INGREDIENTS Juice of 1 lemon 2 plain rice cakes 3/4 cup Greek yogurt or blended cottage cheese (I used low fat) 1 scoop vanilla protein powder Sweetener to taste DIRECTIONS •Mix your yogurt, protein powder and a squeeze of lemon juice. •Squeeze the rest of your juice in a shallow bowl wide enough to fit the rice cakes- adding some sweetener of choice (I used truvia liquid stevia) •Dip one rice cake in the juice and lay it on the serving dish (pour more on top if needed) •Add half your yogurt filling, followed by another soaked rice cake and more filling on top! - Having a high protein, high fiber breakfast ready in 3 minutes was a life saver after arriving home from traveling! When you get back home from a trip the last thing you probably want to do is go grocery shopping or cook..
