Fridays are for Sundaes! 🍦

This Banoffee Kahlúa Sundae needs to be on your summer dessert list because oh my gosh, you guys, it’s UNREAL!

WHAT YOU’LL NEED:

For the bananas:
2 bananas, peeled and sliced
50g unsalted butter
100ml / 3 parts Kahlúa

For the sundae:
1 tub chocolate ice cream
100ml caramel sauce
200ml double cream, whipped to soft peaks 
Toasted flaked almonds, to decorate 
2 digestive biscuits, crushed 
Chocolate chips, to decorate 
2 chocolate flakes

Optional:
Dark chocolate to rim the glass

HOW TO MAKE IT:
1. Put a frying pan over a medium heat then add the unsalted butter. Heat gently until the butter has melted, then add the banana slices to the pan. Pour in the Kahlúa and gently cook for 5-10 minutes, turning the bananas over in the pan to coat them evenly. The Kahlúa will slowly thicken and caramelise. 
remove from the heat and set aside.
2. Once the bananas are nice and golden, remove from the heat and set aside. 
3. Add a scoop of chocolate ice cream to your sundae glass, followed by a tablespoon of caramel, then a few caramelised banana slices. Repeat this process until you’ve filled the glass.
4. Top with a generous spoonful of whipped cream, then sprinkle over the toasted flaked almonds, crushed digestive biscuit and chocolate chips.
5. Finish with a chocolate flake and serve immediately!

S’mores, but make it 10x better! 😍

I don’t know about you, but I’m upping the s’mores game this summer with this kahlua cold brew. Chocolatey cold coffee with a punchy hit of kahlua coffee liqueur poured straight over whipped cream and mallow fluff, and topped with toasted marshmallows and crunchy digestive biscuits 🤌🏼

This really is the crème de la crème of summer coolers...

Serves 2

INGREDIENTS

For the cold brew
500ml milk of choice
50ml espresso
50ml kahlua 
50g chocolate, melted
200ml double cream, whipped
1-2tbsp marshmallow fluff + extra for decorating
Handful of ice

For the topping
Handful of marshmallows, toasted 
2 digestive biscuits, crushed

METHOD
1. If you want to decorate your glasses, use a spoon to swirl some melted chocolate around the inside to create a lovely pattern. Place your glasses in the fridge.
2. Begin by pouring the espresso, Kahlúa and milk into a jug. Add the melted chocolate and whisk using a handheld milk frother until everything is well combined.
3. Remove your glass from the fridge and add
100ml whipped double cream to each glass, before placing a tablespoon of marshmallow fluff in each one.
4. Fill each glass with a handful of ice, then pour in the chocolatey cold brew.
5. Top with an extra dollop of mallow fluff, your toasted marshmallows and a generous sprinkling of crushed biscuit. Drink immediately!

REFRIED ROASTIES 👆🏼

If you’ve got leftover roast potatoes from Easter weekend, here’s what to do with them:

Fry 750g roast potatoes in 1tsp cumin seeds, 1/2tsp ground turmeric, 1tsp mustard seeds and a clove of crushed garlic. Use a potato masher to crush and increase the surface area for extra crunch. 

Serve on 350g coconutcollab Natural Yog mixed with the juice of 1 lemon and 2 crushed cloves of garlic, and drizzled with 4tsp red harissa paste and extra virgin or chilli oil. 

Sprinkle over chopped dill, nigella seeds and pickled red onions to finish. Divine!

HOW TO MAKE IT:

1. In a pan over medium heat, combine the dark chocolate, Kahlúa, caster sugar, and milk. Stir constantly until combined. 
2. Pour into a mug, and garnish to your heart’s desire!
