so it retains that classic Italian villa flare but with the beauty and subtley of Provençal charm. The walls and rafters still retain the original hand painted murals, it’s truly a breathtaking place with such a rich history and the most welcoming hosts that make you feel right at home. 

They currently have 2 spots left for their Taste of Provence workshop for later this month. This workshop is for 3 nights at the chateau where they will show you exactly what life is like in a beautiful French chateau, visiting food markets, antique markets, exploring the local area, touring vineyards and giving a cookery class in the chateau’s kitchen. You can contact them for more info and to reserve your spot! 

Also, after spending time at the chateau, baking in their kitchen, and exploring the area, we are thinking about maybe doing a workshop as well! This would be a similar workshop where I would teach how to bake & cook some of the French seasonal classics as well as taking trips to local food and antique markets and visiting a vineyard! South of France travel diaries 🇫🇷✨ More info below!

We took an early train from Paris to Avignon(only a 2.5 hour ride!) then we rented a car at the Avignon station, and drove to Les Baux de Provence first, which was about a 20 minute drive. Parking is just outside the city too! (On your way there, stop at Vue Sur Les Baux to get a view of the city from afar😍) also to do at Les Baux de Provence is to see the chateau at the top or see the Carrieres des Lumieres - an exceptional light art show in the rocks of the cliffs of Les Alpilles.

Then we drove for 20 minutes to Monastery Saint-Paul de Mausole, an 11th century monastery turned into a psychiatric ward in the 19th century, where famously Van Gogh stayed after he cut off his ear. You can see all the places that he drew inspiration from in his most famous artworks 😍 and the cloister during June /July is also very beautiful when the lace day is in bloom!

This is just right outside St Remy de Provence, another beautiful village where we stayed for the night. It has lots of great local stores, restaurants, cafes, and coffee shops.

Our first day started off with a surprise storm (actually quite a big storm😅) — and since it was a Monday, a lot of places were closed anyway — but honestly, we still had the best time exploring, eating, and soaking in all the charm this part of France has to offer ☺️

✨ Travel tip: If you’re thinking of visiting the French Riviera or Provence, September (or May) is such a good time to go — fewer crowds, cooler weather, better hotel prices, and just a generally slower, more peaceful vibe. Highly recommend!!

✨ Well, since my little Paris apartment is always being compared to the one in the movie Ratatouille, I figured now—before summer veggie season ends—was the perfect time to make the most of them with, well, a ratatouille!😂🍅🥕 

(Tian vs Ratatouille- I understand, but it’s just a reference to the movie RATATOUILLE and the way they presented it, I’m recreating it here. It’s nothing serious to argue about☺️)

Ratatouille
* 2 zucchini + 2 yellow squash
* 2 eggplants
* 6 tomatoes (3 for sauce, 3 for topping)
* 2 onions + 1 carrot 
* 2 roasted bell peppers
* 4–5 garlic cloves
* ½ cup (120 ml) wine (white or red)
* Fresh thyme & rosemary + 1 tsp herbs de Provence
* Olive oil, salt & pepper
* Fresh basil, parsley, or chives for garnish
Sauce
1. Roast peppers: 220 °C / 425 °F until blackened; peel & deseed.
2. Prep tomatoes: Blanch 3 tomatoes, peel, and dice.
3. Cook base: Sauté onion, carrot, garlic until caramelized (8–10 min).
4. Add flavor: Stir in tomatoes, wine, roasted peppers, herbs, salt & pepper. Simmer 10–12 min.
5. Blend: Use immersion blender until smooth; simmer 5–10 min more.
Veggies
* Slice zucchini, squash, eggplant, and remaining tomatoes thinly (2–3 mm) or use mandoline
Assemble & Bake
1. Spread sauce in a baking dish.
2. Layer veggies tightly in spiral (zucchini → eggplant → tomato → squash).
3. Drizzle olive oil, season, cover with parchment.
4. Bake 180 °C / 350 °F for 40–50 min until tender.
Serve
* Spoon reserved sauce on plate, top with ratatouille.
* Garnish with fresh herbs & drizzle olive oil or balsamic.

Oh là là, Tropézienne 😍 One of my all-time favorite French desserts—this dreamy treat takes me right back to sunny days in Saint-Tropez, where of course we had to try the real deal!
It’s soft brioche soaked in fragrant orange blossom syrup, filled with a luscious mix of crème pâtissière and whipped cream, and topped with crunchy pearl sugar. Basically… heaven on a plate. ✨🇫🇷

Dough
* 170 g regular plain flour or T55
* 20 g sugar
* 1.5 g salt
* 8 g fresh yeast
* 2 eggs
* 100g butter room temp

Craquelin Topping
* 30 grams each of room temp butter, flour, sugar and a pinch of sugar and sliced almonds and pearl sugar (optional)

For the dough:
Combine all ingredients (except the butter) and knead in a stand mixer on medium speed for about 10 minutes. Add the butter and continue kneading until the dough detaches cleanly from the bowl and passes the windowpane test. Cover and let rise in a warm place for about 1 hour.
Once risen, roll the dough into a 9-inch (22 cm) circle, at least 1 cm thick. Cover and let rest for 45 minutes.

For the topping:
Mix all topping ingredients together until clumps form.
When the dough is ready, brush with egg wash, sprinkle the topping over, and bake in a preheated oven at 180°C (350°F) for 20–25 minutes, or until golden brown. Let cool, then cut in half.

Syrup 
Combine 75 grams of orange blossom water, 25 grams of sugar, and pinch of salt in a pan and bring to simmer just to dissolve sugar. Then brush on brioche.

caferevelotion is the business Lev & I built together. Lev engineered a custom cargo bike with a state-of-the-art espresso machine, & I make the pastries!
Café de la Révelotion is a pun on vélo (bike) & a nod to revolution. The logo I designed shows Marianne, the symbol of the French Revolution, holding a bike & coffee stamp, inspired by an Art Deco poster.
The “revolution” is also in the design: unlike standard 3-wheeled carts, ours runs on 2 wheels, with everything built in—so we can set up a café anywhere in Paris! We also do private events & catering, & the support so far has been amazing.
10-15 As most Parisians escape the city to enjoy their last weeks of summer, Paris in August means quieter and empty streets with many shops closed—walking around feels so peaceful.

Gâteau Breton - 9inch pan
(my original recipe uses 1 egg and 5 egg yolks, plus egg wash, but for those worried about waste or being more cost efficient, this is my altered recipe)

-500g plain flour
-300g sugar
-250g salted butter (room temp, preferably European or all east 82% fat)
-2 eggs
-2 egg yolks (+ 1 yolk for egg wash)
-1 tsp of vanilla & 1/4 tsp almond extract
-Dash or two of brandy or rum (optional but highly recommended!)
-3 tbsp jam (raspberry or your choice)
-Sliced almonds (optional)
-Raw sugar
1. Mix flour and sugar, then rub in room temperature butter until sandy. Add eggs, yolks, extracts, and rum, mixing until a dough forms.
3. 3. Roll half the dough between parchment paper to fit the pan. Press into a buttered pan, spread jam (leave a border).
5. 5. Roll the remaining dough and place on top. Even out with a spatula.
7. 7. Brush with egg yolk, mark with a fork, and sprinkle with raw sugar and sliced almonds.
9. 9. Bake at 200°C for 20 minutes, then lower to 180°C and bake for another 20-22 minutes until golden brown.
10. Cool completely before serving, best the next day.

If using a springform pan, wrap foil around the base to catch any butter leakage. Bon appetit!

Recipe for Raspberry Tart

Crust (8in/20cm)
100 grams plain flour
50 grams butter (cold and diced)
15 grams of almond flour
35 grams of powdered sugar
Pinch of salt
1 egg yolk
-Rub the dry ingredients & butter together till sandy texture. Add egg and mix till combined. Place dough in fridge for 30 minutes. Roll dough between 2 sheets of parchment paper with flour to size of tart pan. Place dough in tart mold, making sure that dough is pushed downward into corners, so it doesn’t shrink while baking (You can use pie weights etc to blind bake if you prefer). Cut off edges, prick bottom all over with a fork then put in fridge or freezer for at least 30 minutes. Bake in preheated oven at 350F/175C about 10-12 minutes or golden brown. Leave to cool 

So I usually don’t do things like this, but for some reason every time I try to pin my comment for the rest of the recipe, the option isn’t available for me to do so, and them my comment with the recipe gets lots and then I get very angry DMs from eager bakers😂. So as to avoid that, if you comment « raspberry♥️ », I’ll DM you the rest of the recipe!

Making the most of the last cherries of the season 🍒🇫🇷
I came across some late-season cherries at my local market at Place Monge and couldn’t pass them up as they’re one of my favorite summer fruits☺️

So I made a classic Black Forest Gâteau - layers of chocolate sponge soaked in amaretto syrup, mascarpone whipped cream, and cherries in a rich jam, finished with a smooth dark chocolate collar for a simple, elegant touch— a quiet farewell to summer’s sweetest fruit

Black Forest Gateau
6 eggs
225g sugar
50g cocoa powder
100g plain flour
150g unsalted butter, melted and cooled slightly
Pinch of salt
1 tsp of vanilla
-Melt butter and cool slightly. Sift together flour, cocoa powder, & salt. Whip eggs with sugar until thick, tripled in volume, & falling off the whisk in ribbons. Sift half the flour mixture and gently fold it in. Repeat with the remaining flour. Add a small amount of batter to the melted butter, mix, then fold the butter mixture back into the batter gently. Pour into two greased 8in/20 cm pans. Bake at 180°C/350°F for about 20 minutes or until a toothpick comes out clean.
 
Ganache
Heat 100g of cream to simmer, pour over chopped 100g chocolate with pinch of salt. Let sit for 5 minutes then whisk till smooth.

Pit and chop about 250 grams of cherries then mix with 2 tbsp or so of homemade or bought cherry jam.
